🇸🇬Fiz | You will be forgiven for wondering if you have lost the plot, halfway through dining at Fiz. The first few courses elevate Malay food to fine dining. You second-guess that avant-garde specimen of ayam percik on your plate — is it quail, is it chicken feet? You think you are eating tofu in your pie tee… but it is nasi lemak rice. A lollipop of lychee, ginger and laksa leaf oil melts in the mouth before you take a bite, then bursts and cleanses the palate. This is Chef Hafizzul Hashim in his experimental mode. Spices boldly announce their arrival at times, other times they shyly pull back on introduction then deliver a fiery kick at the finish. You view each dish with curiosity and excitement. Six courses in, Fiz suddenly ditches all fine dining tropes, replacing artful plating and small portions with a communal feast fit to feed twice the amount of people at our table. This is when you realise that you have been treated to snacks all along, and the main event has only just arrived. And this is also when a feeling of dread creeps into the gut. I struggle, stomach heaving, enjoying less and less of what I am tasting. Meanwhile, our friend decides her plan of attack would be to stuff one of everything into her mouth, before her stomach registers what is happening… Amidst the stupor induced by a food coma, two thoughts race through my mind — (1) the inability to fully appreciate the last few dishes (because we are too stuffed to) is a lost opportunity; (2) would it be better to use what we need in meal preparation, rather than to have to deal with leftovers and the aftermath of excesses? There is a lot of potential at Fiz — perhaps it will pay to let the law of diminishing margins work in its favour, not against it. @restaurantfiz.sg @hafizzul.hmy

Restaurant Week lunch at Permata Singapore a couple of weeks ago, featuring Nusantara cuisine. Note: the restaurant looks pretty normal if you enter from Kandahar Street but if you take a closer look it is actually located in historic former mansion Gedung Kuning (it means Yellow Building) at Kampong Gelam/Glam. A lovely building. 🤩 . Permata serves Malay/Nusantara food in a fine-dining style. What we got were dishes that certainly did not skimp on taste. Phew! . The Kerabu Mutiara salad was a tad boring and could’ve been shredded finer while my mussels came a little undercooked (the other plate was fine). Plus it was a small portion (as was the salad) but the do-over was ok (though the dish could still have been a tad warmer). The mains were executed better. And dessert was simple but oh so tasty. . Overall we had a good meal though we kinda missed the satisfaction from stuffing our faces at say a Nasi Padang or Nasi Ambeng stall. So while we might still prefer a more traditional and hearty family style meal at the end of the day, it was still some of the prettiest plating I’ve seen of Ayam Bakar Lemak Selasih in my life. 😅 Oh and we got to try their famous fermented durian sambal Tempoyak. I had to sample some even if I’m not a durian fan. 😜 It was not as pungent as I envisaged and thankfully I didn’t have durian oozing out of my pores afterwards either. . Anyways, a nice venue with tasty food that’s worth a try. You know, my 1st visit to @bijankl (Malay Fine Cuisines) was in 2016 & it was wifey whom recommended & took me there to celebrated my bday.. & then after that visit, I didn’t go back until now LOL wtf.. Not because the food is not delicious but it is simply because I forgot abt it LOL wtf.. 😅 Anyways, the last round, I remember the Obor Rusuk (Australian Curryish Beef Ribs) was super paower so this round, we ordered back the same thing & on top of that, we also ordered the Aneka Pembuka Selera, a starter pao ka liao with their Cucur Udangs, Popiahs, Pegedils & Daging Bungkus Kukus.. 😬 This one, betuil betuil shiok! & their sweet, sour & super refreshing mia Chili Paste is memang super yat laooo (Not too spicy too)! ☝🏼.. Then, for Vege, I opted for the Masak Lemak Cendawan Tiram dengan Udang, which is basically the Masakan Lemak with Mushroom & Prawn.. This one, broh, you need to ask for their Sambal Belacan & kasi add inside.. Once add jor & eat with Rice, each bite I tell you broh, is rike explosion LOL wtf..😤 I should have stop my order at the Mushroom but I have got another dish – Sotong Hitam Manis, which is Squid cooked with Chili Paste, Lemongrass & Squid Ink.. We didn’t quite enjoy this as it is sweeter in base & we didn’t really like the texture of the Sotong.. Also, with the lemak santany dishes, we got stuffed rather easily! 😅 & oh not to forget, the Beef Ribs’ portion was quite huge omg! 😱.. I wanted to order the Pandan Panna Cotta (Actually, its Pandan Puding but Anita atasfied the name of it lol wtfmuahaha.. 😬) as Anita reminded over a message to try it out.. I also wanted to order their Chocolate Durian Cake but unfortunately, we have got 0 space for any dessert LOL wtf.. Ok lah, maybe next time lah..
