Complete with Chandeliers, vaulted ceilings with cherubim, and a corny menu, it’s the very picture of old-school grandeur (or the 𝙞𝙙𝙚𝙖 of it). Redolent of Kuala Lumpur’s original Coliseum Cafe (now defunct), which used to make my mum’s eyes light up, Deda (since 1897) was many a native Shanghainese’s first introduction to Western fare. It was mostly old folk when I first arrived, but young people started to trickle in too. They were probably there for same reason as me: nostalgia is a powerful and affecting emotion. Sure the signature borscht here swaps beets for tomatoes (due to the difficulty of growing the former back then), but it’s as good a soup as any. Today is Muku, the final moon of the Hawaiian Lunar Cycle. Muku translates to "sever" or to "to cut". It is a good day to let go, to allow for a chapter to close. It's not ideal for healing or rejuvenation—there are other times for that kind of stuff. Muku could be a good day to clean your desk, vacuum your car, take Hi-5 to the transfer station, etcetera. Muku can also be good for hitting the brakes on a project even if it isn't finished. Traveling knocked my socks off... which is great because I like being barefoot. 🙂 Landed home in Hawai'i last week and dove right into Hilo Pride. With a suuuper successful Hilo Pride in the books, I'm now back on the Loco Moco train to nomsville. 🎉🎉🎉 Today is the Lono Moon, number 28 in the Hawaiian Lunar Cycle. Lono is the steward of agriculture and rain. Without this guy our toils are for nothing. Although his moon rises every month in Hawai'i, Lono actually splits his time between Hawai'i and Kahiki—arriving in Hawai'i when Makali'i (a.k.a. the "Pleiades") are seen to rise on the eastern horizon at the same time as when the sun dips into the western sea. Inspired by Lono the oceantrotter, today's Loco Moco borrows from traditions in CA/NV... where I essentially split *my* time (when I'm not here on Big Island). Surf n turf... a thin slice of chuck from island-raised beef, seared fast and hot, with a small piece of Ono caught in local waters. Arugula and basil from our garden. Balsamic vinaigrette. I picked up a gig in Beverly Hills helping Chef Brian Lindsey—who in turn makes absolute magic happen for the equally amazing Parisian/New Yorker Chef Yann Nury ( www.yann-nury.com ) We smashed two canapés together for a really funny and impractical Loco Moco (but DAMN was it tasty... and fancy-pants) "24ct Gold" potato, twice-baked. Tonight's moon is 'Olekūlua, a 2nd day of rest. I just got back from my swim at Kehena. It was a dolphin day!! The dolphins here are spinner dolphins so they're especially acrobatic. 🐬🌺 They always seem to be as tickled and curious about us as we are about them. Two of them swam within 3 meters of me today—close enough that when I dunked my head beneath the surface I could eavesdrop on their banter. There is some *sass* coming from that pod, lol. Today’s Loco Moco @ Hola Aloha Supper Club is a beef patty (loaded with garlic) on sauteed cabbage & eggplant, dunked in a moat of Thai borscht and topped with fried cheese curds. The beef I'm committed to is grass-fed and finished right here on Big Island in nearby Laupahoehoe. The beets and veggies were from farmers here in Puna District. The curds I made from scratch using locally produced cowsmilk. And the herbs are from the garden I'm tending! What's my priority this month? Last night was the Hilo Moon—Day One of the Hawaiian Lunar Month, Ka'aona. During this cycle I'm challenging myself to create a different Loco Moco every day. Usually, Loco Mocos are a beef burger patty and a fried egg smothered in brown gravy on a scoop of white rice. It's amazing. Like, it'll blow your mind the first time you have it. Buuuut Imma be a fancy bitch and shake things up! Today my Loco Moco is a pua'a (pork) patty, shredded moa (chicken) that's been crisped like carnitas, country-style gravy, and an Okinawan potato fritter 😋 Holy smokes I wish you were here! Part 3 Another street food inspiration, claypot fishhead noodles, gave rise to the chefs' version that had 4 pieces of Japanese fish - Kimidai, bream, isaki and red gurnard – and no carbs. The rich creamy foam broth had white wine (rather than shaouxin wine) with none of the fishiness associated with this dish. Brilliant interpretation by the chefs. Carbs came inside the deboned stuffed grilled