3 YEARS LATER Today 3 years ago I started Fallobst. Amazing how quickly time goes by. I still remember the days working as a full time chef and working on my business late into the night after that. Making and designing labels, coming up with product ideas, calculating nutrition labels, making connections with farmers and producers, ordering, cooking / baking and getting my small stall ready for the weekend markets. Starting a business from scratch with only a few dollars was new and unpredictable.Putting yourself, your idea and passion out there, is always a bit scary and only people starting out can understand. Three years later, being completely self employed, I can say I’m so glad I tried it and gave it a go. I wouldn’t be here without the amazing support of friends, family, work colleagues and of course my loyal customers. I’m incredibly grateful for all the support I have received and made my dream come true. Along the way I can proudly say i’ve not only managed to save a significant amount of second grade fruit and veg from unnecessarily going to waste, but also raised awareness and new interest regarding food waste and will continue to do this. New discoveries are a scarcity, largely there is very little that has not been done before leaving us to reinvent the wheel. While this may sound initially unexciting, I find this to be the very heart of discovery and experimentation, breaking new ground with personal expression. A unique stamp, a fingerprint of individual experience gleamed from our heritage and environment. The wilder side of a ‘Prawn Cocktail’. That beloved classic banished to the back of the cupboard, reinvigorated with locally sourced seasonal ingredients. Here I have taken the core elements of what a prawn cocktail is to me. A beautifully balanced dish of textures and flavour delivering a crisp crunch and acidic bite enveloped in an unctuous mayonnaise. This all comes together to showcase the sweetness and delicate texture of the humble prawn. A crayfish tail wrapped in pickled magnolia petals, ribbons of raw forced rhubarb and garlic mustard leaf. Garnished with a wild garlic mayonnaise style sauce and whole claws packed full of sweet meat. Finished with dried magnolia dust and a garlic mustard flower. Gingery sweet pickle flavour delivered by the magnolia complemented by the floral sweet acidity in raw rhubarb. While garlic mustard can be bitter, this is hidden by the pickle, leaving the milder garlic vegetal flavour to come through. Served as a verrine or rolled and plated. Things I’ve learned this week - cucumbers are dramatic! I perhaps got a bit cocky and put my lemon cucumbers in my grow house and well it’s still quite cold and they have had a hissy fit and let’s just say I need to start again 😂🫣 I’ve also learned slugs are very determined and will try their utmost to eat whatever you plant - so we have mixed lime into the soil now and put roofing felt around the brassicas 🤷♀️ if anyone has any good tips do let me know! But oh I love our allotment and I’ve also found a new love for my own garden. I spent a full afternoon in my own garden moving things around and went slightly Monty Don with where I wanted things planting - I had plant pots in various positions which is very new for me. Usually I just shove plants in Back on the allotment we now have all our brassicas in for now and I’ve put in beetroot and radish as well. Peas hopefully later in the week and some wooden frames are being built to cover the beds up. What you see is just a temporary fix until they are built. A damp, cool start to the day🥲 each morning I await springs arrival proper and am disappointed, though it is supposed to get warmer from this weekend. We seem to have been lucky with seedlings . Treble fleecing them each night has kept them warm enough to survive and continue to grow. We are pleased with how they are looking 😀 all of us growers will breathe a huge sigh of relief when the last frost has past. This week has seen more clearing, finding a little newt amongst the watercress. Kale and kalette beds cleared opening the plot right up.
