Bucket List ✅ Dine at #nomacph before it closes. The restaurant of our generation. The one restaurant that has arguably (or maybe not arguably) had more global influence over the past twenty years than any other restaurant on earth. We fell into the #nomaoceanseason2024 bracket and consumed the very character of Denmark. It was an unpredictable and at times challenging four-hour meal, and my favourite courses were the paper-thin Danish squid with caramelized koji and the sencha-infused hand-dived scallop. The pairings were a bit more conservative than we predicted, but most wines were natural and hazy. Standout beverages were a sweet sake by @kunikomukai and a sour wild beer made with grape must, which was a collab between @nomacph and #brekerietbeer. Oh, and the oyster pictured above was a #trompeloeil ice cream sandwich created using one of sixty oyster moulds and finished to look like a seawater-weathered mollusk 😲 #yvrfoodie #itravelforfood #best50restaurants #nomaocean #threemichelinstars #codroe #wasabileaves

Samedi dernier a eu lieu, le premier déjeuner et dîner du Festival des Étoilés 2024 @montecarlosbm @alainducasse entouré des équipes du @lelouisxvmonaco @emmanuel_pilon avait invité pour la première fois @rogan_simon Chef britannique propriétaire du restaurant trois étoiles @lenclume. Les convives ont pu découvrir et déguster un menu où le végétal se fait primordial en toute puissance et justement condimenté du monde animal. En effet, les deux chefs ont cette même philosophie d’une cuisine engagée et responsable qui capture l’essence même des produits et surtout du terroir. Les profondes saveurs du territoire et de la terre des grands lacs anglais, de ces légumes, herbes, fruits ou fleurs cultivés dans la ferme du Chef Rogan ont fait échos aux ingrédients locaux gorgés de Méditerranée et de naturalité cuisinés par les chefs Ducasse et Pilon dans une respectueuse vivance où le produit est intensifié de sa propre fibre par des techniques de cuisson, de fermentation ou de macération. La Figue en pistou, le riz en tartare et l’huître rôti, le Crosne s’est relevé du malt et du fromage Ragstone, l’Asperge, le kiwi s’est percuté de la force du rouget ou encore le Petit pois et l’éphémère fleurs de sureau se sont intensifiés du bœuf en bouillon et tendon, le Champignon s’est adouci de l’oignon rouge en texture de la lotte et la Blette est devenue marine de la Seiche et délicatement laiteuse et fumée de l’agneau. En douceur la Rhubarbe du Yorkshire a fait face au chocolat et sarrasin. Le service en salle est celui de l’excellence et du bien-être accompagné avec vérité par @clairesonnet : humaniste de l’hospitalité. L’accord mets et vins sous la houlette du brillant @pastor_maxime avait le sens du verbe et du juste. Le Festival des Étoilés @montecarlosbm est désormais un rendez-vous incontournable et démontre que la Principauté est un place unique dans la haute gastronomie à l’international. This was the most delicious lamb I have ever eaten. And as a Greek Cypriot, a lot of lamb has been consumed over my many years of gluttony. Behold, duo of roasted Pyrenean milk lamb, baby vegetables and morel mushrooms, minted jus. I’ve tried Pyrenees lamb once before in Paris, you don’t see it a lot in the UK and that’s a shame because it is something really special. The lambs are fed only milk for 8-10 weeks, which means it is incredibly tender and melts in your mouth. If you ever see it on a menu I implore you to order it, as did the team at @rouxwatersideinnbray with me and I will forever be grateful. Not a lamb eater? Also pictured is the Anjou squab pigeon breast cooked in puff pastry, soft polenta and green asparagus, truffle sauce which my boyfriend had. Sort of like a pigeon Wellington and a superb dish as well. My friend had the red mullet cooked over Binchotan charcoal and sautéed calamari, aubergine flavoured with pandan leaf and lapsang souchong tea, bouillabaisse sauce which is also pictured. We paired with a two delicious reds - a Pomerol and a Saint-Estephe which were both excellent. Starters at Alain Roux’s Waterside Inn at Bray @rouxwatersideinnbray ⭐️⭐️⭐️ The Waterside Inn needs no introduction. A stalwart of the British fine dining scene, it has held three Michelin stars for longer than any other restaurant outside France. In fact, they’ve had three stars longer than I’ve been alive. But it’s also ‘just’ a family restaurant, opened by Michel Roux and passed down to Alain Roux, who is still in the kitchen