Ever wondered what ‘bird friendly coffee’ actually means?! 🐦 Well.... essentially its coffee grown on farms that use a combination of foliage cover, tree height and biodiversity to create wildlife rich habitats for either migratory or local birds. Traditionally, coffee in Colombia tends to be bird friendly as we farm ‘shade-grown coffee’ - ie the coffee beans are protected from being burnt by the sun, by shade layers provided by trees growing overhead. Also known as - Hombre Araña (spider man!) and Paramuna (the lady of the Páramo) 🤍 These gorgeous mules have been bred on our farm specifically to transport you across our +100 year old mule paths which were created to travel up and down hills, through coffee fields, past cattle and around untouched jungle pre and post harvest. . . . We often receive the simple question - ‘but can’t we drive’ 😂!? Once you see the farm you will understand why we laugh.... As far as the eye can see... The beautiful views @cafetaldelatrinidad where everything you see in the mid and near mountain ranges were covered with coffee trees.... This was one of the largest coffee estates in colombia. It was spectacular! Three factories filled with the latest machinery imported from Europe and the US; hundreds of local workers responsible for maintaining the crops; then there were the pickers; the sorters; the washers; and the list goes on.... This place was booming: the energy was palpable. And then.... during the 80s and the 90s... as the Brazilian coffee market started to flood global markets; and Colombia started to become increasingly dangerous; these beautiful lands were transformed... The coffee crops were ripped out; grass was planted; cattle brought in to graze; and the coffee factories laid to rest.... Decades later we are starting to rebuild this beautiful farm piece by piece. Introducing our first cocoa pod @cafetaldelatrinidad 🥳🥳🥳!!! And no we are sadly not divulging into cocoa farming as well 😂 (we have enough on our plates as it is!) BUT... we are experimenting with a few new crops and how they might be integrated into the experience we are offering @cafetaldelatrinidad . Each cacao pod contains between 30-50 seeds which - when ripe (the pod turns yellow in colour) - are cracked open with a machete and the seeds are removed for sweating (a process that is crucial for quality); fermented (where they are covered with mats or banana leaves for several days) and drying (typically in the sunshine) . During the fermentation process the seeds turn from purple to the common brown colour we know to be the chocolate in our homes... It takes about 400 of these seeds (10 poss!) to produce a 1lb chocolate bar. Saddling up for the week ahead 🐎. Lockdown continues in Colombia; but that doesn’t stop daily life at the farm where all our workers live on site. This week our recent harvest is almost fully dry and humidity levels are low enough to send the first batches up to Bogota 🙌 - first for milling and then for roasting; the rigorous and very manual weeding of coffee fields is about to begin 🙄💪; we have a new member of the team starting at the farm - he and his wife are moving into their new abode (post 14 day quarantine) this week (!); we are expecting a few births 🐮; and our amazing local carpenter is about to start developing some of the ancient stone paths which have certainly been lovingly used over the decades. Let’s talk about coffee ‘roasted at origin’ for a moment and why as a farm that exported green coffee for over a century - we are so emphatic about the subject.... First things first: coffee producing countries will always produce and export green coffee; and coffee consuming countries will always buy and roast. This model won’t change: it’s an ingrained economy that does make sense and does ensure (in some cases) a necessary freshness for the beans. BUT... with modern logistical capabilities (shorter 🚢 times and ✈️ for the really good stuff); packaging advances to preserve freshness 📦 ; and an increasing demand for ethically sourced coffee - we are firm believers that there absolutely is a market for roasted at origin coffee - and that the beans can be just as and in some cases even better then the traditionally sourced stuff 😜! Like the world of wine - the coffee world can be equally as snobby and totally daunting 🙄 (there.... we’ve said it 😜)! There is of course a place for EVERYTHING and we love nothing more than geeking out and learning from the best roasters and baristas as they carefully weigh out the coffee to the 0.1 of a gram... But who doesn’t also really love a good macchiato or delicious French press !? If we aren’t at home with our Chemex - or at a speciality coffee shop with some delicious varietals - we always opt for a macchiato or French press which almost without fail provides an excellent tasty hit of our drug of choice 😜😜! For those who love the French press (center stage) make sure you opt for the stronger roasted coffees of this world which packs a good punch..... the lightly roasted and expensive heirloom varietals are of course superb but will taste a little like muddy water in this incredible piece of equipment 🙄. We miss these days... when we would pack up on a Friday afternoon, escape the city, and head down to the farm in time for a pre sunset ride with guests... 🐎 We’ve bred about 20 horses specifically for @cafetaldelatrinidad; and 6 stunning mules for those who prefer a more steady hoof underfoot. Our paths are old-school and are the former mule paths that would transport tones of coffee down the mountain to the factory for processing. We’ve developed more specialized coffee processes these days....but we still use the same paths and beautiful mules to transport our coffee! Tucked away in the Andean Mountains - a 2 hour drive 🚗 from Bogota in a tropical cloud forest - is a beautiful Colombian secret... One of Colombia’s oldest coffee farms that was once one of the largest coffee estates in the country - exporting to London, New York, Barcelona and beyond.... The farm suffered during the 70s - and was abandoned in the 80s, 90s and early 00’s due to the conflict that embroiled this beautiful landscape. For the past 3 years the family (5th generation) has been working hard to restore the farm to its former glory.... It’s been intense: replanting hectares of speciality coffee (all of which - bar 3 hectares - were removed); totally gutting and restoring the historic home; gutting and rebuilding the historic coffee factory (stage right); salvaging the old machinery; bringing in new processing machinery; learning forgotten planting and cultivation methods; learning to process again; learning new farming methods and how to control - and protect - the unwieldy but beautiful jungle which calls this farm ‘home’. And now a pandemic has put our plans on hold: like everyone around the world it has stopped us in our tracks.... But this farm has been waiting for ‘its time’ for 30 years and so - it will just have to wait some more.... Hasta pronto ! We will be waiting for you with a coffee in hand! With that smile it must almost be time for THE HARVEST to begin!! ☀️ A few more weeks before the team - who live on the farm - start a love intensive process of harvesting (by hand!) our beautiful coffee trees... And what a process it is: by hand; up and down the Colombian Andean mountains; carefully hand-picking the ripe coffee beans to ensure they aren’t bruised in the process.... and returning time and time again (usually 5-6 times!) to the same tree to collect the remaining beans all of which ripen at different intervals.... “Why on earth would you do that?” you might ask yourself... The sun setting on another day in beautiful isolation.... Letting go and stopping for a moment is always incredibly difficult to begin with....the mind is racing; nervous for what lies ahead; what do you mean there’s no office; shouldn’t we be getting ahead of the game; shouldn’t we be finding more clients... But with time... day by day....slowly.... the mind starts to relax.... it suddenly realizes it has time to think; to process; to decide what it really wants; to start thinking creatively... It finds distance from the busying and humdrum of the day to day - and is able to clearly set out what’s really important to it. Don’t get us wrong - we are certainly are living in a difficult world - so much uncertainly has been suddenly thrown on our path.... But like it or not we are being forced to ‘stop’.... and with all the problems that brings - we are also being blessed with a moment to reflect and reorientate. We can’t wait to open our doors when the world starts to run again.
