Decadent Chocolate Blueberry Cheesecake
Ingredients:
1 1/2 cups chocolate cookie crumbs
1/4 cup unsalted butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup fresh blueberries
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
In a mixing bowl, combine the chocolate cookie crumbs and melted unsalted butter. Press the mixture into the bottom of the prepared springform pan.
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gently fold in the fresh blueberries and semi-sweet chocolate chips.
Pour the cheesecake batter over the prepared crust in the springform pan.
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or until chilled and firm.
Serve chilled and enjoy!