every day and made an appearance during our lunch. They offer an a la carte and a tasting menu option, we decided to go a la carte, which is £190 for two courses or £240 for three. I won’t lie. I spent at least a week studying to menu prior to ensure I made the right choice 😂 Before eating you are invited to have a drink on their Thames-side terrace which is gorgeous, and your order is taken whilst sipping champagne in the sun (if you are lucky). Pre-starters of smoked eel and pea set us on our culinary journey. I started with the langoustine soufflé served with a cassolette of langoustines scented with truffles. This was beautifully crafted and technically perfect but the flavour of the soufflé wasn’t as to my taste as I’d hoped. The cassolette however was right up my street. Boyfriend had the pan fried foie gras “Crécy” style, sweet and sour jus with mustard seeds which he absolutely loved. Foie gras is not for everyone but if you are a fan, it doesn’t get much better than this. We enjoyed a beautiful bottle of Mersault with the dishes, which was all kinds of delicious and complimented the dishes perfectly. ⭐️⭐️⭐️ Disfrutar, Barcelona Let me share the experience of the most exquisite dinner I’ve ever had😮 Which took place a week ago at the three-star restaurant @disfrutarbcn in Barcelona. The atmosphere was nothing short of magical—every staff member, from the chefs who warmly greeted us to the highly knowledgeable and ever-smiling sommelier, made us feel incredibly welcome. The highlight, of course, was the food. We were treated to a remarkable 32-course menu that dazzled us with its variety of textures and aromas. Each dish was a revelation, especially unique concoctions like vodka infused with truffle and deep-fried panchino filled with cold caviar and butter—a combination that was simply unforgettable. The meal featured continuous surprises, including a gelatinous macaroni and their famous ‚olive explosion,‘ which burst with flavor on the palate. I could continue for hours! 🎉 This evening was a culinary journey that I am eager to share with the world. I’m profoundly grateful for this unparalleled dining experience and find it hard to imagine anything surpassing it. By the way, the wine list was exceptionally well-curated and reasonably priced—a real highlight. Dessert time… Blessed to enjoy an exquisite meal at Alinea in Chicago. Chef Isaac worked earlier that day and prepared several of the courses we devoured. A few months ago I had the pleasure of dining at Atelier Crenn. Atelier Crenn is a 3 Michelin star restaurant in San Francisco ran by Chef @dominique.Crenn alongside Chef #juancontreras one of the great patisserie chefs in the United States. Chef Crenn boasts many awards including being named best female Chef in 2016 and as recent as 2023 was number 37 on the top 100 chefs in the world. In so few words this was the best dining experience of my life so far. This was also my first Michelin restaurant and it was beyond description. All of my amazing servers, sommeliers, and the maitre de were so welcoming and professional. And on my birthday too it promised to go above and beyond. A few weeks prior to dining at Atelier Crenn I lost my father to liver cancer, a handful of days later I was down for a week with the flu, followed shortly by my beloved pet bird passing. Chef Crenn was heavily influenced by her parents, but particularly her father. The restaurant is, after all, named after him. So this dining experience was particularly poignant for me. To enjoy a meal and dining from someone who is speaking to you from love of their father while I was grieving my own. It was therapeutic. After flopping around in my chair in ecstasy for three and a half hours, I was invited to come back to the kitchen and meet the staff. I knew that Chef Crenn was out of the country at the time, but I had politely asked if Chef Contreras was in to which I was told he was. So getting to meet the kitchen staff was one thing, but getting to meet Chef Contreras and shake his hand was a highlight of my year (as you can tell by my stupid grin). I got a walk through of Bar Crenn as well, blown away by the ambiance. Then we stepped outside and went home. So a special thank you to everyone from the bottom of my heart to the tip of my tongue who worked that night, who poured our wine, placed our forks, plated our food, and gave me an experience I will remember for the rest of my life. And helped me heal, helped me grieve, helped me laugh.
