Getting our @pei_potatoes fields ready for healthy harvest often includes crop cover. Here we see mustard crop cover helping to mitigate the need for more pesticides. Crops like mustard are natural ways of addressing pest problems. Our Island does a lot to protect top soil so as to protect growing in the future. Story time: Hi there! I guess this is like one of those posts where you introduce yourself to your new followers, but this one has a little twist. I’m a first generation Canadian. Both of my parents came from places that were experiencing difficulties including weaponized violence. When my parents brought me into this world they had certain hopes for me, and ideas for a career path to ensure a comfortable life. I followed along until I was in university. I decided law school wasn’t what I wanted after all. I wanted to cook professionally. At first my folks weren’t really on board with my plan. They worried my hands would be too tough & lose their femininity(along with a bunch of other things). I told them I didn’t care. And so, I went to culinary school and I also went further to attain a culinary degree. Later on, I also earned my certification of adult education & my masters in Education for institutional/administrative leadership. My hands are the most important tools I have in the kitchen and yes they are burnt, rough, scarred, and always nail polish free. My hands today look a lot different than they would have looked if I stayed on my predefined path, but I treasure each scar, and years of wear that my craft has gifted them with. For me it’s a symbol I see every day that affirms that I trusted my heart, that I work hard everyday building my skills, and that the right choice isn’t the easiest choice, but the most necessary. My parents definitely came around to see how happy and at home I am in this career I’ve cultivated for myself ♥️ We are a foodie family after all! Mom taught me so much. I honour her though my food. When it comes to eggplant, under the crown is best. When processing eggplant, it’s best to cut upwards to remove the part of the plant that connects to the rest of the growth. When done properly, there should be a floral effect on both the usable and compost piece. It’s spring here on the east coast of Canada, but the weather this evening is a little less than desirable. I’ve been working on this cookie recipe for about 3 years. I wanted to get the best possible textures and that crave-worthy salty/sweet balance. I first made these cookies while I was the chef of a Culinary Boot Camp program. I made these with kids aged 7-9. They were a huge hit! In the first edition they were made with walnuts and I didn’t love that. I wanted to make these nut free. The stroke of lightning hit with the swapping out the walnuts for puffed rice cereal! The puffed rice gives the cookies this incredible texture that works well with the potato chips and chocolate chips! Want my recipe for potato chip cookie sammiches? From the ugly delicious diary ➡️ Scratch-made piggies in a blanket w/ my Gochugaru onion relish! The wrapper is made with a hot water dough- very similar to a meat pie or pasty dough. Baladi is a soft, white cheese that originated in the Middle East and is popular in Lebanon. It is known as Jibneh Baladi. Alternatively, it is also called the ‘cheese of the mountains’ because it is made in high mountains all over Lebanon by the local shepherds, but we are so lucky to have it made in Canada using milk from the @dairyfarmersofcanada! One of my favourite ways to enjoy this cheese is to slice it thinly and tile it onto a plate. Then garnish the cheese with zaatar seasoning (thyme & sesame are main ingredients in the mix), pomegranate molasses, olive oil, & then some fresh parsley or mint! PEI POTATOES are such a versatile, affordable and adaptable vegetable. It’s hard to imagine a breakfast, lunch or dinner table where Prince Edward Island Potatoes wouldn’t make a welcome focus. Sichuan-Style PEI POTATO Roses Makes approximately 1 full regular muffin tray 10 PEI POTATOES (Yukon Gold is the variety I used), peeled if desired 1/2 cup sunflower oil, plus more for greasing muffin tins 1 Tbsp Sichuan peppercorns, ground (or substitute ground corriander or cumin) 6 Tbsp sesame seeds 1 Tbsp chili flakes (I used a Korean variety, but any will be suitable) 2 tsp garlic powder 1 Tbsp granulated onion 1/2 - 3/4 Tbsp Kosher salt 1 Tbsp minced ginger Line muffin tin with parchment paper