went home with just 15% battery life, i dragged myself to cook a decent meal for dinner. today’s dinner plan is a spaghetti bolognese from scratch… eh not the pasta i mean the beef ragu. usually i’ll just grab a store-bought version, tapi karena hari ini harus ngrepotin diri sendiri maka bikinlah yang versi home-made nya. came across the internet; Chef Max Mariola’s Spaghetti alla Bolognese, i end-up replicate his recipe with some twist and adjustment. didn’t follow exactly his instructions but i tried to make it as authentic as possible by providing the ingredients.. this is also the first time i cooked using red-wine. I’m not quite sure with the result tbh, but once the wine deglaze the meat and all of the fat, my eyes were wide-open. it smells so good, so complex with the combination of mixed-tomato paste and sofrito — Max didn’t use herbs, while i added mine with some oregano and garlic just to enhance the flavor. Max cooked the meat separately from the veggies before it combine, while i just pour everything straightly in one pot for the sake of dish-wash efficiency lol and oh, ALSO😌 there were additional seasoning like totole and sugar because salt-only won’t work on my asian pallet, i’m sorry! not gonna lie that it way too bland if just salt and pepper😅🙏🏼 taste better after i modified it using some msg (yes, totole contains msg! lol) — rasanya yang agak ringan jujur sangat bisa dinikmati ternyata, seger dari tomatnya bikin seporsi bisa dibuat agak banyakan tanpa bikin eneg. but, for me this kind of recipe won’t work for my red sauce on lasagna. thus, i’m considering to make it again next time when i crave something like this; an authentic italian bolognese, instead of using a store-bought bolognese sauce🙌🏽 — #homemade #spghettibolognese #beefragu #foodnote
it’s an off days so i took a chance to finally made Ngohiong Ayam viral lol bahan utama dari per-ngohiong-an ini adalah tentu saja bubuk ngohiong nya, known as five-spice mix. it supposed to be easily found in big supermarket, but i got mine from nearby traditional market, di kios cici yang juga kasih tau aku bakmie hokkien🫶🏼 it’s a home made mix and supposed to be legit as she said so. — kalo liat dari abang2 tukang jual ngohiong, dia pake semacam kulit tipis yang bikin sendiri buat nge-gulung adonan ayam ngohiong nya. sempet gak yakin bikin kulitnya akan berhasil atau enggak wkwk kayak “yaampun kok nyusahin diri sendiri sih” 😂 tp karena dah kepalang tanggung akhirnya jadiin aja lah! i follow carefully the instructions and it turned out to be pretty good.. extra adonannya disimpen bisa dipake buat bikin risoles hihihi — untuk isian, cari aja resep bikin ayam ngohiong ya tp pastikan ada bubuk ngohiong di ingredients nya, karena bebebapa resep kok malah gak ada bubuk ngohiongnya?! begitu juga dengan cuko nya… follow the recipe that fits you — sempet udh cape begitu selesai bikin kayaknya gak selera lagi mau icip, tapi ya gpp lah 4 potong aja, sisanya kita simpen buat stok. i lower my expectations since i actually never had the original one. i always thought that dishes using ngohiong always contain pork😂 turned out ngohioing is a spices wkwkwk jujur yang bikin tergoda nyobain meskipun dah capek tu karena ada potongan cabe nya, kayak yg sedep gt… dan ternyata pas dicobain enak juga woi😂🚨 gawat bgt.. i only use 1/2 tsp ngohiong for 4 servings ingredients tapi wangi rempahnya kecium subtle jadi nggak mengganggu, pas bgt sama kombinasi pedas dr rawit yang kegigit sama asem manis kuahnya, tekstur kulitnya🤤 tips from me, jangan lupa kasih MSG ke kuahnya! it balance the sweetness from the palm sugar and enhance the savory taste🤌🏽 — seporsi abis sama kita doang, ternyata ya enak juga! no wonder it went viral #homemade #foodnote #ngohiong #ngohiongayam

