Mac and Cheeze Simple and wonderful. I made a cheeze sauce with white beans, potatoes, carrots, cashews, miso and more. See my previous post (April 29) for the recipe. I heated 2 1/2 cups of cheeze sauce and served it over chickpea elbow noodles (8 ounces dry) for dinner. I love this comfort food dish. I got about 5 1/2 cups of mac and cheeze. It was almost Cinco De Mayo so I dove into tacos a little early—Soy curl Al Pastor topped with fresh pineapple, jalapeno and onion, and homemade queso fresco in a corn tortilla. The Al Pastor marinade combines chipotles, guajillo, and ancho peppers with lots of spices, achiote paste, pineapple, and orange. Dinner tonight is the Curried Cauliflower and Kale Bowl from the Forks Over Knives Meal Planner. I used our Hot (brown) Curry powder and the cayenne. Bob still added a Curry hot sauce to his. I also cut back on the liquids in purpose to make this less like a soup and more of a focus on the Curried veggies. Extremely good. Get wrapped up in this 😍 Forever obsessed with @plantifullybased's amazing spring rolls using our spicy kung pao asian noodles! 🔥⁠ ⁠ INGREDIENTS⁠ ⁠ Rolls⁠ ⁠ 2 units Dr. McDougall's Spicy Kung Pao⁠ 1 bell pepper thinly sliced⁠ 1/2 cucumber thinly sliced⁠ 1-2 green onions chopped⁠ 1/4 block extra firm tofu cubed⁠ 7 rice paper wrappers⁠ ⁠ Sauce⁠ ⁠ 1 1/4 tbsp peanut butter⁠ 1/2 tbsp maple syrup⁠ 1/4 cup water⁠ 1/4 tsp cayenne optional⁠ ⁠ INSTRUCTIONS⁠ ⁠ 1. Prepare the packages of noodles according to the directions.⁠ 2. Cut tofu into small cubes and pan-fry until golden brown.⁠ 3. Once the noodles are cooked, add it into the pan with the tofu and mix. Allow noodles to cool down before making roles.⁠ 4. Take a shallow dish and fill with water. Take a rice paper wrapper, place it in the water for 10-15 seconds until it becomes soft.⁠ 5. Place down on counter, add a scoop of the noodles, a few pieces of each vegetable and some green onion in the middle in a horizontal log shape.⁠ 6. Fold the 2 sides in and then the bottom up and begin to roll. Repeat until all ingredients are used.⁠ 7. Prep sauce by mixing all ingredients together in a bowl. ⁠ 8. Garnish with sesame seeds and extra green onions.

It’s always bustling with people and has become a go-to eatery for many! 1 - Spicy Egg Salad on Croissant Bun 2,3 - Veronica’s Cold Brew 4,5 - Morning’s Momo 🥟 ~ The spicy egg salad turned out not spicy at all! The eggs were just right—neither too runny nor too hard, and the croissant bun was tasty. However, there was a bit too much mayo, and the overall flavor fell short. ~ We really liked their in-house cold brew blend. Starting the day with a bitter coffee kick is our thing! ~ The chicken breakfast sausage and aged cheese momo, topped with a crispy shaved Parmesan disk and Sichuan hot oil, was surprisingly tasty. Despite our initial hesitation, the flavors didn’t disappoint. However, we felt that the dish was overpriced for the number of momo served. Our total cost was around Rs. 2,900 We’d rate the place a 7/10. Playing with Cheeze Sauce I combined several recipes and made some cheeze sauce by using up what I had in my fridge. I boiled the potatoes and carrots, but mashed the potatoes (skin on) by hand to keep them from getting too sticky. Ingredients 3 Yukon gold potatoes, diced 2 carrots, peeled, diced 1 cup Cannellini beans, drained and rinsed 1/2 cup nutritional yeast 2 T lemon juice 1 1/2 tsp garlic powder 1 1/2 tsp onion powder 1/4 cup cashew powder (or you could use cashew butter or cashews) 1 tsp miso 1/4 tsp turmeric 1 cup water (save the potato cooking water) Directions Boil potatoes and carrots until tender 10 minutes or so. If using cashews, toss those in to the pot too. SAVE THE COOKING WATER!! Set the potatoes aside to cool separately. In a food processor, put the carrots, (cashews if using whole nuts), cannellini beans, nutritional yeast, lemon juice, spices, cashew powder and miso, along with 1/2 cup of the cooking water. Pulse/blend, scraping down the sides of the food processor several times. *Mash the cooled potatoes by hand. Add the other 1/2 cup of water to the food processor along with the mashed potatoes. Blend cheeze mixture until smooth, but not too long, or the potatoes will get sticky. #Repost @chef_foodalhi with @use.repost ・・・ Some Stuffed Peppers Vibes 🍅💛 Made by @elavegan 👩‍🍳🌟 Ingredients 4 bell peppers 2 cups cooked rice of choice 1 cup textured soy protein or chickpeas 1/2 cup (light) coconut milk 1/2 cup chopped bell peppers (any color you like) 4 tbsp crushed tomatoes 1 medium-sized onion, chopped 2 cloves garlic, minced 2 tbsp soy sauce (wheat-free if GF) 1 tbsp oil (e.g. sesame oil or coconut oil) 1 tbsp peanut butter 1/2 tbsp curry powder 1/4 tsp smoked paprika salt and pepper to taste vegan cheese to taste chopped chives to taste Instructions 1) Cook your favorite rice according to packaging instructions. You will need 2 cups of cooked rice for this recipe 2) Soak 1 cup of textured soy