Eje Cafetero pt 6 y última Ya con esta me despido 🥹 Filandia y Finca El Ocaso Tiene unas calles súper coloridas, las típicas quindianas y su gente bien acogedora. Luego fui a Salento a la Finca el Ocaso a un tour del café, aprendimos todo sobre un buen café; pero lo mejor de este tour fue que lo hice con un grupo de italianos y lo recibí en dos idiomas jajaja. Nos mandaron a cosechar cinque grani rosso (cinco granos rojos), en este punto aprendí el azúcar natural que contiene un grano de café. Todo es una experiencia 💯☕️ Se acaba el viaje y mi mayor satisfacción fue haber cumplido un sueño, ver de primera mano paisajes soñados, encuentros maravillosos con la naturaleza y en el medio del frío de la montaña poder encontrarse con el calor de la gente. Our morning ritual…. Rotating the drying coffee beans on our African styled bamboo beds 🤟 This is a daily process which we undertake EVERY SINGLE DAY for a month to dry out and reduce the humidity in our beans to 17% 🙌 Some days - early on in the drying process - Eusebio does this twice daily ! As the farm is in such a humid location we have to put the beans in a specially designed drying machine at the end of this process for a few brief hours - to reduce humidity further to 14% so that we can pack them in moisture-less bags and send them up to Bogota for roasting with one of our amazing local partners! A labour of love ? Certainly ! Do we do it with all the ‘cariño’ in the world? Of course ! May we introduce you to the muscle and hard work around the farm 👊. They are the transport bringing down your coffee from the fields. They take up medical supplies to the cattle. They support us when we need to transport a piece of bamboo or new eucalyptus trees for planting (we recently planted 1500 eucalyptus trees!) They are the real muscle and force @cafetaldelatrinidad and we are entirely grateful. We pay with excellent grass and the ocasional ‘agua panela’ (sugary water but an even better colombian version!). QOTD: What’s a new hobby you’ve picked up? 🔭 The emotional struggle, anxiety, familial pressures and Karina’s demons that she battles and battles were difficult and heavy and hits you hard. I’ve not had all of Karina’s struggles in my life, but I remember the struggles I did have and the stumbles and falls I’d taken to learn to stand on my own… not unlike Karina. I had many breakdowns during the book and while some of them was in pain, some of them was also in overwhelm during the moments of support and unconditional love Karina receives. We are accidentally environmentally friendly 😜 due to the extraordinary terrain; inaccessible mountain ranges and the wilderness that makes up approx 40% of this beautiful farm. As far as the eye can see... The beautiful views @cafetaldelatrinidad where everything you see in the mid and near mountain ranges were covered with coffee trees.... This was one of the largest coffee estates in colombia. It was spectacular! Three factories filled with the latest machinery imported from Europe and the US; hundreds of local workers responsible for maintaining the crops; then there were the pickers; the sorters; the washers; and the list goes on.... This place was booming: the energy was palpable. And then.... during the 80s and the 90s... as the Brazilian coffee market started to flood global markets; and Colombia started to become increasingly dangerous; these beautiful lands were transformed... The coffee crops were ripped out; grass was planted; cattle brought in to graze; and the coffee factories laid to rest.... Decades later we are starting to rebuild this beautiful farm piece by piece. Introducing our first cocoa pod @cafetaldelatrinidad 🥳🥳🥳!!! And no we are sadly not divulging into cocoa farming as well 😂 (we have enough on our plates as it is!) BUT... we are experimenting with a few new crops and how they might be integrated into the experience we are offering @cafetaldelatrinidad . Each cacao pod contains between 30-50 seeds which - when ripe (the pod turns yellow in colour) - are cracked open with a machete and the seeds are removed for sweating (a process that is crucial for quality); fermented (where they are covered with mats or banana leaves for several days) and drying (typically in the sunshine) . During the fermentation process the seeds turn from purple to the common brown colour we know to be the chocolate in our homes... It takes about 400 of these seeds (10 poss!) to produce a 1lb chocolate bar. This blend has been created from the estate’s original coffee plants of Castillo and Colombia varietals. This week our recent harvest is almost fully dry and humidity levels are low enough to send the first batches up to Bogota 🙌 - first for milling and then for roasting; the rigorous and very manual weeding of coffee fields is about to begin 🙄💪; we have a new member of the team starting at the farm - he and his wife are moving into their new abode (post 14 day quarantine) this week (!); we are expecting a few births 🐮; and our amazing local carpenter is about to start developing some of the ancient stone paths which have certainly been lovingly used over the decades.
