One of the desserts @grayishungry had pinpointed for us to try was ice kachang: grass jelly and palm seeds topped with a mound of shaved ice, flavored with various liquids (ours included condensed milk, rose syrup, a green syrup that was probably pandan, and an unidentifiable yellow syrup) and then a variety of toppings. We picked the "peanut red-bean corn" version, so yes, that is actually sweetcorn adhering to the side of our dessert. Visually it was impressive, but flavor-wise it was completely lacking. Day 3 03/04/24 Penang After the amazing morning at Penang Hill, brought the folks for brunch nearby at Air Itam Hawker. Had the old school kway teow noodles 🍜 and curry mee. Finished off the lovely brunch with an ice cold ice kachang. The sarsaparilla flavor gave a sense of nostalgia, a flavor I haven’t had for years since my childhood. The red kidney beans 🫘 were done on point! Melt in the mouth goodness! Saw a sugarcane juice stall outside the market and just had to get a pack of refreshing sugary goodness! Headed off to Kek Lok Si to burn off the brunch and to get some respite from the crazy hot afternoon sun. Toured the whole complex this time round. Was astounded by the sheer size and build of The Goddess of Mercy. It was a feat of human ingenuity! Who makes the best shaved ice? Some like the grittiness of Malaysian #icekachang, some like sweetness of #italianice, some like the creaminess of Korean #bingsoo, I like the smoothness of Taiwanese #shavedice but there is an argument that Japanese #kakigori combines many of the best elements of all into a cohesive whole. The matcha with strawberry and red bean kakigori at @pap.coffee is a real contender — individual ice crystals are gritty. the syrup is sweet, the base is milky and the whole package is smooth and refined, greater than the sum of its parts.

Ice kachang, one of my favourite local desserts! It's a Singaporean and Malaysian dessert. Red beans, sweet corn, attap chee seeds, grass jelly and agar-agar jelly are all placed in a bowl and topped with a mound of shaved ice, doused in condensed milk and various coloured flavoured syrups (usually three - red, brown and green). The one at the Northpoint food court was really good! Sometimes the syrups are just plain sugar with vague flavours, but these were really good. The brown syrup is gula melaka, the red was rose syrup, and the green was sweet melon - it tasted just like the melon candies from our youth. ❤️ (My sister doesn't like the beans and corn, so she had them replaced with jelly in hers.) The third picture shows an attap chee, the seed of the nipah palm. It's a pretty incredible thing - nature's jelly! It has a mild natural sweetness and an interesting gelatinous texture, reminiscent of konnyaku jelly or konjac. And it's a highlight of ice kachang. 😊 We had that for tea and then did some shopping, and bought Popeyes for dinner. I mostly photographed it to annoy @kegzilla , since Singapore has way more American food than Perth does. 😆 I do enjoy their biscuits though. Ais kacang was originally made of only shaved ice and red beans, though the number and diversity of ingredients has since expanded. Today, ais kacang generally comes in bright colors and with various fruit cocktails and dressings. Early versions of ice kachang was first known to have been prepared around the time before and after the First World War, where the costs of ice manufacturing was becoming more affordable. The dessert underwent many different alterations and variants throughout the years, where during the 1920s, one version of it was described as shaved ice topped with rose water, lime or liquorice. A version of the dish, known as Kachang mera, was also sold during the 1930s. By the 1940s, the version of the dish described as having "shaved ice heaped into a little mountain", topped with red beans, "a Chinese grape-like fruit", syrup, and condensed or evaporated milk, similar to how it is being prepared today, began to appear. Some earlier variants of ice kachang are no longer sold, such as the ice ball version of the desert, which was popular during the 1950s and 1960s. On top of this rounded flat top ice mountain sits a nice portion of soft and sweet red beans. Thinking of the recent warm days, this looked absolutely like heaven. Under the mountain of ice shavings, there was a variety of agar and two atap seeds, pretty typical. To me, the sweetness of the dessert was perfect, not too sweet. What I liked about this Ice Kachang was the amount of ice shavings that they gave and the syrup, all well balanced while ensuring that it was not overly sweet.