Hari ini akhirnya coba bikin Ayam Kukus Jahe ngintip resep dr @willgoz yang nongol terus2an di Instagram, di-recook sama banyak orang. Dengan waktu meracik yang sangat singkat dan minim cucian, kita pake takaran yg sama persis; 6 potong ayam paha bawah full recipe👍🏽 racikan dan topping ayam kukusannya mirip2 sama ingredients kalo bikin chicken chasu.. smell something familiar. Too bad that i was running out some starch so there were no saucy sensation on the chicken🥲 lagi lagi agak deg-degan karena di resep racikannya nggak pake bawang sama sekali😅 dah hawanya mau ditumis aja ni ayam kalo gagal wkwkw detail resep baiknya liat di tempat willgoz aza ya teman2🤭 — condiment wajib disini adalah chilli oil, but i made slightly different from the recipe by skipping minced ginger because i think it’s too much ginger already.. i put also little bit of sugar and mushrooms powder to balancing out. here is the thing, when chilli oil first came out i was really like had enough, so much exposure of food making using chilli oil🙄 what is so good about that? UNTIL i discovered myself how fragrant the combination of dried chilli, minced garlic, and soy sauce cooked altogether over the scorching hot oil poured on it.. pake minyak kelapa lagi dapuran kita!! apa tidak makin sedap?!🫠🤤💥 it was so pretty, so fragrant, and so good that i cannot hold myself to pour the oil a little bit more then it became too much oil🤣 definitely will make it again sometimes soon lol it was so freaking good even though the measurements was totally an eye-balling🤤🫶🏼 — the dish came out perfectly, i did adjusting the seasoning to my preference. it taste so clean, straightforward, humble, paired perfectly with the ✨chilli oil✨ i like how the chicken turn out to be so soft because it basically boiled on its own fat and moisture, no water added. even though the star of the show turned out to be the chilli oil, but i will definitely made this dish again. another new sunday’s cooking, checked✅ — #homemade #foodnote #ayamkukusjahe

A horrible day at work👹 i felt like wanna rushed home to just pour it into something since i need to release it, immediately otherwise i will cry lol😂 — thinking so hard on the way home what should i make in order to facilitate my unstable emotion, yet still be able to use fresh produce on hands, make something quick, easy, and yummy.. came across my head about that cooking video i saved on Instagram of How to Make Chicken Nanking. that’s it!🔥imo this dish are similar to Fuyunghai, only the difference is that Fuyunghai’s main ingredients using lots of eggs while Chicken Nanking specialty is obviously the chicken-ground chicken, to be exact. — for the chicken, i choose boneless thighs skin-on and instead of using food processor, i grabbed my classic bone knife then minced the chicken manually.. yes, I CHOPPED EVERYTHING🔪💥use wisely—making sure that hand position were correct and knife properly sharp enough—i pour my anger of today’s wasteful emotions there—along with the meat that are getting grounded, the veggies that are become chunky in size. it was such a good releasing😮💨 the minced chicken mix with AP flour, starch, eggs, garlic, and seasoning until it become an ooey texture, then fried to golden brown. while the sauce is supposed to be just onion, yet i put lots of veggies so it became similar to cap cai😆 too bad i put less salt and overcooking the broccoli — today i chose to take that ‘bad day’ vibe ruin the rest of my day wkwkwkwkwk🥲 it was triggered me a lot but then cooking saved me all over again🫶🏼✨ the way i releasing bad energy might be dangerous and to not be done at home especially to those who isn’t familiar/used to handle a knife, but this is how i figuring out. you do find your way. — indeed not everyday is beautiful, a silky smooth like pudding.. recent days might full and packed with works and stressful.. almost no time to pause, day goes so fast, and apparently i got carried away🤡 i just try to embrace it, humiliating myself a bit, and hopefully feeling okay after that lol💀 much better now after some songs from Jamie Cullum! still so good, been a while tho✨ - #chickennanking #foodnote #homemade

