Noticed a famous pizza chain has started serving pizza with satay (good artist copies, great artist steals!) but great food must share. We made Satay Burger. Disclaimer, satay was bought from nearby. We pan grilled the satay to heat them up, before laid the cheese on top. Used the peanut sauce instead of the ketchup, mustard but they will go well too. Add butter to a deep pan and melt. 2. As it’s melting, add spices to flour. 3. Once the butter is melted, add flour and whisk until all clumps are gone. 4. Slowly add in beer. Then milk. 5. Stir constantly. 6. Cook until entire pan is bubbling. Turn heat down and slowly add in cheeses. 7. Cook until all melted and flavor is combined. 8. My new fav casserole combo! 12 eggs 1 cup shredded cheese 1 cup heavy cream 1 pack bacon (cut into 1 in pieces and fry on stovetop prior to adding) Salt/Pepper Preheat Oven 350. Combine all ingredients, pour into casserole dish. Bake for 20-30 min or until center isn’t “jiggly”. Take out add more cheese on top…broil on Low for a few minutes to “brown” the cheese a bit. That is a chicken breast that I pan fried, after a quick marinade in pickle juice. I put it aside on a plate and then lightly fried an onion, mushrooms, carrot chunks, and bell pepper till slightly softened. I then added some lentils, chopped up tomatoes and tomato paste (with some herbs and spices). Once all mixed in I added some white wine and cooked it down. I added chicken stock and put the chicken back on top of the lentils, cover and cook for 1/2 hour so lentils nicely cooked through. Adding spinach till wilted and a little splash of apple cider vinegar. Top with some yogurt. Delicious!!!

Recently, one of the kids asked to start a “second breakfast” because they get too hungry and want more than snacks between 7-8am when breakfast is served and lunch around 12. So we have started planning for that, although sometimes we skip it if we’re still full, and just have a little snack instead before lunch. I’ve also started planning for a snack in the afternoon and making one big snack for everybody versus having everybody choose different snacks. And sticking to the schedule has really seemed to keep them full and also making it easier on the dishes, and it really seems to be less groceries overall even though I’m planning more meals/snacks. Yesterday I enjoyed a day of cooking for my favorite person & tried cooking Vietnamese food for the first time. 🇻🇳 I made a Ham, Potato, & 3 cheese frittata for brunch that turned out delicious. 🥔 For dinner, I made Vietnamese Lemongrass Pork Chops with homemade Nuoc Cham Dipping Sauce, homemade pickled veggies, fresh veggies, & fresh warm Jasmine rice on the side. 🥕 I pickled the daikon radish & carrots the night before. 👩🏽🍳 I processed the lemongrass stalks & made a homemade marinade the night before so the chops could suck up that marinade for 24 hours. 🤌🏽 My perfect sweet husband showered me in compliments with a full belly, it was a beautiful day. 🐻💜 #homemade
Something different for #brunch today. Tinned katsu curry mackerel from #tesco and soft cheese spread on a flour-less oats and seed bread from #dmdeutschland. Slightly overcooked asparagus.. it's #spargelzeit after all. First time trying an oats and seeds bread (usually called Das Pure in German supermarkets) and it's pretty good. It's like a dense cake with lots of fat chewy whole oats in it. It's very satiating even with just a thin slice. A simple protein and fibre rich meal... Again, it's impossible to find the UK... Tempted to make my own as the recipes look easy...
