I was born and raised in Texas and worked in Tex-Mex restaurants for years. So I know good salsa and when I moved to Kansas I found that hard to come by. I made my own and was soon after told I HAD to share with others. Flavor profile: simple ingredients provide full, fresh flavor. Tomatoes blended with perfect amounts of jalapeños, red onion, garlic, lime juice, cilantro, and salt for a well balanced salsa. I simply call it regular versus mild or medium. Every batch is slightly different and everyone's spice tolerance is different. Sometimes it's even a tad on the hot side, but never in a competition for hottest, just the best😜 How to enjoy? Pineapple Cowboy Candy Pepper Jelly Sweet and Spicy Pineapple Cowboy Candy Pepper Jelly Ingredients: 3 cups finely chopped pineapple 1 cup granulated sugar 1/2 cup apple cider vinegar 1/4 cup finely chopped red bell pepper 1/4 cup finely chopped green bell pepper 2 tablespoons finely chopped jalapeño pepper (seeds removed for less heat) 1 tablespoon powdered pectin Directions: In a large saucepan, combine chopped pineapple, granulated sugar, apple cider vinegar, red bell pepper, green bell pepper, and jalapeño pepper. Bring the mixture to a boil over medium-high heat, stirring frequently. Once boiling, reduce the heat to medium-low and let the mixture simmer for about 20-25 minutes, or until the pineapple is soft and the mixture has thickened. In a small bowl, mix the powdered pectin with a tablespoon of water to create a slurry. Stir the pectin slurry into the pineapple mixture and let it simmer for an additional 5 minutes, stirring constantly. Remove the saucepan from heat and let the pepper jelly cool slightly. Transfer the pepper jelly to sterilized jars and seal tightly. Allow the jars to cool completely before refrigerating. Welcome to Week 5, the finale of Monday Memories! Introducing this week’s winner: Katie Weber “It honestly started the way most amazing things do, with a dream. One that looked so huge yet still so attainable. We were a young family when it all started. We had five kids all under the age of seven, with the youngest being a set of newborn twins. My husband was the first to express interest in this lifestyle, knowing that we both felt passionate about the food we fed our children. He was the one who started growing food for us on the back porch of our rental duplex. The beans would grow along the patio rails and the kids bitty hands were easily able to pick and snack on it all. Even with the limited space we were able to start to learn and grow enough to make our first jars of pickles and dilly beans. It felt like such an amazing accomplishment. Within a year we had bought and moved into our family home and that allowed our passion to grow even more. Figuratively and literally! Our twins celebrated their second birthday with gifts of an asparagus patch and a strawberry patch. We cleaned out a modest patch of our front yard and grew our first real garden. We learned to pick great apples and make applesauce by talking to the women at the orchard down the road. The same orchard we both visited in our kindergarten years, run by the same family. Year after year, everything grew. The gardens, expanding well past the front yard and into a second plot in the back. The kids, growing from toddlers and young kids to these amazing teens and adults that have watched this lifestyle be nothing but beneficial for their family. Them all eager to do this when they have families of their own. Our knowledge surrounding food preservation. Adding in pressure canning, freezing and dehydrating as a means to effectively save our harvests. Our canning jar stash (haha). As word got out to our community, we started getting constant offers for free jars. Most coming from an older generation that was excited to see two kids learning this on their own. They loved to support us and love to get treats in jars in return…
Class 1 & 2 of our canning course series are complete. In week 1 we learnt some basics of the canning process and supplies. In week 2 we learnt how to can a garden vegetable sauce.
