One of my favourite meals this year has to @monorestaurant. This is a restaurant that has been making its mark in Hong Kong's fine dining scene by its distinctive brand of South American-European cuisine. The flavours here will surprise you with their intensity and richness, with plenty of strange ingredients that don't normally turn up in this part of the world. I like that restaurants like this can really push the envelope in terms of produce and introduce diners to new ingredients and new techniques. Restaurants here have access to the world's larder and are replete with all sorts of outrageously expensive and luxurious ingredients, so much so that truffle and caviar are no longer exotic or rare. So it's refreshing indeed to come to a place like this and have the chef till you about some roots and fruits from places you have not been to and cooking techniques that long predate European dominance of fine dining, all applied to the dishes in front of you. @rchaneton is a friendly and jovial presence behind the counter, busily assembling dishes and chatting to guests. J’ai toujours une passion pour les plats simples, d’enfance principalement, au régressif compulsif, et si salvateur dans des périodes de fatigue ou coup de mou. La dernière fois que l’on déjeunait ensemble, je disais à Giuliano à quel point un plat avait marqué mon enfance. Maman travaillait énormément, je n’avais pas la chance d’avoir des plats cuisinés, et la référence de mon éducation culinaire c’était celle d’une maman élevant seule son enfant, n’ayant pas la patience ni le temps de cuisiner… plutôt la culture du steak haché et Pommes de terre sautée surgelées le Dimanche midi. Heuresement ma grand-mère m’a sauvé sur ce sujet, et m’a transmis cette passion du produit, de la pêche, du terroir et les saisons. Malgré celà, le cordon bleu avait marqué mon enfance. Accompagné de coquillettes au beurre demi-sel, ce plat animait ma mémoire et mon âme d’enfant … Après un Q1 épuisant … Giuliano m’a offert une parenthèse hors du temps entre deux réunions. La gentillesse, la bienveillance, le temps pris pour se consacrer a confectionner un plat par amitié juste pour « faire plaisir et donner un peu d’émotion » … De l’amour et de la tendresse dans un plat Assis la, au passe, la plus belle table du restaurant juste pour moi, durant 2h … seul … avec du monde autour. Le bal du service en cuisine, animé par une salle pleine, et moi avec mon cordon bleu, et une grange des pères, totalement hors du temps. J’ai toujours préféré créer des moments pour ceux que j’aime, et en recevoir. Un moment c’est précieux, ca touche au cœur et ça laisse un souvenir impérissable et unique. I haven't been to Hong Kong for many years and the scene has changed dramatically in that time. There are so many new restaurants to try, and most of the ones I really want to get into are nigh on impossible to get a reservation at without an inside track. Fortunately some very well connected foodie friends have wrangled the impossible and here I am at @vea_hk, one of Hong Kong's most talked about establishments. It's hard to describe what they do here because, as clichéd as this sometimes sounds, they really are doing something quite novel. I hesitate to put a label on the type of cuisine they serve because there are so many disparate elements and influences that it would be incomplete and lazy to just describe it in one word or sentence. Instead, perhaps the best description of the restaurant might be to observe what's going on here. There's premium ingredients galore, much of it local, and every effort is made to explain and showcase this throughout the meal. There is imagination and originality in the cooking and techniques, with a heavy influence of both French and Chinese. The flavours lean Chinese, but the style of the cooking is much closer to what you might find in European fine dining. There is a clarity to what is on the plate that belies any notion of a fusion cuisine. Perhaps a syncretic style that is neither one or another but just something that has elements of both East and West. It's also excellent and delicious, so you really only need to ponder on cuisine type if you are pedantic or just need to attach a label or classification for the sake of neatly describing what you have eaten.
