Whoever said Bresse won’t go broody clearly hasn’t been around here… we seem to have ladies sitting on surprise nests everywhere these days! We caught this gal scooping up her sisters’ eggs in our breeding flock to make a nice big clutch, and the infamous “garage chicken” (so called because she spent six months recovering from an infection in our makeshift chicken hospital in our garage) sneakily laid a nice clutch and has been sitting on them for days now. It’s our favorite day in the incubation process (besides hatch day, of course)- candling day! How amazing is it that after just a few days at the right temperature and humidity, eggs go from nothing to a teeny tiny chick and blood vessels? We candle once around day 4 or 5 to remove any duds (our roosters are on track for 97% success this year, you fellas rock!), and then again around day 17 to remove any that stopped developing along the way. Then there’s the final wait until the hatch. This batch of Bresse is going to a fantastic farm in Hudson, NH- Homestead Acres Farm. They have an awesome array of pork, goats and soon… Bresse meat! Remember the new chicks that joined the farm last week? They are 10 days old today. Sam and I weighed each one and changed out their jewelry since they’ve grown quite a bit. When the chicks arrived, they each had a colored leg band on to indicate who’s related to who so that I can make decisions for my own breeding plan going forward. We started with black, white, or green bands and have switched to a bigger size of purple, orange, green, and red. If you know me at all, you know I 🫶 spreadsheets. Weighing out Bresse eggs for the next mail orders and incubator batch. Why weigh them? Even though these little gems sell like hotcakes, only a few make it through our quality control. In fact, we only use about 1/4 of our Bresse eggs for breeding- the rest are included in our eating eggs. We know that our younger ladies are still working out the kinks in the egg laying process, so we only collect hatching eggs from our mature hens. Then, they get weighed. Too heavy, it could mean double yolks (which almost never hatch). Too light, and you risk deformities, runts, not enough yolk for the chick to survive, etc. Further still, they get the eyeball test- do they look like the right shade? The right shape? Are there extra calcium deposits? This is what goes into true chicken breeding and why we’ve fallen in love with it. It’s not about tossing a bunch of eggs into an incubator, it’s about looking for ways to constantly improve our flock. #bresse #americanbresse #hatchingeggs #qualitynotquantity

Bresse Saga Update. The weather has been mercurial - cold and hot and cold and windy and hot and rainy, so crazy. We are getting 0 to 3 eggs a day from 11 hens right now. Bresse lay about.200 to 250 eggs again year. Our adult birds will be a year old in June.. The Bresse chicks in the pic are 3 weeks old. We've been adding clean hatching eggs to the incubator as we get them, but they haven't all been fertile. We have about a dozen eggs in the incubator now. We got 19 chicks in today! We ordered 15, they sent a few extras in case of losses, but there were no losses, woohoo! These are American Bresse chickens. We chose these chickens for a few reasons: 🐣 Sustainability - Unlike most birds that are grown for meat, these are actual dual purpose chickens, which means they can lay eggs AND be eaten for meat. They will act like normal chickens 🐓 🐣 Tasty meat - there are a lot of dual purpose chickens out there, like Marans, orpingtons, Australorp and others. But through research (lots of Google, Reddit and chicken forums) we found a pretty much unanimous vote that Bresse chickens were the absolute best tasting chickens. If we are going to raise meat for ourselves we want it to taste good. Bresse are known as the best tasting chicken in the world and they have a unique component that their meat has fat that marbles in like beef, but the fat melts like butter when it’s being cooked. It’s essentially the wagyu of chicken. 🐣 Because they lay eggs, we are able to have breakfast, or hatch more chicks out, keeping the lineage going and our meat source consistent They grow relatively quickly for a dual purpose bird. They are ready for butchering by 16-20 weeks, though most people will keep them until 24 weeks just to add a little extra meat. Put 22 American Bresse eggs in the incubator from my first breeding pair for the season. It took quite a while to get that many eggs saved from a single hen, so we’ll see how many of them hatch. Definitely an experiment, but excited to see what we get. We will raise these for the next few months to see if we have any keepers and will sell the rest. This is my American Bresse breeding pair for this season. It is a 7 month old rooster selected from last year’s surprise hatch and an unrelated hen that is larger and about 18 months old. I’ve put them in their own separate section of the chicken coop. I’m collecting eggs, 8 more to go for an incubator full. Excited to hatch some out to raise for a while, select some to keep and sell the rest most likely. There will be more batches for the next few months. Trying out a new breed of dual purpose chickens on the farm to replace our aging layers. We’ve had mixed heritage breeds before, then switched to brown layers when we sold eggs with our CSAs, but are happy to be going back to another older breed. We’ve noticed massive differences in hardiness, life span (at least double with our heritage birds) and disease or physiologic issue susceptibility between the two. These are a French origin breed, Bresse, renowned for being the best flavoured meat bird, light boned for a great meat ratio, a hardy outdoor chicken and great forager. They also lay very well, so we plan to incubate eggs ourselves once these grow for our own broilers and keep them as layers year round for self sufficient chicken production. These will be contained in chicken tractors rather than free ranging since they are wildly expensive and it took almost a full year to get them, but that may have the added perk of being able to move them around the garden for insect management. The blandness and disappointment of supermarket chickens led me to a post by a Saugerties farmer one day in june 2020. Their meat birds live a wonderful life on the farm, enjoying weeks of freedom and premium organic feed, only to face one inevitable day. That ONE BAD DAY Choosing to know where my food comes from became an important decision. We not only bought chicken from @theloneduckfarm but ending up establishing a meaningful friendship. Chickens are my favorite. We are getting up to 18 eggs a day right now and they are helping me with the compost pile. We have reached 100% on chicken we eat at home being grown here. I still like the occasional chicken wing order. We are starting to plant in the high tunnel so that will lessen our store dependency for vegetables. The ewes will be lambing any minute now. So that will give us 100% lamb, chicken and eggs raised on property. We are doing hogs again this year, though those will be bought off sight. Our beef is coming from one of friends who raises cattle. It is satisfying knowing where our food comes from. We don’t necessarily save money, what with buying some feed and hay and infrastructure seemingly all of the time, but I am sure we have healthier proteins. Another little thing we are doing is taking some of the pressure off of the production farming and supply chain. I know we are only one family but if enough people do what they can, it can make a difference. This remarkable breed is considered a national treasure of France winning culinary awards yearly and demanding prices of $20 per pound or more and always purchased with the blue legs in tact for confirmation of breed.
