Make sure to swing by at @irmaladouceberlin these days because they have a fabulous asparagus menu! Head chef Francesco Contiero created a menu that is quite unique yet classic combining French techniques with Italian ideas and German asparagus. I loved the salad with green asparagus, kiwi and hard cheese, that seemed innocent but turned out to be a spicy-hearty taste explosion. Or the vegetable soup with fermented bread sauce made from the leftover of the sourdough they get from the one and only @brotwerk. Third highlight: the rhubarb dessert with coconut ice cream and crumble. This special menu is available till the end of May during the high season of asparagus besides their regular menu. Chicken Cordon Bleu II Ingredients: 4 skinless, boneless chicken breast halves Salt and pepper to taste 4 slices Swiss cheese 4 slices cooked ham 1/2 cup all-purpose flour 1 teaspoon paprika 1/2 cup seasoned bread crumbs 1 tablespoon olive oil 1 tablespoon butter 1/2 cup chicken broth 1 cup heavy cream 2 tablespoons cornstarch 2 tablespoons cold water Directions: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish. Season chicken breasts with salt and pepper. Place a slice of Swiss cheese and a slice of ham on each chicken breast. Roll up and secure with toothpicks. In a shallow dish, mix together flour and paprika. In another dish, place bread crumbs. Dip each chicken roll in the flour mixture, then in beaten eggs, and finally roll in bread crumbs to coat evenly. Heat olive oil and butter in a large skillet over medium-high heat. Brown chicken rolls on all sides, about 5 minutes per side. Place browned chicken rolls in the prepared baking dish. In the same skillet, whisk together chicken broth and heavy cream. Bring to a boil. In a small bowl, dissolve cornstarch in cold water. Stir into the boiling cream mixture until thickened, about 1-2 minutes. Pour the sauce over the chicken rolls in the baking dish. Cover with aluminum foil and bake in the preheated oven for 25-30 minutes or until chicken is cooked through and juices run clear. Remove toothpicks before serving. Crème Brûlée 🍮🔥 Full Recipe ⬇️⬇️ Ingredients: 1 cup heavy cream 3 tablespoons white sugar 3 large egg yolks ¼ teaspoon vanilla extract 2 tablespoons white sugar, divided Directions: Preheat oven to 300°F (150°C). In a saucepan over medium heat, combine heavy cream and 3 tablespoons sugar. Stir until sugar is dissolved and cream is hot. In a bowl, whisk together egg yolks and vanilla extract. Gradually whisk in the hot cream mixture to temper the eggs. Strain the custard through a fine sieve into a pouring jug. Divide custard among 4 ramekins placed in a baking dish.
