Following on from my post about cutting out all the processed carby snacks and foods for kids, here are some ideas of delicious and simple healthy food ideas the I often prepare when going out. When my boys were younger and since we changed our diet, I would never leave the house without either feeding them first, or preparing a picnic to take with. Having said this, kids donā€™t need food packed every time you leave the house. But only if we went out for the whole day or would be out over lunch or dinner time, I would pack a meal. Packets and packets of crackers and chips were not an option and nor were sandwiches, so I learnt to do a few things that were quick to prepare and easy to pack and transport. Always eggs! Boiled eggs, frittata, and my new favourites, zucchini fritters. These are all so simple and always taste even more delicious somehow, in a picnic. Other favorites include dips, techina, hummus, pesto, beetroot dip, roasted capsicum dip, what ever ingredients I had on hand. And if Iā€™m in a terrible rush and not organised, avocado and a good quality cheese are easy to find once on the road and add delicious healthiness to any picnic! Often Iā€™ll make a rice dish like mujedera which is also delicious cold with salad and dips. And sometimes some homemade buckwheat crackers if Iā€™m feeling fancy! All pictured above from different picnics! Once i figured out a good rotation of opions it was never an issue. A good healthy meal packed for a day out means no chips, crackers or fast food stops are necessary. Not to say I never took my kids for an ice cream or baked healthy muffins or packed in some chocolate, we had those too, but they were occasional treats, not a given every time we left the house. I can honestly say that packing a healthy picnic was much less work and more enjoyable than constantly hungry kids nagging for snacks and junk food and the behaviour that usually follows carby snacks and junk food!! 7 years ago with my little dumpling. Sheā€™s now 9 and shot up Mashallah. Yesterday I had her and my nephew over and I found her trying to fix a leak in the bathroom. In her own little way she was trying to mop up the water and fix the leak. Bless her. We had a fun afternoon, both of them have grown up with me baking with them and they enjoy it. Aiysha came with her notebook so she could write down recipes to make at home. I love she had that thought. Itā€™s a given that we always bake together. So we looked up some recipes and decided on making cheese (I had a lot of milk to use up) and then used that to make cheese scones. And then I was persuaded to take them to see Barbie. We actually all enjoyed it. Itā€™s so cute they both wanted to stay for dinner and so I had 2 little helpers - miso glazed salmon, along with some lentils! Bizarre mix of food but both are quick and easy and most importantly things they would eat that are nutritious. Iā€™m probably the not so fun Aunt as I stopped my nephew from picking up the processed halal sausages. But itā€™s amazing how kids are drawn to the fast food, to the ultra processed food items in the supermarket, to the sugary treats and I must have missed the hype but heā€™s constantly going on about an energy drink called Prime. The marketing associated with these things is so shocking. I donā€™t appreciate it until the kids are here and Iā€™m out with them. Itā€™s no wonder that mums give in as they know how to constantly push those buttons. How do you cope with these marketing messages that kids keep repeating ? I feel I sound like the boring and not so fun Nutritionist Aunt! But Iā€™m glad Iā€™m able to enjoy baking and cooking with my nephews and nieces. Every now and then I realise my family and I need more vegetables in our lives, and I make a massive ā€œFridge Saladā€ that I can just grab and go from. šŸ„— One things for sure, there is always room for extra veg in our lives! šŸ„•šŸ„¦šŸŒ½ Packed with vitamins, minerals and essential nutrients. Veg is also incredibly important for a healthy gut microbiome (good bacteria looooove eating veg!). šŸ¤© Choose veg that can be eaten both raw and cooked. Iā€™ve used Broccolini Corn Carrot Cabbage Capsicum Parsley (from the garden šŸŽ‰) Some other ideas include: Raddish Kale Wombok Bok Choy Celery Beans Snow peas As my cousin (a nutritionist) says - a big Fridge Salad is a ā€œchoose your own adventure!ā€ You can use this kind of salad to accompany any meal of the day! Brekky - cook up some of your Fridge Salad in a pan and add on top of your eggs. šŸ³ Lunch - Toss a big handful of your Fridge Salad with a dash of olive oil and a squeeze of lemon juice. Top with your protein of choice and bam!šŸ’„ Dinner -add a few handfuls of Fridge Salad to literally whatever youā€™re cooking! Stirfry, pasta sauce, side salad. The options are endless! šŸ™Œ Whatā€™s your favourite way to incorporate more veg into your meals?šŸ‘‡

Whenever ever we have apple crumble I will just blitz up some nuts I have ( also add oats sometimes and or coconut) and toast them. This bowl of toasted nuts was our crumble on our apples, it was a topping for our pancakes this morning and then the remainder I have thrown in with some dates, coconut oil, cacao and some salt to make a batch of bliss balls. Arvo snack/lunchbox snack idea/ breaky idea/ whatever you want it to be 1 avocado šŸ„‘ large 1 banana šŸŒ large Cup of berries ( strawberry, raspberry, blueberry etc or mix) 1/2 cup of Greek or coconut yoghurt ( or coconut cream) Tablespoon of maple syrup Put all in a blender and blend until smooth Makes about 6 small portions. These would be great for lunchboxes and put into reusable yoghurt pouches. If you want your child to eat eggs and they wont eat them boiled try it in different forms. Scrambled or fried ( I called these egg pancakes) we went through the phases of them eating them no worries then would only eat scrambled and ā€˜egg pancakesā€™ but now we are back eating any version. Sweet tooth lovers! Apple crumble with an easier and healthier twist. Spring is my favourite season. Winter has gone into hibernation, spring cleaning of the house and body! A great season for making oaty stews and easy spiced apples with coconut yoghurt, this is heaven. The dates and oats give the caramel crunch and its beyond satisfying. No skills required, yousef did most of it. His cutting skills scare the life out of me but he demolished it. You could use this as a puree too for little ones - maple syrup. Recipe in stories shortly. So when I'm trying to eat healthy, it steps up my whole families game. And i find that my kids will eat what I make available to them. Growing up I thought adults didn't eat candyšŸ˜‚ my mom never ate it so I literally was like 10 at a friends house when I saw her mom eat a candy bar that I was like "wait, what's happening?" I went home and told my mom and she just laughed and said "adults can eat candy! I just choose not to eat it very much" šŸ˜‚ . Steel cut oats. Drizzle of organic maple syrup (most other syrups are not even syrup at all, they're imposters) and today i set out frozen blueberries, strawberries, pumpkin seeds, Chia seeds and granola.
