Ribeye Steak with Loaded Mashed Potatoes Ingredients: 2 ribeye steaks 4 large potatoes, peeled and cubed 1/2 cup sour cream 1/4 cup milk 4 tablespoons butter 1 cup shredded cheddar cheese 4 slices bacon, cooked and crumbled 2 green onions, thinly sliced Salt and pepper to taste Directions: Preheat oven to 400°F (200°C). Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well. In a large bowl, mash the cooked potatoes with sour cream, milk, and butter until smooth and creamy. Season with salt and pepper to taste. Stir in half of the shredded cheddar cheese, half of the crumbled bacon, and half of the sliced green onions into the mashed potatoes. Season the ribeye steaks generously with salt and pepper on both sides. Heat a grill or grill pan over medium-high heat. Grill the steaks for 4-5 minutes per side, or until desired doneness is reached. Remove the steaks from the grill and let them rest for a few minutes before serving. Serve the ribeye steaks with a generous dollop of loaded mashed potatoes on the side, garnished with the remaining cheese, bacon, and green onions.
