What to do with leftover roast veg? Turn them into veggie cakes for brunch the next day 😋 These ones have roast potatoes and sweet potatoes from yesterday and a bit of corn I had that needed using. I chucked a handful of grated cheese in as well as a few spoons of gluten free flour, a dash of baking powder and an organic egg. For anyone who’s unfamiliar with this trendy combo - it’s one of the most nutritious + fulfilling meals to start your day with! But there are several reasons for that and each one is crucial 🚨 - The oats provide high amounts of natural protein + fiber that stimulate your metabolism throughout your morning! Their complex carbohydrates break down slowly + keep you full for longer 🎯🎯 - Adding the chia seeds into the mix gives the average overnight oats a thick + creamy texture as well as supplying some extra protein, fiber + healthy fats.
