In honor of National Carbonara Day here is our delicious spaghetti carbonara recipe. Enjoy! Spaghetti Carbonara Ingredients: 1lb spaghetti or bucatini, favorite brand 1/3 lb pancetta or bacon 3 egg yolks 2 eggs 4 ounces (~ 1/2 pint) grated Parmigiano-Reggiano cheese ~2.5 to 3 cups of pasta water Fresh ground black pepper RECIPE Cook pancetta until crispy and remove from pan. Add favorite pasta to salted boiling water. In a separate bowl, beat eggs and egg yolks together. Add cheese to egg mixture and mix thoroughly. While quickly whisking the egg/cheese mixture, slowly drizzle 1 cup of pasta water into egg and cheese mixture. Reserve 2-3 additional cups of pasta water. Drain pasta once cooked al dente. Return drained pasta to pot. Slowly add egg/cheese mixture to hot pasta. Mix and toss rapidly until it becomes thick and creamy. Add more pasta water, 1/2 cup at a time to help emulsify sauce and create a luscious smooth sauce. Add pancetta and toss to combine. Top individual servings with fresh ground pepper to taste. Sausage Saffron Pasta Ingredients • 1 lb Bulk Italian Sausage • 1/2 Sweet Yellow Onion, finely diced • 2 1/4 cups of Aneto Chicken Broth • 1 pint Strauss Heavy Whipping Cream • Large pinch of Saffron (15+ threads) • 2 tbs EVOO • In a large pan over med heat sauté onions in EVOO • Add Italian Sauasage and break apart large chunks while it browns • Put a large pot of salted water on to boil for the pasta. • When the sausage is well browned, add the chicken broth and the saffron. Be sure to break up the saffron stems. • Then add cream and season with salt and pepper. Continue cooking on a medium heat for about 15 minutes, or until cream reduces and sauce holds on the side of a spoon. • Cook the pasta al dente according to the instructions on the box. When the pasta is ready, ladle the pasta into the large pan. March 14, 2021 Hello Zanotto’s Neighbors, As we approach the one year of the pandemic and the March 16th shelter-in-place mandate, Zanotto’s Markets wanted to take a moment to reflect, share plans moving forward, and thank you for supporting our family business this past year. A Look Back: It was about a year ago when the amount of unknowns started piling up. Despite all the uncertainties, we knew from the start that as a grocery store, our actions mattered. We were (and continue to be) committed to doing everything in our power to keep our customers and employees safe. Our commitment to safety started early: In the first week of March, we implemented extensive cleaning protocols including wiping down lanes in between check-outs, sanitizing carts, placing hand sanitizing stations throughout the store, and so much more. On March 17th, with our Grandparents in mind, we successfully pioneered Senior Hour at all four of our locations. Senior Hour is a designated hour for those over 60 or immunocompromised. On March 18th, we began free curbside pick up for Seniors and eventually extended this program to frontline hospital workers. Our curbside program has fulfilled over 3,500 orders. Our stores have proudly completed every curbside order received, thanks largely to the efforts of hundreds of volunteers. Elderly customers without emails were (and are still) able to call in and place orders directly with a Zanotto family member. Ingredients (6-8 pieces) 1 bunch of Swiss chard torn (1lb) 1/2 sweet onion thinly sliced Olive oil for cooking Salt& Pepper Olive oil to drizzle Calabria Ricotta Crusty Bread Pictured Acme Levain Start onions in a pan over med high heat. Once they turn opaque stir in the Swiss chard. Once everything is wilted and combined, let sit on low heat as you slice and toast the bread. Here’s an easy @zanottosmarkets recipe we enjoyed posting a couple years ago. “Colors of Italy,” pasta 🍝 We paired this pasta dish with @certifiedpiedmontese dry-aged ribeye steaks. #zanottosfamilymarket #zanottos #ribeye #zanottosrosegarden #zanottossunnyvale #zanottoswillowglen #zanottosfruitdale #madewithlove #pasta #locavore #bayareafoodie - Ingredients: 1lb - Favorite Rustichella D’Abruzzo pasta 1 Jar – Divina Roasted Tomatoes and Oil 1 Jar – San Giuliano’s Roasted Artichokes and Oil ¾ Cup – ITALBRAND Capers, drained 1 Bunch – Fresh Italian Basil Add pasta to a pot of salted boiling water While pasta is cooking, drain and reserve oil from Roasted Artichokes and Tomatoes Rough chop artichokes and tomatoes Drain Capers When pasta is al denta, Save one cup of pasta water and drain cooked pasta. Return pot to low heat, Add cup of pasta water, half of reserved oils, cooked pasta and stir to thicken. Add capers, artichokes and tomatoes and mix to combine. Plate pasta and tear basil leaves over the top. Optional: Grate Parmigiano-Reggiano cheese to taste. Optional: Drizzle Calabrian Chili Oil for a little added heat. Enjoy

We posted this recipe over a year ago, but since Mother’s Day is tomorrow we thought we’d repost this wonderful dinner idea! ❤️ Any chicken piccata lovers out there? Chicken piccata is an @zanottosmarkets family favorite. Today we are sharing our incredible chicken piccata recipe. This recipe serves between 4-6 people. Ingredients: 6 pieces of chicken Milanese (found in our meat departments) 1 jar San Giuliano artichoke hearts 1/2-1 cup of capers drained 1 sweet onion diced 6 cloves garlic chopped 2 cups white wine (not Chardonnay) 1 cube butter (1/4lb) 1 lemon zested and juiced Chopped fresh Italian parsley Recipe: Fry the chicken in olive oil or oil from artichokes until browned. Remove to a plate and set aside for now. Sauté chopped onion and diced garlic until slightly browned. Add wine to pan to deglaze. Then add chicken, artichokes, capers and lemon juice to the pan. Simmer until tender (About 15-30 minutes). For more sauce add more wine or chicken broth if desired. Salt and pepper to taste top with lemon zest and parsley. It’s National Oatmeal Cookie Day and we have THE BEST Oatmeal Cookie recipe! We shared it with you last year, it was such a hit we thought we’d share again. - - - A Brown Sugar, Dark Chocolate Chip, Oatmeal Cookie Recipe -2 cups packed golden brown sugar -1 cup (2 sticks) salted butter, softened -2 teaspoons vanilla extract -2 eggs -1/8 cup maple syrup -1 1/2 cups all-purpose flour -1/2 teaspoon salt -1/2 teaspoon baking soda -3 cups old-fashioned oats -2 cups dark chocolate chips -1/3 cup of chopped walnuts (I recommend buying chopped walnuts then chopping or crushing them down into even smaller pieces) - - - Preheat the oven to 350 degrees F. In the bowl of an electric mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Add in the vanilla. Add the eggs one at a time. Add the maple syrup. Mix together the flour, salt and baking soda in a medium bowl. Add it slowly into the creamed mixture. About a cup at a time. Once it is combined and smooth mix in the oats. Then add your chocolate chips and walnuts. Scoop your dough onto your baking sheet making sure they are a couple inches apart. Olson Farms. C.J. Olson cherries began in 1899. They have been a staple and source of pride for Sunnyvale for 120 years! Last year C.J. Olson closed its landmark fruit stand, but began selling in a few stores including @zanottosmarkets. Their products are unique and as good as it gets! We will definitely be filling our Easter baskets with C.J. Olson’s chocolate covered apricots, blueberries, and cherries.