and generously grease the entire tin with canola oil. Use mandolin to slice potatoes thin enough to bend. Place in a large bowl and toss with the canola oil then add spices. Place a piece of potato on the board and overlap another piece over 50 % of the potato repeat using 15-20 pieces of potato forming a line. Roll the line of potatoes up starting at one end and place in the muffin cups. Bake 375 for 10 min then cover with foil and bake for another 10-15 min. *You can use different spice combinations if you prefer. The cost of food is rising. We need to make the most of what we have in our fridge. Yesterday was brunch for lunch day at the @culinaryinstituteofcanada. One of the items was our blueberry cheesecake French toast. At the end of service we had a hotel pan of leftover French toast and a tray of leftover bread from our soup station. Rather than toss it in the compost, I wanted to show my students how important a zero waste approach is & how it can be immensely creative! We put together a blueberry cheesecake bread pudding that got a final glaze of leftover condensed milk after it came out of the oven. We sampled the edge pieces and delighted in the almost danish/cake-like finish! This bread pudding will be available at our grab and go tomorrow morning; you won’t want to miss out on this one! One of my favourite food places in world is the Sichuan province in China! I got to spend extended time over 2 visits taking place in a 2 year period. I took so many pictures and wrote so many notes of the dishes that blew my mind; writing some of my guesses as to what the ingredients might be for each dish. SICHUAN BOILED BEEF (水煮牛肉 – SHUIZHU NIUROU) Is one of my faves. To me it’s like comfort food enjoyed with multiple bowls of fragrant steamed rice. It’s a dish that is assembled in layers. Blanched Napa cabbage & Chinese leeks followed by the sauce and the beef. On the top comes a sprinkling of spices including the mouth numbing Sichuan peppercorns, fresh garlic and ground chillies. The spice topping gets a flash fry w/ hot peanut oil; the sizzle is so satisfying! Sibling life is a good time. When I share my recipes often my brother is helping making the filming happen and he’s always keeping on schedule. Something happens though when we try to be serious/profesh when we take a pic of tasting or mixing ingredients. This is @whiskedawaypei & I nearly before a collapse of laughter filming a tasting of some @boursin_canada and asparagus rolls. I’m always grateful for the silly. The blooper reels are endless and we laugh about them all of the time. I’m lucky to have a brother & I’m thankful to him for all of his support. Here’s my recipe for egg nog fudge! Egg-nog Fudge 1/2 cup butter 3/4 cup egg-nog 2 cups sugar 2 cups white chocolate chips 17-ounce jar marshmallow fluffy cream 1 tbsp vanilla extract 1/2 tsp nutmeg, grated Line a 9x9-inch pan with foil and spray with a non-stick cooking spray. In a medium saucepan, combine butter, sugar, and egg-nog. Bring to a boil. Cook until the temperature reaches 234°F on a candy thermometer. Remove from heat. Stir in white chocolate until melted. Stir in marshmallow cream, vanilla, and nutmeg, and evenly spread into prepared pan. Garnish with more grated nutmeg. BIG NEWS: I’ve been a food writer with the @peiguardian & family of newspapers over the last 13 years. It’s the place where I built my skills on writing succinct pieces featuring recipes accessible to our readers. I’ve written about so many different styles of cooking, featured a myriad of chefs, and shared Atlantic Canadian recipes sent to me by our readership. It has filled my heart with so much joy, and my time with this family of papers over the years has helped me grow into the person I am today, but I feel that now is the time to pass the torch on to an up and coming writer who deserves the same opportunity to share their lens of experience and joy for food that I have been so blessed to do. Texture! Bookmark my recipe for No Fuss Fancy lemon Blueberry loaf! No Fuss Fancy Blueberry Loaf with Lemon Glaze Chef Ilona Daniel Serves 12 For the loaf: • 1 ½ cups all-purpose flour • ¾ cup granulated sugar • ½ teaspoon salt • 2 teaspoons baking powder • 1/3 cup vegetable oil • 2 large eggs • ¾ cups ADL LACTOSE FREE milk (I’m using whole milk, but you can use 2%) • 1 tablespoon vanilla extract • 1 generous cup fresh blueberries or 1 cup frozen blueberries For the lemon glaze: • 4 tablespoons ADL LACTOSE