Last night I was treated to a Garo dinner, a community that lives in Western Meghalaya. I really knew nothing about their food so the experience was a lovely surprise. The menu was massive! There must have been easily 20 dishes and the flavours of each of them was unique and distinct. The menu was: Bitchi beer Roasted cashew nuts Banana flower chutney Banana flower roasted in ash and slow cooked Sobok Papaya flower with dried fish chutney Modipol wetepa Bamboo shoot pickle Dal with bamboo shoot Mea dal Knolkohl with sesame seeds Oldgobi Paneer Mixed vegetable curry Fish in banana leaf Wetepa. Chicken with roselle leaves and oyster mushroom Do.o galda dambong Country Chicken with kala chana Do.o kalai Pork curry with ginger and kappa Wak kapa Pork with sour fruit chambil. Chambil is a wild orange found in Meghalaya that has a delicate sour taste Chambal Pura wak Smoked pork cooked with mecheng. Mecheng is Sichuan leaves, a local green that has a lovely bright flavour Wakgran mecheng Banana leaf wrapped rice My favorite were the pork with chambal, the smoked pork with mecheng, and the banana flour chutney. But each dish was distinct and unique. The dinner was extra special because of the host, Christina, was gracious, generous and a joy. Her house celebrates the deep history of the state through photographs and objects. It is a room steeped in history, one that sets the time for dinner. Her knowledge of the food, community and region is special and her jneed to sharing these stories is infectious. This is my all time favourite Garo dish. It’s called Apolka Wak. Pork with chillies, ginger and apolka. What is apolka? I don’t really know the Latin name for it. All I know is that it is the most wonderful vegetable and rare to find. Third image is fresh bamboo shoot fried with some turmeric powder. 4th image: banana flower with fermented fish. 5th image: all the above in one plate with some rice and dal. Traditional Garo food. Yummmmmmy. C'est mon plat préféré de Garo Hills. Il s'appelle Apolka Wak. Porc aux piments, gingembre et apolka. Qu'est-ce que l'apolka ? Je ne connais pas vraiment son nom latin. Tout ce que je sais, c'est que c'est le légume le plus merveilleux et rare à trouver. I've been MIA for a while and there's a reason to it! I'm traveling in North East India (Meghalaya and Assam) with a fully packed itinerary with little to no internet connectivity in some areas. I visited Shillong about a week ago and on our way to Shillong we stopped to see Umiam lake / Bada Pani lake. Then we headed for lunch and tried some Garo cuisine.
