Tonight, it was our winner dinner 😋. @epicureofficial provides easy to follow directions at the back of everyone of their seasonings, which makes prep and cook time #REALFAST In a frying pan, I browned 1 lb of ground turkey, stirred in the seasoning, added 1 can of drained and rinsed kidney beans as well as 1 can of diced tomatoes. 🍍Tropical Pineapple Tofu 🤯 If you are looking for a delightful taste of coconut and pineapple with hint of garlic, this is the meal time idea is for you!! This meal is one of the SHEET PAN MEALS. In a bowl you can combine and toss the seasoning with either boneless skinless chicken breast fillets or Tofu in my case along with: 🍽️ 1 sliced bell pepper 🍽️ 1 sliced small red onion 🍽️ 2 cups sugar snap peas 🍽️ 14 oz of pineapple chunks in juice 🍽️ 2 tbsp melted coconut oil Arrange in a single layer on a lined sheet pan and oven roast for 16 minutes at 425° F or until chicken is cooked through. For the next round of Chronicles of Supper at 9 pm: Cabbage rolls! This weekend we visited my great aunt and uncle, second and third cousins in Eagle Rock. My April gifted me a beautiful head of cabbage she grew and told me about her favorite recipe, cabbage rolls. I figured I should try it. My great aunt Elaine cooks like this; you make it until it takes good. Shaye, my sweet friend says this: “Southerners don’t measure seasonings. We sprinkle and shake ‘till the spirits of our ancestors say “stop my child.” “ April’s recipe goes like this: Boil a stock pot of water. Once boiling, add the head of cabbage for 5 minutes. Remove and let cool. (Don’t let cool on a cutting board because the water will pour off our island😂) Meanwhile, brown your grown beef with some garlic and onion. Add in Italian seasoning. Salt. Pepper. Worcestershire (ask Seth how to say it. 😆). Drain your beef. After the cabbage has cooled, pull ya a leaf off. Spoon some beef mixture in. Sprinkle in some uncooked rice. Wrap that baby up. Pour in some crushed or diced tomatoes in the bottom of your Instapot. Layer your cabbage rolls. Add another layer of crushed or diced tomatoes. Cook on high for an hour. Tada. Inexpensive, flavorful meal. Thank you April for the delicious homegrown cabbage and the recipe!
