What a weekend! We had huge fun with friends for Eurovision - a brilliant joint effort ‘Euro-buffet’ featuring sausage rolls 🇬🇧, quiche Lorraine 🇫🇷, albondigas 🇪🇸, antipasti 🇮🇹, baked halloumi 🇨🇾, Greek salad 🇬🇷, Kladdkaka 🇸🇪, sauerkraut 🇩🇪, falafels 🇮🇱, Polish chocolates 🇵🇱, Irish crisps 🇮🇪…. We got very competitive with the sweepstake - the children all stayed up far too late and had a blast! If this wasn’t enough, we spent the afternoon prior manning the cake stall at the village fête. A glorious afternoon but quite exhausting - days of baking, a very busy stall but we sold out and hopefully made lots of money for our wonderful village church. Today was a quieter affair thankfully, though there was a trip to Cheltenham for my husband and son for a performance in the Cheltenham Festival of Performing Arts. First barbecue of the year and we’re still in the garden at 9pm. In May! I made my favourite chicken wing recipe by @lickedspoon from her book Notes from a Small Kitchen Island. I cooked them in the Aga as normal and we then put them on the bbq for a few minutes. So sticky and delicious. Also found a red pepper and a courgette at the back of the fridge drawer and we grilled wedges of pointed spring cabbage alongside. Too greedy for an artful snap but gosh this lamb was delicious. From the brilliant @dianahenryfood ‘From the Oven to the Table’, this pecorino and basil infused lamb was utterly delicious. Tomatoes, red onions and waxy potatoes all cooked in the roasting tin with the meat. Just loved the flavours here. My husband always likes additional greens, hence the roasted baby courgettes and slightly out of place peas! Anyway - I can’t wait to do this again. We’d been hoping to spend the weekend out in the garden but I just can’t muster enthusiasm when it is so chilly. Instead, a freezer-raid led to this rather wintry game pie. Mixed game cooked slowly with leeks, cider and sage. A little crème fraïche stirred through at the end. Puff pastry top. New potatoes roasted with rosemary from the garden. Allow the cheese and pastry to come to room temperature then unroll the pastry and use to line the Portmeirion for AGA White Baking Tray. Prick with a fork and place in the refrigerator to chill. Place the cheese on a dish on a piece of kitchen paper at the back of the AGA to warm. 2. Bring 2 litres of water to the boil on the boiling plate and add the salt. Drop in the asparagus tips and bring back to the boil, uncovered. Cook for two minutes once the water has come back to the boil. Drain and refresh by plunging into plenty of cold water. Drain again and pat dry with kitchen paper. 3. Spread the Boursin cheese all over the pastry base and then arrange the asparagus tips in rows on top. 4. Place the eggs, cream in a bowl with a pinch of salt and two of white pepper. Whisk to combine and then pour over the asparagus. 5. Bake directly on the floor of the roasting oven for 20-25 minutes, turning the tray after 15 minutes. If you have an AGA eR3 Series, AGA Total Control or AGA eR7 Series, add the floor grid underneath when you turn the tray. Rhubarb crumble and custard trifle. A rather delicious way to end a lovely dinner with friends last night. The sort of recipe that I made up as I went along, using various sources for inspiration. I started by baking some rhubarb until soft but not mushy. I poured off the juices and added a good slosh of Amaretto. I dipped some sliced madeleines into the pink liquid and then layered up with the rhubarb, some shop-bought fresh custard (don’t tell anyone 🤫), another layer of soaked madeleines, more custard and then whipped cream and crunchy nuggets of oven-baked oaty crumble topping. Very easy but very delicious! Anything with rhubarb gets my vote - being in a house full of boys, I do love a bit of pink! Inspired by a recent post @goodfoodeveryday goodfoodeveryday, I made this super simple dish of chargrilled asparagus and courgettes for supper last night. Dressed with a little balsamic and olive oil and topped with shavings of Parmesan and pine nuts, it was a delicious girly supper for one! If I’d been cooking for more, I would have served as a side dish to some simple fish or grilled meat. English asparagus season is my favourite!!
