Tasting Session: 🍵 @teaprouk 🌱 Butterfly-pea Flower As promised, something a little different this time! Not a true tea from the Camellia Sinensis but rather Butterfly-pea flower tea. Popular in Thailand, this caffeine free infusion is rich in anti-oxidants and is especially famous for its brilliant blue liquor and colour changing chemistry! Leaves Dry: Since the tea “leaves” in this case are simply the desiccated blooms of the flower, they are soft, crinkled packages of blue petals and bright green that wouldn’t look out of place as potpourri. Wet: Once infused, the buds swell with the absorbed moisture and are stained by the liquor that they produce so after a few steeps they are as dark azure as the liquor. Liquor Appearance: This is where things get interesting. Due to the anthocyanin compounds called ternatins abundant in the plant, the liquor of the infusion is a royal blue from the get go! The anthocyanin also functions as a ph indicator so, with the addition of some acid (lemon juice for example), the tea becomes a gorgeous and vibrant purple! This is by far one of my favourite parts of brewing this tea, watching the colours it produces and seeing them change. Aroma: Almost surprisingly for such a brightly coloured brew, the aroma is earthy and quite vegetal, putting me in mind of cooking runner beans with a slightly floral edge. Flavour: While sweet and pleasant, there is a good body to the tea which imparts a taste not unlike the beans mentioned before and, almost akin to fresh bread, it fills the mouth and makes me feel full even after only a few cups! Mint tea 🍃 🍵 🌿 It’s tempting to lean into the dizzying availability of bespoke ‘health’ teas with large lists of ingredients and even larger price tags. While it’s fun to pack your beverage with enough nutrients and antioxidants it could send a Victorian child into a coma, there is nothing which quite beats keeping things simple. Mint leaves have the benefit of coming already packed with nutrients and health advantages, better yet, they’re cheap to purchase and easy to maintain in plant form. To infuse your own mint tea, simply slice up around 1-3 branches (or use them whole) and pour in your hot water. While the leaves are steeping in your infuser or teapot, give them a stir or gently crush them with a spoon, this will encourage the flavour and profile to seep into the liquid. After a few minutes, decant the water to remove the used leaves and pour the tea into your favourite mug, expect it to be only faintly green with a pale, transparent complexion. The first thing which comes to your attention is the surprisingly sweet aroma which dances from the liquid, cuddling its way into your senses with the familiar freshness ringing in your nostrils like a crispy crescendo. To sip, the tea provides an immediate, refreshing flavour which spreads across every taste bud and creates the illusion of a cold breath of fresh air. A galvanising effect, coating your mouth with sweet yet earthy undertones remains and leaves you feeling refreshed both inside and out. Not only is this indulgent and delicious, it’s also subtle and modestly understated as an effective health drink. The humble mint tea can be enjoyed at any time of day but suits a cosy evening best as a wind down and reset. Get yourself a grow-at-home mint plant to provide fresh leaves for every serving. 🍵 @teaprouk 🌱 2013 Golden Buds Brick Shou Pu’erh Golden buds harvested from ancient tea trees on Bulang Mountain and pressed into a traditional pu-erh brick shape. The buds are a supreme quality, young and sweet, known for their delicate flavours. Aged for just shy 12 years the tea has had plenty of time to develop rich character. Leaves Dry: In their dry state, the brick looks like the chocolate it’s meant to taste of. Six rectangles of heavy press tea leaves, mostly dark brown with flickers of golden buds showing through. Wet: Once infused, all the golden light is swallowed by deep rich chocolatey brown. The aroma is intense, sweet, and malty with just a hint of chocolatey smoke. Liquor Appearance: Incredibly rich and dark, truly deserving of the name, hei cha, or dark tea, almost as black as coffee, but paling when poured into the cup. There is also a fine film of oils across the surface of the tea which gleam when they catch the sun! Aroma: Deep and earthy, there are notes of a sweeter fragrance, hidden amidst the petrichor tones of this aromatic tea that hints of the flavour to come. Flavour: As soon as it hits the mouth, the deep, chocolatey flavour, and the malty earthiness become apparent. as the flavour lingers on the tongue, it gives way to a delightful sweetness. With subsequent infusions the sweetness becomes more pronounced and hints of an almost liquorice flavour creep into the mix. Mouthfeel: Incredibly full bodied and mouth filling without a hint of astringency. The liquor is so smooth, it’s hard not to go back for more cups! In conclusion, I love this tea! 