quail, dramatically served over foggy dry ice. A take off from the Taiwanese sausage stuffed with sticky rice, this was similar to the Chinese Pat Poh Duck (8 treasure duck). Besides glutinous rice, the stuffing included chestnut, mushroom, duck liver sausage and foie gras. Familiar, filling and satisfying, another touch-down score. Main course was beef sirloin (wagyu MB9) accompanied by chou farci (cabbage roll) that had beef brisket, tendon and foie gras, held together by chicken mousse. Inspiration was Taiwanese beef noodles. No words for this amazing dish. Beef was absolutely tender, moist yet firm, and perfect partner to the roll. Dessert was refreshing Mango with shaved ice and almond milk and Pineapple choux - a nod to the famous Taiwanese pineapple biscuit. Every dish outdid the one before - thank you, Andy and Maxc, for a meal par excellence! Next month, the theme will be Italian with Andy in collaboration with chef Kenny on March 27. Part 2 Our Taiwanese affair began with Sweet Potato Ball on aioli sprinkled with furikake - twas surprising as the texture was chewy, and the first note was savoury rather than sweet, and this only appeared towards the end, like the base note of a perfume - quite unexpected and full of flavour. Scallion Pancake, typical Taiwan street food, was given an ‘atas’ twist with garlic cream cheese, omelette, smoked salmon and ikura on pastry biscuit. Keeping it authentic, this was paired with a glass of rich, unsweetened soy milk – breakfast food, says Andy! Inspired by Oyster Mee Sua, cold cappelini in oyster cream garnished with Japanese oyster, garlic oil, drizzled with shaved smoked duck breast meat, topped with tobiko, coriander and herbs. This had me at the first mouthful itself, as the sheer delight and umami that burst forth on the tongue convinced me I was in love! With the dish, not the chefs … haha! Well, maybe … Keeping it close to the theme, we even had Stinky Tofu that came in a box, as if it was freshly bought from the stalls! We donned on gloves and piped the tofu onto sweetish brioche, garnished with pickled cabbage which elevated the taste. Minimal odour, and the ensemble was a great play of textures. Part 1 "I’ve always wanted to do a Supper Club as I find restaurants quite limiting. Even with collaborations, at most, chefs take turns to handle one dish each. “Since we couldn’t travel during MCO, I thought it would be great to travel gastronomically instead. With the Supperclub, we can do something new and help promote chefs as well as form a food community,” said chef Andy Choy who has close to 20 years’ experience and worked in Michelin-starred restaurants by Guy Savoy and Gordon Ramsay in Paris, London and Dubai. He also spent 8 years in China before returning to helm Chateau Dionne, together with partner David Lim. The CKT Supper Club convened for a second time for an amazing Taiwanese themed affair. The only rule, says Andy, is “no rules” so you get different techniques, expertise and all sorts of ingredients in a unique marriage of dishes. Inspired by well-known Taiwan dishes and reinvented to convey the nuances of the actual dish, each dish was given an artistic spin by the chefs. This round, Andy collaborated with his sous chef Maxc Cheng Xin Hou who has worked in Singapore and Japan, with 9 years as a chef under his belt. Part 2 next post. I'm usually not smitten by Fuzion style cuisine and lean more to traditional style cooking particularly desserts. They have just revamped their menu so lots of previous items may not be available. For appetisers we had purple cabbage which is unexpectedly delicious. Followed by new item of crabmeat, uni n ikura. Orgasmastic Porc Au poivre which sounded interesting. Kohlrabi with apples n truffles. Didn't look good as it's a brown pie but once you get into the fillings, it's really good. Then duck confit on homemade Kway teow. Would highly recommend this dish. Pretty disappointed with their Bouillabaisse. It's decontructed presentation already sounded alarm bells. There weren't enough soup n everything was too salty. Lucky the chef took our feedback n went lighter hands for other customers. They then gave us free desserts. If you really need red meat then claypot short ribs. It's gravy very robust but it's a stew. I personally prefer grilled meat anytime. Overall I enjoyed my meal and would return