FREE MILK • Zest of one lemon • 1 ½ cups icing sugar Instructions Preheat oven to 350º F. Line a deep 9x9 loaf/casserole dish with parchment paper. In a large bowl whisk flour, sugar, baking powder and salt, In a bowl, add vegetable oil, egg, vanilla, and ADL LACTOSE FREE milk; stir to combine. Add milk mixture to the bowl with flour and sugar then use a fork to combine. Pour the liquid mixture into the bowl with the dry ingredients and stir until the mixture is just combined. Do not over mix or your finished product will be tough and unpleasant. Pour half of the batter into the prepared pan and spread everything evenly. Sprinkle the blueberries over the batter and top with the remaining batter and spread the batter evenly so the blueberries are covered. Bake for 45 minutes or until a toothpick comes out clean when inserted into the middle of the cake. While the loaf is baking prepare the lemon glaze: Sift 1½ cups powdered sugar into a medium bowl to remove any lumps. Slowly whisk in 2 Tbsp. milk and once desired consistency is reached, stir in lemon zest. Traditionally, the Dutch Baby is served sweet with a dusting of icing sugar, berries, or stewed apples, but I think it works equally well as a savoury dish. Savoury Dutch Baby Adapted Recipe 6 tablespoons butter 3 Tbsp chives, chopped 8 large eggs, room temperature 3/4 cup 2% milk 1 cup plus 2 tablespoons all-purpose flour ½ tsp salt ½ tsp black pepper 1 Tbsp fresh thyme or 1 tsp dried thyme 3/4 cup grated Parmesan cheese Preheat oven to 425°. In a 12-in. cast-iron or other ovenproof skillet, melt butter over medium-high heat. Whisk eggs and milk in a large bowl until blended, then whisk in flour, salt, pepper, chives, and thyme. Its name comes from the Occitan dialect word “claufoti,” which means “to fill.” The dish was originally created as a simple, rustic, and frugal dessert. Its simplicity makes it perfect for a hurried brunch by baking fresh fruit, typically cherries, in it’s iconic sweet, pancake-like batter. The result is a custardy, flan-like texture with a slight crispy edge. From a technical and culinary perspective, there are several important aspects to consider when making a clafoutis: Fruit Selection: Choose fresh, ripe fruit for your clafoutis. Traditionally, cherries are used, but you can opt for other fruits like cherries, mango, roasted apples or pears, or even peaches. We finished with a 🌈!!! Today was the last day of the first rotation of the school year at the @culinaryinstituteofcanada. Group B & I have been together since September & it’s truly been such a beautiful experience of sharing, learning and growing as a group! As always, my students were a bit shy during knife skills, but we quickly evolved as a team. I’ve always believed and have practiced utilizing joy as a tool for learning. Throwback- It’s all about perspective. Imagine it: here we were getting ready to start a new year at The Culinary Institute of Canada after a 7 months of intensive renovations. We were ready to meet the changing needs of the industry at large and the demands of 21st century students. This was an exciting time of change. A few weeks before we were ready to welcome students we were testing out new technologies and equipment. It was important that we had a balance of the classics and the contemporary. Here you see us checking the new gear and testing the gas feed on our new burners. You don’t often see an angle like this or the understated yet important focus on functionality. This was an important point in the evolution of the Culinary Institute of Canada and I’m so proud of the work we are doing with our students. Funnel cake is easily within reach with @preschoice buttermilk pancake mix & @e.d.smithfoods cherry pie filling! 🧇 Pancake Mix Funnel Cake (Yield: 4x5-inch funnel cakes) Ingredients vegetable oil for frying 2 cups Buttermilk Pancake Mix 1 cup water 1/2 cup sugar 1 Tablespoon vanilla extract powdered sugar for topping Instructions Add enough oil to a heavy-bottomed skillet so there is a 1.5-inch oil depth in the pan. Heat oil to medium-high heat/350 F. Add pancake mix to a bowl and whisk in the sugar, followed by the water and vanilla. Pour the batter into a plastic sandwich baggie...