Home made fettucine with beef and pork bolognese sauce. Whatever the recipe for the bolognese sauce is, I have found that having it tick over in a slow cooker for 4-5 hours is the secret. It gives the sauce that 'next day' full flavour. This recipe used beef and pork mince, pancetta, garlic, mushrooms, beef stock, carrot, brown onion, cherry tomatoes, peeled tomatoes, tomato paste, a store-bought pasta sauce and a bunch of spices. After browning the mince in oil with a couple of squashed garlic cloves, followed by lightly frying the pancetta separately, it is added to the slow cooker with the other ingredients. Total success with an easy, inexpensive, traditional Italian vegetarian dish, cacio e pepe. I was forced to substitute Parmesan and Asiago for the Pecorino Romano, since Aldi didn’t have it and it’s rather pricey when you can find it. The only other ingredients were pasta and fresh ground pepper. Very frugal, and very easy. Not a lot of magic mixed in, save for hoping the pepper mind give a little spice to the night. Mostly, it was made with love and hope Erick would enjoy it. Tagliatelle alla Bolognese 🇮🇹 Sauteed finely diced carrots, onions and celery with pinch of salt until fragrant but not browned. I then added ground beef, ground pork and cooked till the meat are lightly browned. I added milk and reduced, after that Pinot Grigio went in and reduced too. Added tomato paste, passata and pelati then water. Season with salt, black pepper and pinch of nutmeg. Simmer uncovered for 4 hours, stirring and adding water. The end result will be a meaty sauce with almost no water left and a layer of fat on top. Italian comfort food, also known as Pastina. • My TikTok feed mostly consists of recipes, cat videos, and Taylor Swift…💁🏼‍♀️ So it wasn’t a surprise when a few videos appeared recently talking about Pastina. • This is such a simple dish, but so delicious. Since I couldn’t find actual pastina, I was thankful to grab acini di pepe from @delucaswpg. Acini di Pepe (or pastina) is cooked in chicken stock, then garlic & olive oil with Parmesan & lots of fresh ground black pepper stirred in. I crisped up some prosciutto to top it and it’s just so delicious. So quick to make and would be an excellent weeknight dinner. • Happy Saturday and another day dreaming of returning to Italia 🫶🏻🇮🇹

Gnocchi alla Sorrentina is an incredible comfort delicious food dish made with soft and light potato gnocchi baked in a rich and delicious tomato sauce with bubbling mozzarella cheese and fresh basil. 👻 (For the critics-This is not an authentic recipe) The original recipe is from Sorrento, in southern Italy, about two hours south of where my friends is. This recipe was shared with me by the mother of my friend Signora Ornella. It’s a simple dish made with simple ingredients: gnocchi (You can see the recipe on my feed), tomato sauce, mozzarella and fresh basil. The result will depend on the quality of the ingredients: The better the tomato sauce, the better the mozzarella, the better the results. I’m not kidding, the flavor in this dish relies entirely on the quality of the tomato sauce and of the mozzarella. Ingredients: -Gnocchi 500 g -Onion (I used shallots) -Garlic 2 cloves -Tomato puree 400 g -10 basil leaves -2 large balls of fresh mozzarella instructions: 1.Heat olive oil over medium heat. Add onion and garlic, fry for a couple of minutes. 2.Reduce heat to low. Stir in tomato puree, Roughly chop basil leaves and add to sauce. 3. Add salt and pepper to your taste. Cover and cook for 10 to 15 minutes until sauce thickens. 4.Stir in cooked gnocchi (cook the gnocchi for 2 minutes) 5.Top the gnocchi with the mozzarella and bake for 15 minutes until the mozzarella cheese is melted, bubbling and golden. ❕Gnocchi- i have a step by step guide for making incredible potato gnocchi which I totally recommend following to make this dish.
