Olly’s Farm began when Olly Nolan bought a house with some land in the Dublin Mountains, close to the County Wicklow border. With sustainability and self-sufficiency at the core of his journey, he set up his little farm as an organic smallholding and is now producing nearly all of his own organic chemical-free food, from beef, pork & bacon to eggs, dairy, fruit and veg. He hadn’t intended to start a honey business. Indeed, when he moved into the smallholding, he had only been beekeeping for about a month and had only planned on keeping a couple of hives for his own use. But very soon he had lots of people looking for honey and in 2016 with around 12 beehives decided to turn it into a business that now maintains over 280 beehives. All Olly’s Farm honey is 100% raw, local Irish honey straight from his beehives, he doesn’t buy or sell any other beekeepers’ honey. Every jar produced is fully traceable back to the apiary it came from. When honey from an apiary runs out it’s gone until the next harvest. All his raw Irish honey is honey that has had minimal processing and is not pasteurised in any way. The honey is extracted from the frames and cold-filtered. The raw honey is never heated to make it pass through fine filters or to turn it into runny honey. As a result, Olly’s honey crystalizes naturally and retains the taste and goodness of the scenic locations of the apiaries. Nature, biodiversity and the environment are a big part of what happens on Olly’s Farm, as a result, he was named one of the first Farming For Nature ambassadors. Jiminy Eco Toys is an eco-specialist toy company, retailing and distributing the earth-kindest toys across Ireland & the UK. Based in Wicklow, having moved home after lived & worked in the UK, London & Kent, for many years. Sinead makes individual handmade ceramic bowls, vases, lighting & other interior accessories. Each piece is a unique item perfect for a gift to a loved one or yourself. Predominantly Sinead uses two different clays – porcelain & white earthenware. These collections focus on simple forms of cylinders, bowls and eggs shapes. Her largest collection is the tea light shells. Using either porcelain or white earthenware to form small bowls evoking the fragility of eggshells and the properties of each material achieve a different finish. The porcelain collection, in turn, is kept very simple by using the beauty of the pure porcelain, and to benefit from its strength and translucent properties. Kinsale Mead Co was founded by Kate and Denis Dempsey in 2016 to rediscover the ancient art of mead making and to create a delicious, refreshing new Irish drink. They lovingly hand-craft each batch with care and passion and source the best natural ingredients. They make their meads at their new meadery in Kinsale, the first in Ireland in many years. The inspiration for their meads comes from sourcing natural ingredients from the local environment as well as reflecting the rich tapestry of trading and maritime history in Kinsale and its beautiful location in West Cork at the start of the Wild Atlantic Way. Their honey comes from Spain along traditional trade routes to Kinsale, particularly the orange blossom honey in their Atlantic Dry Mead. Their Wild Red Mead is a melomel mead type, made from solid fruit and natural fruit concentrate including Wexford blackcurrants. They developed their process from a blend of ancient recipes and modern techniques. They mix the honey and fruit with Inishshannon water and then sit back to let nature and time turn it into their delicious mead. Beara Bitters was founded by two female entrepreneurs, born from their shared love of the Irish land, combined with the richness of the seasonal flavours available. We are delighted to welcome this wonderful Irish Brand to our Summer Pop-up next week - Mink by Martha Hegarty - is a collection of enamel pins and prints based on pop culture and general curiosities. Martha started Mink with the aim of having a project that was completely in her own style and purely for the fun of creating. She wanted to make things she liked and like to wear so settled on enamel pins as wearable pictures that have a surprising amount of possibility and versatility. Martha's background is in art history and set design for theatre, so concept and presentation are at the heart of the business in all its mediums.