Hari ini coba bikin lagi sop buntut pake resep Ny. Liem! gatau sih ini siapa but her recipe seems so legit i had to try and indeed it is! even the prep ingredients looks so pretty✨ — tips from her is to better choose bigger size of oxtail which is base-part instead the end-part because the smaller one takes longer time to boiled.. i used my pressure cooker for an hour and the smaller one was still bit chewy.. bagian yang gedenya mah udah copot-copot bgt (but still Krisha said would be good if it took bit longer) *sigh* RIP gas LPG🥲👍🏽 cuma mungkin karena buntutnya nggak banyak yah—duh, major bucks—jadi yah gak yg ngaldu bgt bgt gitu dan harus dibantu pake kaldu blok/penyedap rasa sapi — anywayyyy.. resep Ny. Making Chicken Fricassee today for lunchhhhhh✨ been wanting to try this French chicken stew at home and even if i skipped bay leaf from the recipe, this still taste so good.. it just exactly like i thought it would be — following the recipe from RecipeTin Eats on Youtube, this also the first time i made some dish using white wine.. there are subtle of tangy and sweet flavors on the broth before cream/milk covered it, as instructed i boiled it for 10-20 minutes not only to cooked the chicken inside-out, but also to evaporate the alcohol from the wine (calm down everyone). mushrooms enhance the earthy flavors and thyme works as remover of that chicken-smell. too bad i couldn’t make it as brown as should be. This dish served along with mashed potato which in my case it was a potato purée 🤣🤣🤣 — might as well packed it in the fridge and bring it as lunch on Monday, i guess? always making extra portion😌 — #chickenfricassee #homemade #foodnote
To me, there are only two things happen in this world works like a time machine; perfume and food. sniffing familiar scents as well as tasting some dish works the same like throwing you to certain period of time in your life, and this humble dishes are the perfect example to do the job — it was just Tumis Kangkung and Tempe Goreng, a typical menu warteg yang sering banget kita makan waktu kecil.. this prob my very first favorite veggies. Ibu kenalin sayur kangkung ini dari menu warteg langganan deket rumah, yang jual namanya Mbak Ros—ntah Rosidah, Rosmini, Rosmana.. sampe sekarang gak tau deh itu Ros-siapah😌 menu ini sering (wajib sih kayaknya) dibeli sama Ibu di hari-hari pas belio males masak. Dulu inget sampe doyan banget nge-gadoin tumis kangkung ini kalo udah gak ada lagi yang mau makan dirumah.. se-🫶🏼 itu. Kemarin pas lagi eneg banget sama menu daging qurban, i undoubtedly masak ini sebagai ‘pelarian’ dari menu-menu masa kini yang lagi sering dibuat.. i had to have this, i had to make exactly like Mbak Ros did: bit saucy dan overcooked! if people usually cooked greens in super fast duration to keep the color and crunchiness, but not for Mbak Ros.. nope! i had to make it as layu as possible lol🤣 also for the tempe goreng, i put extra coriander for the seasoning because you can just fried it as well as kremesan.. gurih bgt rek! thank me later🥳 — ditumis sederhana saja pake baput bamer dan irisan cabe serta lengkuas dan daun salam sampe layu.. baru masukin kangkung and those seasoning as you preferred.. dimakan gitu aja pake nasi panas pandan wangi, tempe goreng, dilengkapi sambal bawang: duh, apakah ini yang disebut nikmat sederhana? IYA BANGET🥺✨ — makan enak, kenyang, dan murah—while reminiscing the days when Ibu was a little younger and i was a little smaller—and yet just like that, how time flies so freaking fast. this humble dish will be a core-memory that’ll stuck forever in my heart. a simple dish that bring me close to home, something that is not fancy yet made me chew in *tears* of longing🥹✨ — #homemade #tumiskangkung #foodnote
