While it might not be Christmas cookie season, school holidays are the perfect time for some baking fun! Every year, we have a tradition of making these delightful Christmas cookies. We head to the second-hand shops to pick up lots of items, including cookie cutters, and cookie tins which are always cheap and in perfect condition. We line the tines with a beautiful fabric to make it look divine. Cookies are not only inexpensive to make but also a heartfelt and homemade gift. Here's my recipe: Ingredients: 225g / 1 cup butter, softened 1 cup caster sugar (ordinary white sugar is okay) 1 large egg 1 1/2 tsp vanilla extract (or other flavoring, orange essence, brandy etc) 3/4 tsp baking powder 3 cups flour, plain/all-purpose Instructions: Preheat Oven to 180°C (160°C fan). Line 2 baking sheets with baking paper. Whisk butter and sugar in a large bowl until creamy. Add egg and vanilla, beat until combined and fluffy. Add flour and baking powder. Start mixing slowly, then beat until the flour is incorporated – it will be a dry dough. Dust work surface with flour, remove dough out of the bowl. Pat together then cut in half, then shape into 2 pieces. Roll out to 0.3cm (for thinner, crispier cookies) or 0.6cm (for thicker, softer cookies), sprinkling with flour under and over the dough so it doesn't stick to the bench. Use cutters to press out shapes and use a knife or spatula to transfer shapes to baking sheets. (Keep dough that doesn’t fit in the oven in the fridge). Bake for 10 minutes, until the surface is pale golden and the edges are just beginning to turn light golden. Allow cookies to cool completely on trays (they will finish cooking on the trays).
