Pheasant ham~black medlar brown sauce~potato cooked in honey fungus garum~sea vegetables Salty sweet just cooked so still moist pheasant ham mixed with lightly pickled sea aster. Then we have the potato cooked in honey fungus garum (see previous post for more indepth) which gives it an almost almondy kick which is sat ontop of a sea beet sauerkraut and topped with pickled sea purslane. Then there's a curd made of wild fennel at the top and a black medlar brown sauce where we've introduce the maillards reaction to the medlars to add some umami richness to it, then topped that with alexanders pollen. So first flavours are almost like a funky bakewell tart with the salty pheasant ham and sea vegetables coming through followed by the aniseed from the fennel and perfumed celery from the alexanders to finish, rich but clean eating. #theforagingchef #thestaffcanteen #pheasant #seavegetables #potato #garum #hashbrowns #ham #medlar #gastronomy #gourmet #cambridgefood #Cambridge #cambridgeeats #popups #creativewilddining

Невероятно мясной вкус 🥩 ‼️СЕКРЕТ картофель для теста лучше запекать , что бы избежать лишней влаги , почему ? Из-за лишней влаги придется добавлять больше муки, что сделает ньокки менее нежными 💢

Hen of the woods caramel & miso parfait~hogweed seeds & apple jelly~damson vinegar In the base there's apple balls compressed in mirin then dressed in a damson vinegar syrup. Then we have a ball of the hen of the woods and miso parfait which is sweet but also packed full of rich salty umami goodness. This is then filled with the apple & hogweed seed jelly. Fried cassava, caponata, red pepper jam, pickle pepper, creole oil Still testing dishes for @antiguaandbarbuda and @antiguabarbudarestaurantweek and I'm increasingly more exited the closer it gets! The aubergine, or as we call it eggplant or choba, is a part of our national Sunday morning breakfast. It was not until I was developing this dish that I realised how similar it is to caponata, a sicilian fried eggplant dish. The highlight of this dish, however, is neither cassava or eggplant, but it is the sweet red peppers used in the creole oil, caponata, jam, and pickle. I have always had an affinity for all things pepper but I must admit to have had a biased for those higher on the scoville scale. Maturity is me coming to grips with the fact that not everything needs to set my tongue on fire. Either that or the fact that my stomach just can't handle spicy food the way it used to. Approaching my mid 40's is not a myth 🤷🏾‍♂️
