Garden Pasta Salad using Sankhya Farms Basil Salad Dressing Ingredients for Garden Pasta Salad: 250g pasta (rotini or bowtie) 1 cup cherry tomatoes, halved 1/2 cup cucumber, diced 1/2 cup bell peppers (red and yellow), diced 1/4 cup red onion, finely chopped 1/4 cup black olives, sliced 1/4 cup fresh mozzarella, diced 2 tablespoons fresh basil, chopped 2 tablespoons pine nuts, toasted 1/4 cup Sankhya Farms Basil Salad Dressing Salt and pepper to taste Instructions: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, fresh mozzarella, fresh basil, and pine nuts. Drizzle the Sankhya Farms Basil Salad Dressing over the salad and toss gently until well coated. Season with salt and pepper to taste. Serve chilled as a refreshing pasta salad. Rigatoni with Summer Vegetables: Ingredients: 300g rigatoni pasta 1/2 cup Sankhya Farms Basil Salad Dressing 1 zucchini, sliced 1 yellow squash, sliced 1 red bell pepper, sliced 1/2 red onion, sliced 2 cloves garlic, minced 1 cup cherry tomatoes, halved 1/4 cup black olives, sliced 1/4 cup grated Parmesan cheese Fresh basil leaves, chopped Salt and pepper to taste Instructions: Cook rigatoni according to package instructions until al dente. Drain and set aside. In a large skillet, heat some olive oil and sauté garlic until fragrant. Add zucchini, yellow squash, red bell pepper, and red onion. Cook until vegetables are tender-crisp. Stir in cherry tomatoes and black olives, cook for another 2-3 minutes. Add cooked rigatoni to the skillet, pour Sankhya Farms Basil Salad Dressing over the pasta and vegetables. Toss until well coated. Season with salt and pepper to taste. Sprinkle Parmesan cheese and chopped basil on top. Serve hot, garnished with additional Parmesan and basil if desired. Slow Cooker BBQ Chicken with Sankhya Farms Basil Salad Dressing: Ingredients: 4 boneless, skinless chicken breasts 1 cup Sankhya Farms Basil Salad Dressing 1/2 cup BBQ sauce 1 onion, chopped 2 cloves garlic, minced 1 tablespoon Worcestershire sauce 1 tablespoon brown sugar 1 teaspoon smoked paprika Salt and pepper to taste 1/2 cup chicken broth 1 tablespoon cornstarch (optional, for thickening) Instructions: In a bowl, mix Sankhya Farms Basil Salad Dressing, BBQ sauce, onion, garlic, Worcestershire sauce, brown sugar, smoked paprika, salt, and pepper.