protein (TVP) in a bowl with 1 cup of hot water (or vegetable broth) and set aside for 5-10 minutes (skip this step if you are going to use chickpeas). The TVP will begin to fluff and absorb all the liquid 3) With a knife, carefully remove the “lids” of the 4 bell peppers and also discard all the seeds 4) Heat oil in a skillet, add the chopped onion, minced garlic, the textured soy protein and fry for 4-5 minutes over medium heat 5) Add the chopped 1/2 cup bell peppers, crushed tomatoes, soy sauce, peanut butter, spices (curry, smoked paprika), salt/pepper to taste and coconut milk to the skillet and let simmer for about 5 minutes on low-medium heat. Stir occasionally 6) Now add the cooked rice and check if the mixture needs more salt/pepper/spices 7) Fill the 4 peppers with the rice/veggie mixture, add your favorite vegan cheese to taste, and cook in the oven at 190 degrees C (about 375 degrees F) for about 30-45 minutes. @thegooseandgridiron is a restaurant located in the by-lanes of Fort, whose lovely entrance will no doubt catch your eye! It specializes in European, Continental, and North Indian food and has a beautiful ambience with pretty pendant lights, adorned with wall-hangings and plants! It has an outdoor seating which we usually prefer just for the vibe, but the indoor seating is much cooler especially in the heat! They also have some live music and performances at night so don't miss out on booking this place in advance! 1 - Blueberry Cheesecake 🫐 2 - Barbecue chicken pizza 🍕 ~ The blueberry cheesecake was one of the best we've had. It was really cold, which was a plus point in the hot weather. The blueberry compote with blueberries was generously served and we'd 100% recommend this dessert! 🫶 ~ The barbecue chicken pizza was simple and tasty. It was enough for 1 person though and had a simple spread of mozzarella and bbq chicken. Our overall cost was Rs. 700. We would rate this place a 9/10. Credit where credit it due 👏🏻@themcdougallprogram I have officially been eating the starch solution way for 8 years now. I truly feel like I found the best kept “secret” to a happy, healthy, trim, fit life. I’ve read all the books (multiple times :) went through the 12 day program, got my starch solution certificate, worked with their program coach for a year, started a meal prep/private chef company in San Diego that was meals based on the starch solution, and now I teach/coach this lifestyle for a living. It blows my mind, this is what I get to do as a career 🤯 I have zero idea where my health/happiness or career would be without the McDougall program! One of my all time favorite meals, and it comes together real quick. Tostadas 😍😍 Instant pot your rice- I use 1.5 cups water for every cup of grain and I use the rice button. Tonight's rice was brown rice, arborio rice and quinoa. Toast your corn tortillas 350⁰ 10-13 min right on the rack. Heat up canned refried beans, I get the fat free ones from @aldiusa and added diced green chilies. Make homemade guacamole or buy a pre-made one. Use your favorite salsa. Creamy Miso Broccoli Soup with Spicy Chickpeas recipe Dr. Ayesha Sherzai @thebraindocs This is an easy to make, delicious soup. Posted March 28, 2024 by @thebraindocs this video has a list of ingredients only. See pictures for the list. I did my best to follow along with the video and jot down the directions. Of course, I did not follow exactly, as I don’t use oil. *I soaked 1/2 cup of cashews in boiling water for 5 minutes and set aside. *In a big soup pot, I sautéed 1/2 a diced yellow onion in some no-sodium veggie broth, then added 5 cloves pressed garlic and 1/4 tsp turmeric. I added a combination of chopped broccoli and Romesco (green) cauliflower, 4 generous cups, plus a diced carrot. After this cooked for a few minutes, I added the 5 cups of veggie broth, 2 T miso (less than recipe), 3 T nutritional yeast (more than recipe), 1 T low sodium tamari, 2 T lemon juice, 1/2 T date syrup, fresh ground pepper. I rinsed and drained a can of cannellini beans. I put half of the beans in the soup. The other half I put in my food processor with the soaked and drained cashews and a few spoonfuls of the vegie broth. I blended this until smooth, then added it to the soup. For the chickpea topping, I started with a can of rinsed and drained chickpeas, 1 T sesame seeds, 1/2 cup chopped broccoli plus a bit of diced bell pepper. I added 1 T gochujang (less than recipe), 1T sesame seeds (less than recipe) 2T low sodium tamari, 1 T date syrup and 3 T hempseed (to replace the breadcrumbs). I tossed everything in a skillet with a splash of water to prevent sticking. It took about 5 minutes to cook and sizzle. I got 8 1/2 cups of soup and about 2 cups of topper. This soup is lovely and rich. The topping adds a nice kick. I was worried 3 T of miso would be too strong, so I only added 2 T today. But I will try it with all 3 T next time (and I will try red miso). It gave the soup depth.
