🫣We’ve all done it...I think. We’ve told our kids a weensy white lie at some point. Well, at least this Momma has. 🙋🏻‍♀️ Let me explain... Luca WILL NOT eat potatoes! (You read that right, but that’s a story for another time.) It’s also a good time to note that Luca insists that he does not like soup either. Lately, we’ve been having him eat what we are having for dinner more and stepped back on accommodating his limited favorites of🍕 pizza, 🍔 cheeseburgers and 🍗 chicken nuggets. Recently we had vegetable soup for dinner and Luca grilled us all day about what we were having, what’s in it, if he has to eat it and the list goes on. We told him he was having a grilled cheese with a vegetable medley. (A soup scoop sans liquid. So where’s the lie, right?) Nearly May and still freezing, quite windy as well but the rains held off so far. At least it’s nice and cosy in the shed again following the break in earlier this month. I was gifted some glass and I had some spare wood and tasked my brother with plot repairs while I carry out essential planting duties and he’s done a sterling job replacing all the rotten timber where the glass is. This week’s meatless Monday features a spinach and ancient grain and quinoa salad that is based on a recipe I found on the back of a package of Freekeh. Salad: 1 package of ancient grain and quinoa mix (cooked as directed - Casbah brand - let cool before adding) 1 red pepper (quartered, roasted for 8-10mins with broiler on low, then diced once cooled) 2 cups baby spinach (washed and chopped) 1/2 cup feta 1/2 cup black kalamata olives (I use pitted pre-sliced ones) A light dusting of ground thyme (a little goes a long way! I usually sprinkle a little into my palm then dust into the salad) Dressing: Juice of one lemon ~1/4 cup 3 tbsp of olive oil 1 tbsp of honey 1/4 tsp of cinnamon 1/4 tsp of smoked paprika (it’s so worth the splurge!) 1 clove of garlic minced Some modifications I made: More feta and more black olives- I probably doubled them. Add 16oz of chickpeas for more fibre and protein. I use a full 10oz bag of spinach to give more volume. The original recipe calls for a full package of Freekeh (Casbah brand) cooked, but I haven’t been able to find it lately, so the Casbah quinoa and ancient grain mixture is a good substitute. Zucchini and Tomato Lasagna. When your kids ask you to make it again, you know you scored. 😆💕🎊 This is a light version of the traditional meat lasagna. No bechamel sauce involved. Fresh seasonal veggies, ricotta and (optional) some good quality ham. INGREDIENTS: one box of lasagna pasta (14 sheets) 3 large zucchini, cut in 3mm thin slices, lengthwise 4 medium heirloom tomatoes, soft and sweet, sliced in thick 5mm slices 1 medium tomato, chopped in small pieces 250gr ricotta cheese 100gr provola or fontina cheese in slices 5 Tbsp parmesan cheese, grated 2 slices ham Olive oil 1/2 cup breadcrumbs —— 1 Tbsp sea salt 1 Tbsp oil for the boiling water PROCEDURE: Bring a large pot with water to boil. Add the sea salt olive oil and blench the lasagne for 3 minutes. Remove the lasagna sheets from the boiling water and let them dry on a kitchen towel. Prepare all the ingredients on a table/countertop and start assembling the lasagna. At the bottom of a deep baking dish drizzle some olive oil and one handful of breadcrumbs. Create a layer of pasta. Top with the zucchini slices and a layer of tomatoes. Top with ricotta fontina or provola. Cover with a second layer of pasta. Repeat the zucchini layer tomato layer cheese layer. This time also add the ham in pieces. Cover with the third layer of pasta. Top with chopped fresh tomatoes, ricotta, parmesan cheese and a drizzle of olive oil. Bake in a preheated oven to 400F for 20/25 minutes. Let it cool down 5 minutes and enjoy! Eating less food is not the same as eating less calorically-dense food and vice versa. You can eat healthy and still gain weight. You can eat less and still gain fat. And, contrary to popular belief, you can not eat “healthy” and lose fat (though it would be hard). Fat loss is not only determined by the food you eat, but it is mainly determined by the calories the food has. You don’t need to restrict your body from the pleasures of food, but if you’re struggling with fat loss, this may be a reason. If you are consuming more calories than you need to in a day, you will gain fat. It’s that simple. So, don’t restrict yourself entirely. Growing in small spaces is easy! Just use large containers to keep the moisture in the soil and grow vertically as much as possible. Quality soil is key! I created my 5 sqm space to allow for a lot of produce and fruit as well as for recreation. Just adapt to your needs. Look out for second hand containers and spring sale in your local garden center if you are gardening on a budget. Salată delicioasă cu resturile de pui din weekend, foarte copioasă, în plus, și ușor de pregătit Ingrediente: 🔶️2 pumni ruccola (sau altă salata verde) 🔶️1 ceapă verde 🔶️75g piept de pui rămas din weekend 🔶️6-7 roșii cherry 🔶️1 bucată castravete (de un deget) 🔶️puțintel parmezan ras Ingrediente dressing: 🔶️2 linguri iaurt 🔶️1 linguriță muștar 🔶️1 lingură suc de lamaie 🔶️1/2 catel usturoi  🔶️1 lingură parmezan ras marunt 🔶️sare, piper Amestecați toate ingredientele dressingului într-un borcan și lăsați-l cel puțin 30 de minute în frigider. Tăiați carnea în bucăți mici. Am pus ceapa, salata și castravetele tăiat într-un bol, am turnat dressingul deasupra și amestecat. Cabbage Soup Detailed Recipe & Step By Step Instruction Here 👇 📋 Ingredients: 🥄 1 tablespoon olive oil 🧅 ½ cup chopped onion 🧄 2 cloves finely chopped garlic 🥕 1 cup chopped celery 🥕 1 cup sliced carrots 🥬 6 cups cabbage, cut into 1-inch pieces 🥣 4 cups vegetable broth or stock 💧 3 cups water 🍅 1 can (14.5 oz) diced tomatoes 🧂 1 teaspoon salt ⚫ ½ teaspoon black pepper 🌿 1 teaspoon dried basil 📝 Instructions: 🔹 1.
