On the lamb with @kwv_cathedralcellar. I love Easter for so many reasons, quiet family time without the hectic pressure of Christmas, the rain even when it says it won’t... stealing the kids’ Easter eggs and continuously re-hiding them (they think they are rolling in it, lol); and of course the prerequisite lamb roast with all the trimmings. We got to test run Easter recently with some good friends, thanks to this crazy spoil from Cathedral Cellar, Chef Mynhardt Joubert, Weber South Africa, Willow Creek olive oils, Wild Kalahari... We duly opened a few bottles with the lamb and can confirm the Shiraz goes best! They are running a competition so you too can win all of the above. Prep is officially finished, and I'm ready to pour myself a glass (or two) of wine, while my handsome braai-master and his trusty Weber take over! It's also safe to assume that we now understand why Chef Mynhardt adores this method of preparing lamb! Slow and steady. Reminiscent of the Mediterranean lifestyle, where there’s a reverence for good food, fine wine, and leisurely gatherings with loved ones. Chef Mynhardt's Shredded slow-roasted lemony Greek Lamb Shoulder prep in-progress, ready for a Sunday roast with family. Prep Time: 30 minutes Marinating Time: 24 - 48 hours. Ingredients: 1 whole lamb shoulder on the bone, courtesy of Wild Kalahari* 1 cup of caper berries 12 garlic cloves cleaned 12 anchovies 125 ml of honey 125 ml of Willowcreek Olive Oil 125 ml of Lemon Juice and the rind of three lemons Handful of fresh rosemary Handful of fresh thyme Salt and pepper 1. Start by preparing the lamb and making deep incisions with a small sharp knife – stuff the lamb with the capers, garlic cloves and anchovies and season with salt and pepper 2. Place the honey, olive oil and lemon juice in a blender and blend until smooth 3. Insert the lamb into an extra-large ziplock bag and cover it with the marinade. Refrigerate for 24 to 48 hours. It's that easy! To quote Mynhardt: “When cooking with meat, the importance of origin is as important as it is for wines. For this recipe, I chose Wild Kalahari meat which originates straight from the Kalahari where the free-roaming animals graze on diverse pastures, leading to a more flavoursome meat which pairs exceptionally well with the rich and full-bodied character of Cathedral Cellar’s wines.” Bring on Sunday.. 🍀 #LaurasWorld #LaurasWine #CathedralCellarRoots #CathedralCellar

PIZZA AND WINE Chef Mynhardt prepared a sourdough pizza in a Weber amidst fig trees, with their fruit gracing this magnificent pizza. Joined by Justin Corrans, KWV Chief Winemaker, in the orchard, they paired the Cathedral Cellar Sauvignon Blanc, its crisp acidity complementing the tangy sweetness of figs and the creaminess of mozzarella. As for the Cathedral Cellar Cabernet Sauvignon, the wine's firm tannins and dark fruit provided a robust counterpoint to the bold flavours of Gorgonzola and Parma ham. Cape Winelands Harvest Bread Elevate your harvest celebrations with our super easy Grape Focaccia recipe, made with the Eureka Mills Focaccia Easy Home Mix (made from stoneground flour), and paired perfectly with our delicious Cathedral Cellar Pinotage. Ingredients: 1 kg pack EUREKA MILLS Focaccia Easy Home Mix (yeast included) 700 ml lukewarm water Plump table grapes (or pinotage grapes for an authentic touch) Fresh rosemary Olive oil for brushing Instructions: Preheat your oven to 190°C. Prepare a flat baking tray by spraying it with cooking spray. Mix 500ml of lukewarm water slowly into the Focaccia and yeast mix. Once incorporated, add the remaining water and continue to mix thoroughly. Add fresh rosemary leaves into the dough and let it rest for an hour. Spread the dough evenly on the tray. Push grapes into the dough, distributing them all over. Brush the surface with olive oil. Pop it into the oven and bake until golden brown, approximately 45 minutes. Let it cool and slice the bread generously, served with a generous smear of butter, paired with Cathedral Cellar Pinotage. If you're a white wine lover, try it with Cathedral Cellar Chardonnay. Chef Mynhardt's Zesty Greek-Style Roasted Chicken continued.. ..A recipe that's just too good not to share this Summer. ..Serves: 6 – 8 Prep time: 15 minutes Cooking time: 35 to 45 minutes Easy to prepare Ingredients: 1.5 – 2 kg Delico chicken braai packs 2 medium-sized onions, chopped 50 ml of Willow Creek lemon olive oil 6 cloves of grated garlic 500 ml of Cathedral Cellar Chardonnay Juice and rind of 4 lemons 2 bay leaves Cape Herb and Spice Company Greek Lemon and Herb Seasoning Method: ~ In a medium-sized saucepan, sauté the onions in the lemon olive oil until golden; then add the garlic and reduce the heat, allowing it to cook gently for 2 to 3 minutes. ~ Introduce the wine, lemon juice, bay leaf, and rind. Turn up the heat and let the mixture cook, reducing it by a third. Once done, let the concoction cool off completely. ~ Nestle the chicken in a spacious airtight container or a ziplock bag. Liberally coat it with the Greek Lemon and Herb Seasoning from Cape Herb and Spice, then pour over the prepared marinating liquid.
