Vegan pumpkin chocolate chip bars (toddler-approved)<br /><br />These bars are amazing!! They don't taste anything healthy but are jam packed with good for you ingredients. Excellent for toddler snack or for a grab n go for mommy! <br />Recipe:<br />1/4 cup sunflower seeds, pulsed to a fine flour<br />1/4 cup ground almonds<br />1/2 cup rolled oats flour<br />1/2 cup whole wheat flour<br />3/4 TSP baking powder<br />1/4 TSP baking soda<br />Cinnamon, cardamom, nutmeg powder to taste<br />200 gm pumpkin puree (i used Libby's 100% pure pumpkin)<br />3 tbsp coconut oil<br />1/3 cup coconut sugar (or brown sugar)<br />1/4-1/2 cup plant milk<br />1 chia egg<br />1/2 TSP ginger paste<br />1 TSP vanilla essence<br />Vegan chocolate chunks<br /><br />Mix all dry ingredients except sugar. Now add in all the wet ingredients. Mix until just combined. Pour into a greased dish, sprinkle chocolate chunks on top and bake @ 180°C for 25-30 min or until a skewer inserted in the centre comes out worth a few crumbs stuck to it. Cool, store in an air tight container in the fridge.