(snip) Drizzle the batter into a nest. Fry for 45seconds to 1 minute. Flip the funnel cake over and fry for 30 seconds more. Bring on the biyali! Everybody knows what a bagel is, but what about a biyali? Biyalis are like a bagel without the hole, but rather a slight indent. Bialy is short for bialystoker kuchen, and is a kind of bun hailing from Białystok, Poland. The dough for biyali is best when the dough is left to age/prove overnight in the fridge; the flavour becomes more complex and the texture of the dough will have a better chew to it. The chew is essential to a good biyali. The traditional topping combo is poppy seeds and onions but I have opted to add goat’s cheese. The aim of our baking endeavours is not to burn whatever it is we are putting into the oven… right? I live for uncovering the exceptions to the rules, and the Basque cheesecake is the epitome of the culinary rabble-rouser. Basque cheesecake is a rebellious cheesecake that defies all of the Instagram rules and has become one of the most made and posted desserts on the planet over the last couple of years, despite its humble appearance. It seems as though there is a counter-culture wave that's coursing through the food spheres of social media. Perhaps we will finally be stepping away from dishes that look visually dynamic, but are questionable on the eating, and move towards something more stripped down. As humans slowly transitioned from nomadic ways of living to more static communities, farming and the cultivation of fruits and vegetables developed alongside our new way of existing. Many of the fruits and vegetables we enjoy today looked a lot different back then. Some fruits and veggies were smaller, different coloured or might even have been comprised mostly of seeds. Some of the earliest domesticated fruits are plums and grapes, which are found in different places of origin around the globe and heritages. This salad celebrates stone fruits and gifts from the grape vine. It doesn’t focus on lettuce leaves but is inspired by the Italian classic Caprese salad. In place of fresh mozzarella, I went for a parmesan mousse. It is accented by an anisette liquor and rosemary. These savory notes play really well with the sweet and tangy notes from the fruits that are the star of this salad. If you feel like playing around with the textures, you can crisp up the prosciutto in a frying pan. If you can’t find garlic scapes, you can use chives or the green portion of green onions. Centuries ago in Italy, when bread was baked only once each week, families would use leftover loaves by soaking the bread in olive oil and vinegar. The revitalized bread would be tossed with whatever was growing in the garden — and the panzanella salad was born. It’s the most delicious way to eat what’s in season now. The sauce is simple: soy sauce, oyster sauce, dark soy sauce (super important for that deep inviting colour), white pepper, & sesame oil. This sauce works as an all-purpose stir fry sauce- works awesome with beef and broccoli! 🍣Save this recipe!🍣 There is a certain timeless quality that comes with dips which resonates with people from the ancient world across the oceans, the many mountain ranges and to our very own kitchen tables today. The ritual of dipping is a practice that is as old as the written records of food and cooking are at its inception. Ancient Roman historian Cato the Elder included a recipe for olive dip in his treatise on farming, De Agricultura, first published sometime around 160 BCE. My creamy sushi party dip significantly reduces the amount of time required to prepare sushi rolls, while still evoking a similar note of the dish in a far less demanding approach. The base is made with cream cheese, flavoured with wasabi and soya sauce. The base is subsequently topped with familiar sushi ingredients. Creamy Sushi Party Dip 1 package (250g) cream cheese, softened 1 tbsp wasabi 1 tbsp soya sauce 1 tbsp vinegar 1 cup hot smoked salmon, flaked 1 avocado, cubed ½ English cucumber, made into ribbons with a peeler rolled up into pinwheels ¼ cup pickled ginger, julienne or as is ¼ cup green onion, sliced on a bias Sriracha mayo for a zig zag garnish 2 tbsp sesame seeds, toasted for garnish ¼ cup seaweed (nori), cut into strips (julienne), for garnish Rice crackers or other crispy snacks to serve Instructions In a large bowl, combine softened cream cheese with the soy sauce, wasabi, and vinegar. Spread out onto a serving dish with as much whimsy as desired. Next arrange the hot smoked salmon, avocado and cucumber ribbons, pickled ginger and green onion. To finish the dish, apply a zig zag pattern of sriracha mayo across the dip and scatter with toasted sesame seeds.
