I've been thinking a lot about #appletrees this week. But not so much the likes of lovely Sam @nightingalecider and his ilk, pictured here, but the great #cider industrialists of the world. It's messing with my brain a little bit. I want tales of the land and swaying trees, and complex flavours that speak of historic apple varieties and gentle maturation in interesting barrels. But I think a lot of people just want cold, sweet and fizzy. Yesterday turned out to be a sampling day, an important part of the cider making process whereby I tested the gravity and tasted small samples of ciders made last season, most for the first time. This is the first step in deciding what to do with them as in how. to blend different barrels together to get the best finished products I can from them. The first picture shows two samples from two different barrels of Somerset Redstreak single varieties made with apples from my two different orchards, pressed 6 days apart. There is a clear difference in colour and the slight difference in flavour reflects the different terroir of the two orchards with each having different aspect, altitude and soil types. The second picture shows five samples from five different barrels of Dabinett single varieties, again from the two different orchards... what is interesting with these are that the two samples on the right are both made with Dabinett apples from the same orchard, pressed on the same day and yet there is a slight difference in colour and character! They all taste like Dabinett but show off different expressions of the character of the fruit. I happened to notice this protruding from a box of pictures I have in storage at my parents house which I had totally forgotten about! It's an image of one of my early ciders, the name Megablend being one I used a few times, but not for a while! Funnily enough, I have recently revived this name for my latest blend, and it is exactly what is says it is- a Megablend, made with lots and lots of different apples! In fact, this latest rendition is made with four barrels of cider from four different years: 2019 Discovery SV 2021 Blend of early droppers from mine and local orchards 2022 Blend of mostly cider apples from another local orchard, and 2023 Dabinett SV from my orchard The Dabinett cider from last season was still fermenting and so, after blending the four barrels, I bottled a load up (before going on a 2 month road trip at the end of January). These have conditioned nicely to create an easy drinking, mellow "Pét-Nat" (short for Pétillant Naturel) which basically means that the product has finished its primary fermentation in the bottle as opposed to a fully fermented cider being bottled with a dose of sugar to enable a secondary fermentation. I think normally Pét-Nat ciders are in 750ml bottles and sealed with a cork but, well, I'm not normal (😅) and mine are in 500ml bottles sealed with a crown cap! In Luxembourg the gold grows on trees. You're not wrong! Absolute delight to have our first international guests at the @londonciderclub last night. Carlo and Bill from @rambornciderco hosted a fascinating tasting through an award-winning Luxembourgish range featuring crisp session ciders, tantalising pure quince nectar, fine iced perry, and a huge 15-month Laphroaig barrel-aged eye opener. Talking through their history from conception on Edinburgh's Haymarket to becoming a heart of Luxembourg's gastronomic scene, a fully-fledged B-corp, and custodians of the fruit of 300 local growers, this was a great start to 2024 for the club. The bar has been set very high indeed. I didn't get round to posting about finishing picking and pressing this year until now so here we are.... I happened to notice just how serene and still the silhouette of my press looked against the doors of my barn, behind which sits thousands of litres of fermenting apple juice, produced by the press whose shadow is vividly and most aptly but temporarily cast upon them. The fleeting moment of its expression in this form is reflective of the recent active period it has seen, as it will now sit in restful slumber until the fruit is ready again next year. Like the cider maker and helpers have also done it has stretched its limbs and worked some muscles again this season. So, while I remember to, I must express my sincere gratitude to everyone who has helped with picking and pressing apples this year, namely Kriss, my long standing comrade and good friend, chief mill man and hardened apple picker, Craig (chicken of the woods-look him up on YouTube) who has been an unbelievable help this year having picked a good proportion of the fruit from my orchard with me, Peter Picard for multiple outings, Phil Final Coil, Darryl and Bex, Gareth, and Swiss Chris for their help picking and pressing too, as many hands makes light work! Amongst others I pressed these bad boys today...I *think* that they are Cox's Pomona but not absolutely sure. I grafted a row of these trees after taking cuttings from a tree in Newtown Linford getting on for 15 years ago as I Iiked its big red apples that stayed on the tree into the winter, and that tree is sadly no longer there. There weren't many on my trees but they're big! I filled a demijohn for a mini single variety batch and the rest went into a mixed bigger barrel which will most likely be a part of this year's Orchard Medley. The demijohn is just one of several small experimental single variety ciders of varieties I've never used on their own before which, for me, is really exciting! Apparently I can't count 😅😂! Did you notice I missed out one number and ended up 2 away from the correct total?! Think I was worn out after harvesting all these apples yesterday from just 5 trees with help from me old mucka @johnstonkriss. I remember that 2 years ago these trees produced 14 sacks of apples which was good then and so I'm very pleased with this year's yield! This is the first of the Dabinett. I've got another 54 trees to collect from in my main orchard! Oh, and as a side notei had a little taste of last year's Dabinett today which is yet to be bottled and oh my! It is a belter of a cider, probably the most full bodied intense fruity version of this great apple I have ever tasted!! Can't wait to share it with you at some point! A couple of firsts for me today.... I've pressed my first ever single variety Ashton Bitter (60 litres) and my first ever single variety Tremlett's Bitter (30ish litres).... the Tremlett's juice was definitely the more astringent of the 2 and I'm looking forward to tasting the finished product! The excess juice of the 2 went into a blend with Ellis Bitter (200 litres), so a Triple Bitter! We’ve been removing the majority of fruit over of the past few years to enable the trees put all their energy into developing a robust scaffold of branches. Today was the first pressing day of the year for me, a little later than usual! That's the Ellis Bitter all picked... There were lots on the floor so we picked all those up and then decided to get the rest out of the trees. They all came out pretty readily and it turned out there were lots more than I anticipated! I wasn't sure I'd have enough for a single variety but I definitely do, and more!! (under the tarp is Ellis Bitter too)... The excess will go into a blend...I like Ellis Bitter for several reasons, one being the size of them (many of them were BIG), but also the shape (wider at the top than the bottom, like a big strawberry) and also the freakiness (lots were "double apples", see picture 2)....oh, and they also make a tasty cider of course too!! I thought the last of my @berrylandcidery stash was long gone, so finding this 2020 Perry Brut was an unexpected bonus 🙌🏻 Pale gold with the softest bottle conditioning and notes of jasmine and lemon. It has to be one of the worst parts of the job... Every couple of weeks I taste every tank to check where they're at. As the year progresses the blends begin to take shape, or at least I begin to formulate what will work well with what... And then when it's time for a new batch, it's time to blend! Combining the different single variety ciders, which have now been aging for roughly a year, into what will be this year's iteration! 2022 is looking like a good year, probably down to how hot the summer was, sugars were high! Which means you can expect big bolder profiles! Very excited to share the new vintage, so watch this space!!

What a weekend it's been...! I've been down in Hampshire for a party with friends so was unable to attend the @yewtreepeterstow for their annual Cider Trials personally.... While the rain was coming down all day yesterday I was playing with another type of liquid... specifically, Somerset Redstreak Cider! It was a long day but I managed to get the last barrel from 2021 bottled and wow, what a cider it is! Fruity in the mouth followed by a soft bitterness and somewhat reminiscent of late summer hay meadows, I'm sure you dry cider fans are going to love this one...! You'll have to wait a few weeks before I release it though as its primed with a small amount of sugar and needs a little time to condition in the bottle. Good things come to those who wait!
