But truth be known, no whole food is made up of a single nutrient. And unfortunately, when I talk to these people, they really have no understanding, because they have been misled by misinformation. Even coming from nutrition coaches. My goal is to help educate these people so that they understand food, not nutrients. Also to understand when they ask me the classic question, “where do you get your protein from?”it’s a very simple answer. From my food. I helped them understand that all plant foods contain protein. And the fact that there is no protein deficiency in this country. I just tell them eat more plants. When I explain it, they get it.

Sometimes, scrap that most of the time we are fire fighting and struggling and under pressure so, what is the first thing to slide, our needs, goals what we most want because we are tricked into something that is saying have me instead now, I'm here, I'm easy and you're tired, stressed, energy is low so the fake lure of you need me, I'll give you a moment of dopamine is too much and we give in, feel crap and guilty, hate on ourselves and the cycle starts again... RECIPE: Chicken Pie with Filo Pastry (Torta Di Pollo con Pasta Filo) • It’s been glorious weather here in Sydney (and I’m so grateful as it made the outdoor activities for these school holidays ideal), but that all looks to change with rain and cold weather forecasted for the week ahead (and I’ll be thankful for that too as the garden needs a drink!!!). If it’s all true, then this dish will be perfect keeping you warm and comforting the whole famiglia! Buon appetito! • Serves 4-6 INGREDIENTS: • 2 tblsp olive oil • 500g chicken thighs, cut into 2cm pieces • 250g or about 7 bacon (eye), rindless, cut into 2cm pieces • 1 large leek, (about 150g once sliced), trimmed, washed, halved, sliced into 1cm thick slices • 1 large carrot, peeled, halved lengthways, cut into 1cm pieces • 200g corn kernels or 1 large corn-on-the-cob, cooked in boiling water & kernels cut off • 250g garden peas, fresh or frozen • 150g Brussel sprouts, trimmed, cut into quarters • 3 garlic cloves, peeled, finely chopped • 50g butter, unsalted (room temp is best, however cold is fine too) • 50g plain flour • 350ml chicken stock, homemade or store bought • Sea salt, seasoning • White pepper, seasoning • Filo pastry, store bought (recommend Antoniou brand), 4-7 sheets (depending on surface covering) • Extra olive oil or evoo (extra virgin olive oil) to brush over the filo pastry • Optional: sesame seeds for topping METHOD IN COMMENTS! • #recipe #ricetta #chickenpie #dinner #eatpie #comfort #pollo #easy #simple #eatrealfood #tastesogood #tonightsdinner #eatwell

I’ve been craving a scrumptious galette for days Ingredients: 1 @bobsredmill mill GF pizza kit 1 leek, steam, boiled or sautéed 1 @kitehillfoods Hill almond ricotta 5-10 cloves of garlic, chopped 1 small bag of arugula (or spinach) 1 yellow squash, sliced 1 small jar of pimento peppers 1 bag of asparagus (steamed, blanched or roasted) 1. Prepare the GF dough per bag instructions (I use flax meal instead of chicken eggs). Sometimes I’d like adding rosemary or Italian seasoning so that the dough has another layer flavor. 2. With rolling pin spread over a baking sheet liner as if you were making thin crust pizza (I use reusable ones, no need for oil if you’re SOS) 3. Spread the almond ricotta onto the thin dough, skip the edges 4. Sprinkle garlic over ricotta 5. Spread leeks. I find that flavor and texture might be highly improved if you sauté the leaks first. 6. Add arugula 7. Layer slices of yellow squash 7. Then asparagus 8. Then add pimento peppers 9. Folded over the edges of the dough, even if it looks rustic, that’s part of the beauty of this dish. 10. Have you tried sweet potato noodles? You can find them at most Asian markets. They’re just sweet potato starch and water. I recently had these cards made up for a tabling event with one of my corporate clients, where employees had the opportunity to stop by and get a visual example of what a microbiome and longevity optimizing meal would look like. There’s really no magic to it, just lots of colorful plant based fiber, which equals fuel for your beneficial microbes to thrive and produce short chain fatty acids. These SFAs, such as butyrate and propionate will help keep inflammation down in the body. As we get older this helps tremendously since we (women especially) become more insulin resistant, which drives blood sugar up and causes an inflammatory cascade. Recipe of the week in celebration of our thriving garden that is already providing so beautifully for our family! ✨️Caprese Asparagus✨️ Medium-thick Asparagus, halved or quartered cherry or grape tomatoes, fresh basil, olive oil, and salt and pepper! I also added some amazing local raw goat mozzarella. Line one side of a sheet pan with the asparagus and the other side with the tomatoes, making sure they're evenly spread out and not piled on top of each other. Drizzle with olive oil and add salt and pepper to taste. Roast for 20 minutes at 400° At 5 minutes left, add most of the basil on top of both the asparagus and tomatoes. If adding cheese, add on top of the asparagus and continue roasting. Transfer to serving dish, covering the asparagus with the tomatoes, and adding the rest of the fresh basil. #porkbelly for dinner!!! 🥩 Love it😍😍 I had too many calories today 🫢 but won’t lose my sleep about it 🤷‍♀️ The reason was that the family had a roast chicken (whole) and had too much from it for kind of “snack”, before my main meal for dinner (the pork) The real calories are even more as I kept going to the oven and snipping chicken w/o measuring it 😬 Hey Ho! Sunday: This can be the end of last week. This can be the start of a new week. This can be a rest day. This can be a workout day. I love a slow Sunday wake-up coffee. I love a sweaty Sunday workout, I love preparing a Sunday dinner, and thinking about the meals ahead. My church includes reflecting on the week before, it includes preparing for the week ahead.
