For dinner tonight Violet had a chicken and vegetable stir fry with brown rice noodles in a homemade stir fry sauce. Recipe for homemade stir fry sauce: Ingredients 1/2 cup reduced sodium soy sauce 1/2 cup no salt-added chicken broth 1/4 cup natural peanut butter 1 teaspoon toasted sesame oil 1 teaspoon rice vinegar 1 tablespoon honey can also sub in maple syrup 3-4 garlic cloves minced 1 tablespoon cornstarch Instructions In a mason jar or bowl, whisk together all of the ingredients for the sauce until well combined. You can also blend in a blender if preferred. Add desired amount of sauce to stir fry. Recipe for multigrain cheerio bars: Ingredients: 2 cups multigrain cheerios 1/2 cup honey (no honey before age 1) 1/2 cup peanut butter Instructions: Add peanut butter and honey to a bowl and microwave for 1 minute. Recipe for lentil fingers: Ingredients: 1 cup soaked red split lentils soaked for 5-6 hours or overnight in water 1 cup finely chopped baby spinach 1 cup grated sweet potato 1/2 tsp garlic powder ¼ tsp cumin 1/4 tsp paprika 1 flax egg (1 tbsp ground flax with 2 tbsp water) 1/2 cup oats 2 tbsp extra virgin olive oil Instructions: To a food processor, add the lentils, garlic, spinach, sweet potato, cumin, paprika, and flax egg. Pulse for 3-5 minutes until fully combined, scrapping down the sides if needed. Transfer mixture to a bowl and stir in the oats. If you find the mixture is too wet to shape, add more oats 1 tbsp at a time. Shape into finger shapes and place on a baking sheet lined with parchment paper. Heat the oil in a large nonstick skillet, and pan-fry on all sides until golden brown. Use a spatula to carefully flip them. Serve at room temperature. For dinner tonight Violet had homemade pizza sweet potato crust pizza 🍕 Recipe for sweet potato crust pizza: Ingredients: 2 cups mashed sweet potatoes (1 large or 2 medium sweet potatoes) 1 cup brown rice flour 1 tsp baking powder 1/2 tsp salt toppings of your choice -I used tomato sauce, tomatoes, mozzarella cheese, pepper, onions and mushrooms Instructions: Preheat oven at 375 F and prepare a pizza pan with a round parchment paper (parchment paper should be of the same size and shape as the pan). Spray the pizza pan with cooking spray and then stick the parchment paper so it does not move while shaping the dough. In a bowl, combine mashed sweet potatoes, brown rice flour, baking powder and salt. Mix it well with your hands to make a soft smooth dough. Place the dough at the center of the prepared pizza pan and place another parchment paper on top of the dough. Gently press the dough from the center through the parchment paper and roll it round with a rolling pin until the edges start to break. Remove the parchment paper from the top of the dough gently and shape the dough round with your hands making sure to seal the edges at the same time while shaping it. With a fork, poke holes at the centre of the crust. Place it in the middle rack of the oven and bake it for 15 minutes. Take it out and add your choice of toppings. Place it back in the oven and bake for another 15-17 minutes or until cheese is well melted. Baby-friendly pork and sweet potato meatballs: Ingredients: 1 lb of lean ground pork 1 small sweet potato - mashed 1/2 small onion, finely diced ¼ tsp of paprika ¼ tsp of onion powder ¼ tsp of garlic Powder 1/4 tsp Olive oil Instructions: Preheat oven 400F Add the olive oil to a frying pan over a medium high heat and add the onion. Since Aurora has been LOVING food in a more solid form but I still want to make sure she gets some much-needed iron into her, I made these! Recipe for baby cereal teething biscuits: Ingredients: 1 banana 1/2 cup iron-fortified cereal 1/2 cup whole wheat flour 1 tbsp coconut oil 1 tbsp cinnamon 2 tbsp or more of water (to get sticky consistency) Instructions: Preheat oven to 400F. Line a baking sheet with parchment paper. In a large bowl, combine the banana, cereal, flour, oil, cinnamon, and water to reach a dough-like consistency. Roll out the dough on a floured surface until ¼ - ½ inch thick. Use cookie cutters to cut out shapes. I made them shaped like dog bones for easy grabbing and because it was funny 😂 Transfer to the prepared baking sheet. Bake for 15 minutes. Recipe for chickpea sweet potato cookies: Ingredients: ½ cup oats 1 cup cooked, mashed sweet potatoes, about 1 medium potato ½ cup chickpeas, rinsed and drained 1 teaspoon cinnamon 2 teaspoons chia seeds Instructions: Preheat oven to 350 F. Add the oats to the food processor/blender first. Then add the rest of the ingredients except for chia seeds. Blend until smooth. Stir in chia seeds. Combine well. Using a spoon, transfer the batter to a lined baking sheet. use your fingertips or the back of a spoon to gently push down the batter to flatten slightly. Bake for 10 minutes. Recipe for blueberry breakfast crumble: 🫐 INGREDIENTS ¾ cup oats ¼ cup whole wheat flour 1 tsp ground cinnamon 2 tbsp pure maple syrup 1 ½ tbsp unsalted butter, melted 6 cups frozen blueberries 3 tbsp cornstarch INSTRUCTIONS Preheat the oven to 350°F, and coat an 8”-square pan with nonstick cooking spray. To prepare the topping, whisk together the oats, flour, and cinnamon in a small bowl. Make a well in the center. Pour in the maple syrup and melted butter. Stir until fully mixed. To prepare the filling, toss the blueberries with the cornstarch in a large bowl until completely coated. Transfer the filling to the prepared pan, and sprinkle evenly with the topping. Break it up into really small pieces! Bake at 350°F for 55-65 minutes or until the juice is bubbling at the sides of the pan. Recipe for Iron-rich baby pancakes: 🥞 Ingredients: 3/4 cup iron-fortified baby oatmeal cereal 1 cup whole wheat flour 1 tsp baking powder 1/2 tsp cinnamon 1 flax egg (1 tablespoon ground flaxseeds + 3 tablespoons warm water, gently mixed) 1 mashed banana 1 cup breast milk, formula, or water 2-3 tablespoons oil (avocado, olive, coconut) Instructions: In a medium bowl, combine dry ingredients: baby oatmeal, flour, baking powder, and cinnamon. In another bowl, combine wet ingredients: flax egg, mashed banana, and water or milk. Mix the wet and dry ingredients together. If your mixture is too dry, add a tablespoon or two of water. Heat oil over medium in a stainless steel pan. Spoon ~1/4 cup of batter per pancake onto pan and cook for about 4-5 minutes per side.* After you flip the pancake, press lightly down on the top to flatten to help cook through. For baby-led weaning, slice them into strips and serve to baby! For breakfast this morning Violet had applesauce oatmeal topped with thinly sliced apples. Recipe for applesauce oatmeal: Ingredients 1/2 cup milk 1/2 cup oats 1/2 cup applesauce 1/4 tsp ground cinnamon 1 tsp ground flaxseeds 1 tsp chia seeds Instructions Add all ingredients to a small saucepan on medium/high heat and stir. Bring to a boil, and reduce the heat.
