* Follow the Crowd My genetic “follow the crowd” gene must have been misplaced at my birth. Always the one wanting to be “different!” Not in a bad way, just enough to maybe stand out a little. “Little” being the operative word. It’s not an ego thing, that gene rarely surfaces. “Confident” might be the expressive gene coming through. I mention all of this as my post for today revolves around a region that has been popular of late; that of volcanic wines, even more precisely, from the island of Sicily near the Mt Etna volcano. The wine today comes from the small town of Castiglione di Sicilia, which is situated on the northern slopes of Etna and rises 2,625 feet above sea level. All very interesting, but it’s not what drew my interest to the wine. That was the grape; 100% Nerello Mascalese. Maybe if I had taken more of an interest in Sicilian varietals, I would have come across this grape more often and not been so intrigued now. The nuances of the wine truly struck me. While similar to a softer style of red, such as Pinot Noir, there were more rustic qualities to it; likely coming from the terroir and the light toasting of the French oak barrels it was aged in for a mere three months. Notes of sweet cherry fruit with that certain rustic element helped round out the wine along with nice acidity that ends with brightness and spice subtleties. Maybe I’ll have to reassess my hesitation for those “follow the crowd” style wines, although I still find so many other wines I’ve yet to discover. The #internationalviognierday celebrated on the last Friday of April, inspired me to re-visit this grape variety and taste its famous blend of côtes-du-rhone and its mono varietal version by @lesalexandrins vintage 2022, which opens up with some floral aromas of peach blossom, then evolves into ripe yellow pear, yellow apple, quince, ripe lemon, peaches, ripe apricots, melon and finishes off with tropical aromas of ripe pineapple and banana. Incredibly mineral it has a pleasant acidity and a full body, lush and rounded. At @sofitelfiji we discovered an excellent rosé from outside the Mudgee region (NSW) 600 m.a.s.l. north west of Sydney. On paper this blend could have been from Medoc in Bordeaux, but it is made as a rosé and it is Australian!😊 This rosé is now 7 years, and has such exciting power and finesse! No doubt - with a Medoc blend you would expect ageing potential, but this is the first time we experience this from a rosé wine. Here in Fiji we have paired this wine with various fish dishes incluuding a yellow fin tuna steak. Delicious! This well made rosé has pronounced aromas of strawberries and cheeries. On the palate - fruity with good acidity and notes of ripe cherries. Simply an excellent rosé! Did you know there’s a Scampi Day? Welp, now you do! 🤣 and it’s today! We’ve been there and done that — a few times! This is one of my dishes that is always a crowd-pleaser! 🦐🍽 I love to use pappardelle but you can use whatever long pasta you have on hand. And guess what? You can pick up ALL of the ingredients at @traderjoes. Ingredients aka your shopping list: - Pappardelle - 1 lb of Argentinian Shrimp - Crushed garlic (2 cloves) - 1 lemon - 2 tbsp butter - 1 tbsp 21 seasoning salute (similar to Mrs. Dash if that’s all you have!), more to taste - Red pepper flakes, to taste - Salt - Olive Oil 1. Boil your water + cook pasta according to package directions. 2. Pre-season your shrimp in a bowl with the garlic, juice fr half the lemon, 1 tsp of salt and 1 tbsp of 21 Seasoning Salute. Stir and let sit for a bit (5-10 min should do it) 3. Melt 2 tbsp butter on skillet heated to medium until it starts to lightly bubble/foam. 4. Add shrimp and cook 2-3 min per side then transfer to a plate. 5. Drain pasta well then add to pan and toss. Drizzle about 1 tbsp olive oil, 1 tsp of 21 Seasoning and 1 tsp of red pepper flakes. Toss. 6. Return shrimp to the pan and heat pan for 1-2 more minutes on low. Garnish with chopped parsley and grated parmesan! Make it a meal with a salad or bread on the side.
