Wow, can you believe that the Shakespeare Festival in Craiova, Romania is turning 30 this year?!It’s such a fantastic celebration of art and culture, and I was lucky enough to be invited to curate, pair, and talk about different types of cheese during an evening of culinary delights. Stilton cheese was of course part of the evening. 😊🥰 Paired with chocolate made locally by @cofetariadamarin or stuffed into giant Madjol dates, it was the star between all cheeses.🌟 The event was such a blast! I have curated, cut, displayed and paired cheese for over 90 guests who enjoyed 5 amazing cheeses, along with 3 wines and 2 spirits that were beautifully paired to enhance their flavors. It was such a joy to chat with the audience about cheese and it was such a treat to see so many people open to trying new things and indulging in their love for art and cheese. If you’re planning to visit Craiova between May 16th and 26th, 2024, then you’re in for a real treat! The festival will feature 30 performances in 7 different theatre locations, as well as 30 conventional and unconventional spaces, such as neighbourhoods, streets, and parks that will be filled with the Shakespearean spirit. Ganz toller Auftag beim @kaesefestival_cheesefestival. Armando Gambera hat mit viel Erfahrung und Liebe zu seiner Region sein Wissen zum Castelmagno mit uns geteilt. Die Besonderheit: der Käsebruch kommt nicht gleich in Formen, sondern wird nach dem ersten abtropfen noch einmal für einige Tage in die Molke gelegt und noch einmal zerkleinert. Danach darf er in den Kellern reifen und mit Glück bildet sich sogar Blauschimmel - die Devise ist hier „sauber, aber nicht antiseptisch“. Die Barolos von unterschiedlichen Winzern aus La Morra waren perfekt dazu. Sicherlich einer der spannendsten Käse, die ich bis heute verkosten durfte. It’s the season like no other for pairing food and wine. Holiday parties and pre-dinner snacks almost always include cheese. Generally I recommend pairing white wines with cheese but these red wines from the Bardonlino region in Northern Italy pair well too. Especially if you can find Italian -style cheeses like caciotta, and latterai, but a good Parmigiano or pecorino would work too. I visited a sheep farm on the outskirts of Gjirokaster. Dorian, the farmer, had around 200 sheep... one of 5 farms in the county with that number of sheep... other farms in the area tend to have fewer animals. The conditions on the farm were certainly not picture perfect by any means, but the animals were healthy and friendly. The ewes lamb twice a year, which is a system i understand but personally don't like too much. Like farmers across the globe, Dorian faces similar struggles... financial instability, grazing issues, and maintenance costs. During the summer months, he takes the animals further out of the city to graze on land that he rents......and the landlord refuses to give him more than a 1 year contract at a time... leaving Dorian helpless against annual rent increases... Dorian is a good farmer who wants to do the best by his animals, but his finances are limited... he has a particular fondness for his many cats that roam around the farm ..he even ear tags the cats so that locals know they are his... I found this very sweet as Albanía has so many street cats and dogs that certainly don't receive any love. On the farm, there were several guard dogs. They are kept tied up on a chain during the day and then allowed to roam around freely at night to protect the farm from intruders' intent on stealing the livestock. These dogs, although cared for, are there for a purpose and do not receive affection. After a couple of hours at rhe farm Dorian offered us some homemade cheese and offcourse Raki to wash it down with... Dorian sells most of his milk to a local dairy but enjoys making cheese himself. And then when you're friend says "Do you want to go run some errands with me?" Again, of course the answer is yes. First stop: Cantina dei Produttori Nebbiolo di Carema to pick up wine for his taverna. And even though it's 9:30 in the morning you have to try the bubbles (Spumante Metodo Classico) and the rosé (Rosato “Tournet”). Second stop (pictured): Cooperative Agricola Mombarone for cheese. This co-op is open 7 days a week/365 days a year...as the cows stop for no one. I was allowed into their small cave for a few minutes and so glad about it 😍. Next up: a visit with Luciano and the award winning wines of Pianta Grossa Winery. And of course you have to try all 5 they make. Think of it as a county fair that we Americans might struggle to comprehend. More than a few people have asked me to let them know if I would ever be organizing a trip to this glorious event...so here we are. I'm collaborating with @commonwealthwineschool on a trip to Paris in Feb/Mar of 2024! As I mentioned, we're still ironing out the details, but I can answer a few of your burning questions. Will there be lots (and lots) of food & wine? YES! And gigantic heirloom animals to experience up close? YES! And meat cones and huge loves of nougat in all sorts of flavors? YES! And restaurants that serve only duck and Champagne? YES! Can I double-fist wine glasses? WHY NOT? Will we meet Ashley Noëlle, aka "Brieyoncé"? NOT SURE, BUT I HOPE SO! Met this teeny tiny beauty here in Burgundy, the heart of Epoisses country! 🇫🇷 "Trou de Cru" is the smallest lactic curd and washed rind cheese in the world. 🤩 It was created in the 1980's by the Berthaut brothers, the same guys who re-launched and popularized the production of the legendary Epoisses (originally created 500 years ago) in the 1950's. Made a quick stop in #Amsterdam 🇳🇱last month for a lesson in #gouda at @henriwillig. Ate my first piece of GREEN #kass (kass is Dutch for 🧀, green one was a pesto gouda), and was introduced to their huge line of uniquely flavoured goudas - who knew there was an asparagus or 🥥 gouda out there?! My favourites were their classic aged goudas, sweet and smooth. Also got to sip a delicious whey 🍺 , made from the actual whey collected during 🧀 production. Recently returned from a trip to London 🇬🇧, Amsterdam 🇳🇱 and Sicily 🇮🇹, where of course my top priority was eating local 🧀 in each destination!
