Spaghetti con la Sarde
I couldn't think of a better way to kick off this Tuesday than a classic of Sicily – and honestly one of the dishes most emblematic of its rich and diverse culinary history. This light sauce features sardines and anchovy, saffron and wine-soaked raisins, toasted pine nuts, and fennel and then topped with toasted breadcrumbs. A perfect blend of Italian and Arab cuisines that dot the island.
This version includes some beautiful charred @barharborfoods sardines that are used in the sauce and served whole on top to make this an extra special dish if you love tinned fish as much as I do. It's crunchy, it's salty, it's fresh, and it's something I think of every time I see a sardine.