🍵 @teaprouk 🌱 2015 Snow Kissed Raw Pu’erh Braids I’ve had bricks of tea before, I’ve had pearls and knots of tea before, but I’ve never had a BRAID of tea before! These braids of 9 year old Sheng Pu’erh are grown 2km above sea level and harvested from ancient tea trees of the Jade Dragon Snow Mountain. Leaves Dry: In their dry form these braids are all that their name suggests, large leaves of muted greens and warm browns carefully woven together into tight and spiralling braids. They have a very light smiley scent that gives way to a soft earthiness. Wet: Once infused, green leaves become a more vibrant, marshy green and the browns take on darker hues as the leaves swell and expand, forming bulky chains of leaves that release a strong scent of smoke and malty earth! Liquor Appearance: The liquor is the typically light amber of a sweet Sheng pu’erh, deliciously light and with a slight film of oil across its surface that reflects the light in soft rainbows. Aroma: I didn’t expect this Sheng tea to be as deeply smokey in its aroma as I found it to be! The scent of warming smoke is intense, even off the liquor itself! Flavour: The smokey quality comes through just as cleanly in the taste as it did the scent of this tea! After a few sips however, the lightness of this mellow Sheng gives way to a refreshing, mineral aftertaste which kept me coming back for more and more and more cups! Mouthfeel: Light and silky smooth, the grassy flavours give way to a clean and almost sweetened softness on the tongue! This is such an easy tea to drink, I’d happily never stop. Raw pu’erhs are some of the rarer treats in my tea adventure and I love the stories that come along with them whenever I find them. 🍵 @teaprouk 🌱 1999 Golden Nuggets Supreme Pu’erh This Cha Tou under goes a wet piling fermentation process which causes it to clump into the distinctive nugget chunks. Over 20 years old from Yunnan this ripe, shou, pu’erh is a treat! Leaves Dry: The petrichor scent of the nuggets is muted while dry but hints at the depth of the flavour to come. The nuggets are mostly a deep mahogany brown but with flecks of brilliant oaky gold. Wet: Once infused the deep earthy aroma of this ripe pu’erh is much stronger and is brilliantly aromatic. Scents of the woodland after rain enrich the air as the infused leaves take on a deeper chestnut shade. Liquor Appearance: The liquor is a smooth and velvety copper which shimmers with the extracted oils as ripples spread across its surface. Aroma: While the leaves are incredibly earthy, the actual liquor retains some of that quality while increasing the malty and woody notes that permeate the nose after repeated steepings. Flavour: There are slightly smoky tinges to this tea but, starting light with the first infusion and redoubling with each steep the malt earthiness grows and grows until it dominates every delicious sip. Mouthfeel: Despite the smokey and malty qualities present in the aroma of the tea and in its flavour, the finish of this tea is remarkably smooth! It glides off the tongue with a sumptuous ease. Luckily I found this Peter Rabbit cup and saucer that I brought from Beatrix Potters home in Cumbria. The tea is Mango spice from Inspired leaf fine teas. When you try new blends some will be winners and some not so, unfortunately this blend just wasn’t for me. Quand une recherche s'intéresse à un problème très concret (ici optimisé une infusion) il est marrant de constater ... que le scientifique est souvent à côté de la plaque et ne s'intéresse pas au produit. Une consommation "standard" occidentale c'est en mug. 15g de thé pour un mug c'est aussi dépassé la dose maximale de caféine journalière. C'est aussi une boisson imbuvable 🤣 Toujours garder un esprit critique 👌

Bienvenue dans mon laboratoire ! Aujourd'hui on teste ... Le sel et le thé. Récemment, un livre d'une chimiste et vulgarisatrice américaine a crée "le scandale" chez les anglais ... Mettre du sel dans le thé lorsqu'il est trop amer. J'ai testé sur un thé parfumé accidentellement surinfusé ... Miracle ça le rend buvable ! Mais pour un thé "grand cru" surinfusé, conserve-t-on un équilibre des arômes si on teste cette astuce anti-amertume ? Un contrôle positif surinfusé, négatif "infusé comme j'aime". Je fais un plan expérimental comme ma vie de tous les jours. J'ai choisi un dancong Lei Khou Chai, plutôt clément mais trop puissant si surinfusé. Le contrôle négatif est parfait, le positif abrasif. Tu es déjà passé au vrac ? Tu découvre les terroirs depuis 1 à 2 ans ?Tu connais par cœur les gammes de tes boutiques préférées ? Tu as toujours plus soif de tester ? On parle souvent des conseils pour ceux qui débutent mais peu pour l'après. Voici comment j'ai fait pour progresser dans le thé sans avoir de contacts chez les producteurs. 1) Sur internet, tu iras. Le thé n'a jamais autant attiré en entrée de gamme, mais c'est vrai aussi pour le milieu de gamme ! J'ai trouvé de l'inspiration avec instagram, les forums (groupe facebook, reddit, etc). Pour commencer j'ai fait une liste des noms de boutiques qui revenaient le plus (plusieurs jours chaque soir). Ensuite j'ai regardé par rapport aux instagrammeurs/personnes des groupes dont les contenus me parlaient. Et ensuite j'ai fait des petites commandes. Ne pas hésiter à regarder en profondeur en local si vous vivez dans une grande ville/capitale. 2) L'esprit critique, tu auras. L'idée ici n'est plus tant de découvrir mais d'approfondir. Si on lit des fiches thés très similaires ou si des personnes mentionnent des équivalences, ce n'est peut-être pas la bonne piste. Pour affiner sa critique on peut ... 3) Sociabiliser ! Les réseaux sociaux sont des outils d'échanges fabuleux qui permettent de discuter avec ... n'importe qui ! Un message en privé et pouf : tout un monde s'ouvre. Il ne faut pas hésiter à questionner ! 4) S'ouvrir au monde, tu essaieras. Les sélections de thés sont très différentes d'un pays à un autre. La première fois que j'ai eu cette claque c'était avec les dancong. Chez la plupart des généralistes, j'avais en tête des thés durs à préparer et presque amer. Et ensuite, en testant chez un vendeur qui travaillait avec un producteur du Guangdong, rien à voir. Puis directement chez un vendeur réputé : rien à voir. 0 amertume ! 5) Pas d'apriori de goût ! Il ne faut jamais rester sur des acquis de goûts. Ça se rattache un peu au 4, on est à l'étape où on a fait pas mal de tests et/ou toucher à beaucoup de terroirs, mais peut-être pas aussi spécifiquement. Il y a encore beaucoup à découvrir.
