𝙋𝙞𝙣𝙠 𝙍𝙞𝙘𝙚 𝙍𝙞𝙨𝙤𝙩𝙩𝙤 𝙬𝙞𝙩𝙝 𝙎𝙝𝙧𝙞𝙢𝙥𝙨, 𝙊𝙧𝙖𝙣𝙜𝙚 𝙅𝙪𝙞𝙘𝙚 𝙖𝙣𝙙 𝙋𝙞𝙣𝙠 𝙋𝙚𝙥𝙥𝙚𝙧. Risotto and oranges: my passion! Ingredients for 3: 12 spoons of raw pink rice, 2/3 oranges, 12-14 big shrimps, 2 oranges, 20g butter, 1 full spoon of ricotta, Evo oil, a wedge of an onion, vegetable stock, 1 shot of Marsala wine, Evo oil, pink pepper and salt. First place the shrimps in a pan with a little olive oil to lightly cook for 1 min. If these were Mediterranean shrimps I would not have cooked them. Chop them and place them in a bowl to marinate with the juice of half orange, salt and a little Evo oil. Chop the onion finely and place it in casserole with the butter and a little oil to sauté. Then add the pink rice and stir. After a couple of minutes pour the juice of the remaining oranges. When the liquid is shrinking add a good shot of Marsala wine, stir and start pouring in the vegetable stock as per the risotto cooking technique. When the risotto is almost done, add the spoon of ricotta and mix very well. Serve on flat dishes. Place the shrimps in the middle, sprinkle with the margination juice and finish with the crushed pink pepper. Granola alla crema Lotus, cocco e cioccolato 🍪🥥🍫 - 130 g fiocchi d’avena - 90g purea di frutta (viene molto bene con la banana) puoi usare le puree già pronte o frullare/ schiacciare la frutta fresca - 80 g cioccolato (io ho usato quello al latte) - 2 cucchiai di crema Lotus (o altra a tua scelta, per esempio alla nocciola) - 2 cucchiai cocco rapè Preriscaldiamo il forno a 180° statico. Come prima cosa riduciamo la banana in polpa e il cocco rapè. In un’altra ciotola mescoliamo i fiocchi di avena e la cioccolata in pezzi (o le gocce di cioccolata). Aggiungiamo quindi la purea e mescoliamo per bene. Aggiungiamo la crema spalmabile e amalgamiamo bene il tutto. Versiamo il composto su una teglia con carta forno. Inforniamo e mescoliamo dopo circa 15-18 minuti, girando anche la teglia del forno. Facciamo quindi cuocere altri 10-15 minuti, fino a quando sentiamo che la granola non è più bagnata. Non vi preoccupate se non è super croccante, lo diventerà una volta raffreddata, l’importante è che non sia bagnata. L’alternativa per la cottura è la friggitrice ad aria: in quel caso, però, io la cuocio in due volte, altrimenti non si asciuga bene tutta (dipende poi dalle dimensioni del cestello).
