People often ask if we would ever consider a livestock guardian dog…while they do an amazing job at protecting their flock and guarding the perimeter of the property to ensure no unwanted trespassers are about, for us they pose a management challenge. Mathilde and said LGD have opposing roles. While one is trying to move the herd and do her bidding the other would be protecting her herd from Mathilde. Also, LGD have a different diet than their flock. And they bark. A lot. Which isn’t really capturing the relaxing environment we’re aiming for 😉 All this to say we have had a few predator issues this year for first time since we moved to Paso Robles over 10 years ago. So! We would like to introduce Chocolat! She’s our livestock guardian alpaca and she fits right in. Alpacas make excellent flock protectors, eat the same as their herd, and they only make a fuss when there is danger! Come for a farm experience, meet the flock and Chocolat!

Broccoli Cheddar Upside-Down Pastry ### Ingredients: - 2 tablespoons unsalted butter 🧈 - 1/2 cup Real California cheddar cheese, shredded 🧀 - 1 large head broccoli, cut into florets 🥦 - 1 tablespoon olive oil 🫒 - Salt and black pepper, to taste 🧂 - 1 sheet puff pastry, thawed 🥐 - 1 tablespoon Dijon mustard 🍯 ### Directions: 1. Preheat your oven to 400°F (200°C). Grease a 9-inch round cake pan with butter. Sprinkle the shredded cheddar cheese evenly over the bottom of the pan. 2. In a large skillet, heat the olive oil over medium heat. Add the broccoli florets and season with salt and black pepper. Cook, stirring occasionally, until the broccoli is tender-crisp, about 5-6 minutes. Remove from heat and set aside. 3. Roll out the thawed puff pastry sheet on a lightly floured surface into a circle slightly larger than the cake pan. Spread the Dijon mustard evenly over the pastry. 4. Arrange the cooked broccoli florets evenly over the mustard-covered pastry. 5. Carefully place the pastry over the cheese in the cake pan, mustard-side down. Press down lightly to adhere. 6. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up. 7. Remove from the oven and let cool for a few minutes. Place a serving plate over the cake pan and carefully invert the pastry onto the plate, so the cheesy broccoli is now on top. 8. Slice and serve the Broccoli Cheddar Upside-Down Pastry warm. Humboldt Fog is amazing! Look how huge that wheel is! As a #CypressGroveAmbassador, making Humboldt Fog the star of the show is everything. And I only saw it fit to wear my tie dye tee that I got in Arcata (hometown to @cypressgrovers!) 🧀👑🧀 I was so excited to make this night happen w. bestie @deepa.shridhar. We started off with a Humboldt Fog board paired with two varieties of bread: a fermented tomato rasam foccacia and a sourdough fermented masa mushroom focaccia. Let’s talk about Gouda. It’s a fun cheese to pair with all kinds of things, but it’s also one of the most interesting cheeses to explore by age. Gouda is typically made from pasteurized cow’s milk — although you can find artisan-style Gouda’s made with sheep or goats milk, too. But when you age Gouda, a natural build-up of calcium lactate collects in the cheese which forms those yummy crystals in the bite. The longer the Gouda is aged, the more crystals will form.
