Back with another loaded salad for lunches this past week! Super crisp spring mix from @farmerdaves_ma, roasted red beats and parsnips from @brookfordfarm, sliced radish also from @brookfordfarm, roasted chicken breast, goat cheese, walnuts, and chopped dates all tossed in a lemony, shallot and ginger vinaigrette. I pretty much always make my own dressings for salads because it’s so easy and tastes so much better. Topped it all off with @meta_microgreens zesty mix to make me feel extra fancy. And a side of sunflower seed loaf from @woodmans.artisan.bakery fried up in a pan with a healthy dose of extra virgin olive oil. Turned beautiful @joyberryfarms mushrooms and @victoryaquaponics kale into this creamy, high protein, vegan pasta dish for lunch this week. I blended most of the kale with silken tofu, soaked cashews, nutritional yeast, and other herbs/aromatics to make a super creamy and vibrant sauce. I used @barillaus protein+ pasta to boost the protein in this dish and I honestly can’t even tell the difference from normal pasta. After tossing the pasta in the sauce, I topped it with crispy roasted chickpeas and roasted mushrooms. I picked up oyster, shiitake, chestnut, and lions mane mushrooms at the @salemnhfarmersmarket and I loved the mix of textures from the variety of mushrooms. Finished it all with lemon zest, a drizzle of extra virgin olive oil, and extra black pepper.
