Cheesy White Bean Tomato Bake<br /><br />Ingredients:<br /><br />2 cans (15 oz each) white beans, drained and rinsed<br />1 large onion, diced<br />3 cloves garlic, minced<br />1 can (14.5 oz) diced tomatoes<br />1 cup shredded mozzarella cheese<br />1/2 cup grated Parmesan cheese<br />1/4 cup fresh basil, chopped<br />2 tablespoons olive oil<br />1 teaspoon dried oregano<br />Salt and pepper to taste<br />Directions:<br /><br />Preheat oven to 375°F (190°C).<br />In a skillet over medium heat, heat olive oil. Add onion and garlic, and sauté until soft and translucent.<br />Add diced tomatoes, oregano, salt, and pepper.
