On this 2-22-22 aka Twosday, it seemed appropriate to remind you that no matter how you shape or stuff it, one recipe of Mandylicious challah makes TWO average sized 1.5 pound ish challahs. BUT I also know that some of you like to use the entire 5 pound bag of flour in your challah baking. To do that with my recipe all you have to do is quadruple the recipe and double the kneading time. Best dinner ever of @mandyliciouschallah challah recipe and broccoli cheese soup. I've made that soup a few times before but never this good, so I have to write down everything I did so I can recreate it next time! I wanted to mimic the soup at Panera and I think I nailed it. It was loosely based on the @seriouseats recipe. First I cut my broccoli to where the florets were separate from the bits of stem. I cooked the florets (2C or so) in a skillet with oil and a little S&P until they were somewhat browned and not too crunchy. Meanwhile, I cooked the stem bits with about 1/4 large yellow onion and 1 carrot until soft and slightly browned. Then I added 2C veg broth and heated to a boil. After it cooked for a few mins I added about 1-2t of sodium citrate. This ingredient is used to make cheese gooey, and I bought it at @surfasla now that they're selling it. I used an immersion blender to puree the veggies along with about 4oz of grated cheddar tossed with a little mustard powder as well as a little hot sauce. Then I added in the sauteed broccoli florets and some carrot matchsticks and used the immersion blender a little bit more but not completely blended. I can't believe how good the soup was! This is grilled cheese and tomato soup challah as seen on @mandyliciouschallah! I happened to have 4 egg yolks left over from the meringue frosting, so I knew her challah recipe would be the perfect way to use them up. I cut sharp cheddar into sticks and wrapped the flattened dough strands around them. Then I brushed each strand all over with a mixture of tomato paste, Italian seasoning, salt/pepper, and a little water to thin it out. Finally, I braided the strands, let the dough rise, and baked as normal. The tomato paste got a little dark, but it didn't taste too burnt. We absolutely loved this, and it tasted just like grilled cheese and tomato soup! I made a quarter challah recipe so that instead of 2 regular loaves it was one mini loaf, which was still pretty big! I flattened the strands and filled them with aged cheddar and smoked gouda before braiding them. It was really good! It’s pretty clear we LOVE our @blendsbyorly challah rolls and that I typically add @enjoylifefoods chocolate chips for a little extra sweetness to bring in Shabbat. 💚 • Yesterday I flattened the braid before I twisted it into a knot (thanks for the inspiration @mandyliciouschallah ) and added some @nutella inside. We didn’t have these last night with Shabbat dinner (Nutella is dairy) and we had a meat meal but they were certainly delicious for a mid-morning snack today! 🙌🏻 • Gluten-free challah dough is sticky to work with but I feel like I’m getting a little better at it. I’ve used flour blends and mixes many times over the years which have worked out really well but thought I would try this today.
