meals i didn't grow up eating pt 1 chicken mutter keema masala & paratha most of the recipes i found online didn't cater to the incredibly cheap *chicken* mince i bought. watched a couple recipe videos, one from @ranveer.brar for mutton/lamb keema. i thought tomato is necessary for a "good" keema masala recipe... but he used yoghurt (albeit for lamb), so i tried his tried and tested method of mixing ground spics in dahi/yoghurt. started by simmering the softened onions, ginger, garlic, frozen peas, and the chicken chicken mince until it had let out excess water. then put in a couple of tablespoons of my bone broth jello along with water. let it simmer and reduce before adding in the spiced yoghurt mix, more bone broth jello, and simmered until it was the right bhuna colour. because chicken is white meat, i found it harder to make it look the right colour but added a couple of teaspoons of degi mirch and it worked out just fine! growing up, i ate the paneer version of keema but that keema isn't as brown as this one that i made today. my mum also called it bhurji - like with eggs but i think the texture resembles a keema more. i would've loved to have some pav with this keema but i am still on the look out for a good pav recipe to make at home! paratha is frozen from the supermarket. one day i will learn how to make a malabari parotta at home! spices i used: whole: star anise bay leaf powder: coriander cumin cloves cinammon tiny pinch of your favourite pav bhaji masala (optional) degi mirch turmeric white pepper 👋 👩🍳 i love to cook and am open to custom, home-made and small-batch meal orders in tempe/phoenix/mesa/chandler/gilbert, az areas for families, events, or meal prep. _____________________ #keema #keemapav #keemaparota #kheemapav #chickenkheema #kheema #mutterkheema #kheemamasala #privatechef #indian #indianfood #indianstreetfood #curry #recipe #foodrecipes #chef #food #privatechefsofinstagram #chefsofinstagram #meals #protein #healthymeals #bonebroth #broth #tempe #arizona #phoenix #progress

Ingredients 🌱 Chicken kheema 🌱 Turmeric 🌱Salt 🌱 Red chilli powder 🌱Oil 🌱 Onions 🌱 Peas frozen 🌱Shepu or Dilli bhaji small quantity. 🌱Green chutney : green chillies and coriander leaves, ginger cut fine small, coriander seeds, star anise one, jeera. Grind it to a smooth paste with min water. 🌱Wash the chicken kheema properly and keep aside . 🌱 In a vessel add oil jeera and onions let it brown and add the chicken kheema along with peas stir till the chicken changes colour to white. Add little salt to it. 🌱now add shepu bhaji mix it well add green chutney and all the masala mix well and cover and cook till the water is slightly absorbed . .. A staple Pakistani meal, Aloo keema is made using minced meat (aka keema) and potatoes in a dry gravy. It can be served with roti or rice. Half kilo mince meat (beef) Two onions chopped Two tomatoes blended Two medium potatoes cubed Cooking oil 1 and half tsp Salt 1 table spoon Ginger garlic paste 1 and half tsp of red chilli powder 1 and 1/2 tsp cumin powder 1 and 1/2 tsp corriander powder 1 tsp garam masala Half tsp turmeric Fresh corriander leaves chopped Fresh green chillies chopped Take oil in a heavy sauce pan. Add some salt, onions. Saute onions till they begin to caramelize. Add the ginger garlic paste. Then add all the powdered masalas(except garam masala), saute for a bit untill they become aromatic. Be careful not to burn them. Then add the mince meat. Fry on high flame, then lower it to a simmer. Cook for 15 minutes. Then add the cubed potatoes and the blended tomatoes. Simmer untill the potatoes are tender and the oil rises to the surface of the curry. Add the garam masala, fresh corriander and fresh green chilli. Serve with white cumin rice and a good raita. No, he didn't have any horses 🏇🏻 I mean if he did I wouldn't be ranting about Gokhale Bridge and the autos everyday na!He went to the Derby for two things his love for horses and the Parsis not the betting Every Saturday morning he would go to Shivaji park for a walk and pick up the weekly copy of 'Cole' -- a small little diary like magazine that had the details of all the horses that were to run on Sunday. He used to spend all of Saturday studying that little book. Come Sunday morning, husband and wife were off to the races! When my grandparents went to meet my father's parents the very first time, my mom tells me that the first thing my grandfather said when he came home was, "Rekha! They stay at Grant Road! Thier house is 2 minutes away from Merwaan! You can have your Mawa cake every day!" For those of you who don't know Merwaan -- this is Bombay's iconic Parsi Bakery that in my view makes the best Mawa Cakes! When my father decided to move to Andheri a year after their marriage, my grandfather was worried about his daughter's Mawa cake fix. God heard his prayers and years later after I was born, Merwaan opened in Andheri. My grandfather took us to Five Gardens at Dadar Parsi Colony not for the swings but for horse riding! After the park he took us to the homes of many of his Parsi friends for an evening of brun pav and choi! My father put us in a Parsi school. Aarna goes to the same school. My father also had tons of Parsi friends! He took us for Kheema Pav on one Sunday every month at another iconic irani joint-- Ideal Corner. Just like the Zorastrian priest who told the Hindu King, that they would sweeten the community just like sugar in milk, my Parsi friends have sweetened my childhood! Also I heard my first ever cuss word from my Parsi friend's grandmother who yelled at the school bus driver every morning ," Aey tum ******* hai kya! Time pe kyun nai aata hai!" Our Muslim driver smiled back and said , " Sorry! Sorry! Aunty. Kal time pe aayega main!" He got the same greeting every morning! 😂 I leave you to guess what that cuss word was! 😂😂😂
