These might not look the best, but they are bomb. Eggplant Rollatini stuffed with ricotta. When I meal prepped I sliced one eggplant longways about 1/4 inch thick. Laid them on a paper towel and sprinkled them with salt. After they sit for 20 minutes, dab with a paper towel. Toss in olive oil, spread on a baking sheet and roast for 20 minutes at 400 degrees. Let cool and store in the fridge. The next day I made the filling (but it could all be done the same day). Mix together; •1 cup Ricotta •1 clove chopped garlic •1/4 cup grated Parmesan •1/2 tsp dried oregano •1/2 tsp dried basil •1/2 tsp lemon zest •1/4 tsp red pepper flakes •salt and ground black pepper In a foil lined and sprayed 9x13 pan add 1 1/2 cups marinara sauce. Lay out the eggplant slices on a cutting board. Scoop 1 heaping tbsp of filling onto one end of each piece of eggplant, add more until the filling is gone. Then roll up each piece of eggplant and place them seam side down in the sauce. Cover with foil and bake at 425 degrees for 20 minutes. Make noodles while it’s baking. Serve over noodles, sprinkled with pine nuts. Η ώρα της ικανοποίησης έφτασε!!! Οι μαθητές του Εργαστηρίου Γεωπονίας του Ε.Ε.Ε.ΕΚ. Τρικάλων στα πλαίσια της ενότητας του μαθήματος ‘’Αναπαραγωγή φυτών με σπόρους’’ παρέλαβαν φυτά ντομάτας, πιπεριάς, μελιτζάνας και κολοκύθας με σκοπό να τα μεταφυτεύσουν και να δημιουργήσουν τον δικό τους μικρό λαχανόκηπο. Η διαδικασία ξεκίνησε τον Φεβρουάριο όπου αρχικά τα παιδιά ετοίμασαν το μίγμα σποράς και το τοποθέτησαν σε ειδικά φυτοδοχεία. Στη συνέχεια έγινε η σπορά και τα φυτοδοχεία οδηγήθηκαν στον ειδικό πάγκο ριζοβολιάς–υδρονέμωσης. Punjeni patlidžani s kuskusom Sastojci (za četiri porcije): 2 patlidžana manja tikvica manji luk 2 režnja češnjaka 5-6 cherry rajčica šalica kuskusa sol i papar maslinovo ulje grčki jogurt limun peršin Patlidžane prepolovi po dužini pa im izdubi sredinu. Sačuvaj je za nadjev. Posoli im unutrašnjost i premaži maslinovim uljem pa peci na 180°C dok ne omekšaju, 20-30 minuta. Sitno nasjeckaj luk pa ga dinstaj na malo maslinova ulja. Dodaj naribanu tikvicu, usitnjeni ostatak patlidžana, cherry rajčice razrezane na četvrtine i protisnuti češnjak. Posoli i popapri i pirjaj dok povrće ne omekša. Povrću dodaj kuskus pripremljen prema uputama na pakiranju. Promiješaj i prelij limunovim sokom.
