On a day as utterly miserable as today, soup was very welcome as a comforting lunch. I raided the fridge and found a few tomatoes, half a brown onion, half a red onion, three quarters of a courgette and a carrot. I roasted them for half an hour then simmered in a pan for several minutes with some M&S bone broth (it comes frozen, in small discs and you add to water). Seared scallops with cauliflower purée. Something special for Saturday dinner 😃 (recipe 👇) 4 serving(s) 8 Fresh Hokkaido scallops PURÉE 300g Cauliflower (Washed and strain) 100g butter 200ml heavy cream SALSA 15 Roma tomatoes 1/2 Spanish onion, finely diced 1 garlic clove, grated Zest of 1 lime 2 tbsp lime juice 4 tbsp coriander, finely chopped 1/2 tsp Shichimi powder (chilli powder) 1/2 dl olive oil Salt and pepper to taste CAULIFLOWER PURÉE Cut the cauliflower into florets or bite size pieces. Heat the butter until melted, add the cauliflower and sauté until slightly golden.Add the cream. Bring to boil and simmer for 10 minutes, stirring occasionally until cooked. Scoop out the cauliflower into a blender and blend until nice and smooth, add some of the butter and cream mixture to make the puree smooth, pass it through a sieve, season. Salsa Fresca Score the tomatoes with a sharp knife. In a pot of boiling water, blanch the tomatoes for 8-10 secs. Take out and transfer to a container with a tight sealed lid and leave it to continue cooking for 10 minutes in the container. Take out and peel the skin off. Cut each tomato in half crosswise, remove and discard the seeds. Finely dice the flesh. Add the remaining ingredients and season to taste TO PLATE UP Season the scallops with salt. In a very hot pan, add some oil and sear the scallops until golden brown, and turn over. Turn off the heat and add a small knob of butter. Continue cooking for a further 1 min. Add your cauliflower purée on the plate as desired. Then add salsa around the purée.
