Tonight we tried @traderjoes Shawarma Chicken thighs and they were delicious. 😋 We made bowls with the chicken, roasted veggies, tj’s microwave rice and homemade hummus (only bc I was out, and had a can of chickpeas and a lemon). Died and went to heaven 😋 we had to do some fancy footwork in get in here without a reservation (highly recommend booking beforehand!), but @smittysoysterhouse was well worth the effort. The menu had relatively limited gluten-free options but I was there for the oysters and they did not disappoint! I appreciated how wary the staff was of offering options that had any risk of cross-contamination, that makes me feel much safer haha. But most of the oyster condiments were GF, and there were a few cooked seafood appies that I could eat if raw is not your thing. Dinner didn’t go as planned tonight. We "traveled" to Italy tonight and checked out Barbarella Bar! I was skeptical about whether they could safely avoid gluten cross-contamination (CC) with so many pasta dishes on the menu, but not only could they reassure me that they take great effort to avoid CC, they also had 3 pasta gluten free dishes 🙌 We ordered a Passionfruit Spritz and an English Garden as our first round of drinks, and shared the Beet Salad for our appetizer. We felt that both of our drinks were not overly sweet which was a plus, and the salad was delicious and a healthy portion, easily split between two. We had pasta for our mains, I had gluten free Spaghetti Limone with grilled shrimp and my partner had the Cavatelli. We were both stuffed after an excellent meal, but when I heard they had gluten free Tiramisu Torte, I had to go for it. This was the BEST GF dessert I have ever been served in a restaurant. As a former pastry chef, no one has been able to top the GF cakes I make at home, but this was absolutely comparable if not better. BREAD PUDDING. So this is kind of a random dish for me. Feels very British and not something I’d ever think to make but had some super dry raisin oat buns leftover and hate wasting expensive GF product so turned to the google for ideas. As it turns out, this is super easy to make and let me just say, a pretty kicka$$ dessert. Scored it from @gfjules 😍 It comes together very quickly and I didn’t do the sauce although I’m certain that’s fabulous too. Happy Easter 💃🏻🕺🏽 Winning here with Gluten Free Choc Chip Hot Cross Buns - much to Hubby’s horror. Hubby thinks it is sacrilege to replace raisins with chocolate chips. 😂 But in this house the baker chooses. 💃🏻😊 This morning we did our first home Easter Egg Hunt, followed by coffee and buns. It was a nice change from us usually hopping on a plane as soon as school is out. As an expat family, we don’t often take the time to just sit at home and enjoy our own space. While I do find it challenging to sit and laze about the house, the kids enjoy the downtime after a very active school term and getting to hang out with mates. Happy Easter! ✝️🐰 We are still recovering from our spring break travels, so we are having a quiet Easter at home. My youngest daughter helped me make #glutenfree artisan bread using the recipe on the @kingarthurbaking #glutenfreebread flour bag, and we are all so excited! It took time (but wasn’t difficult), and we made REAL bread!! The entire loaf is already gone, and I can’t wait to try again. 😆 I found the King Arthur Gluten Free Bread Flour at @target It does contain wheat starch, so it is not suitable for those who have a wheat allergy. YUM!! Our bread turned out a little dense, but I’m super happy with our first try. We made our first trek across the country as a family, and navigated #Disneyland while eating #glutenfree My only wish from Disney is to offer a general gluten free food search that covers all restaurants/quick service/food carts vs me having to look one by one through the app. That said, Disney did take prep and cross contamination seriously, with our quick service meals always being handed to us by a chef! Our only sit down meal was dinner at Tortilla Jo’s in downtown Disney which was fantastic (so many options!) but they are closing in the next couple of weeks. Here is a breakdown of where we ate: Alien Pizza Planet in DL: the pizza was delicious - we ate it twice 🤪🍕 Smokejumper Grill in California Adventure: The Burgers and Fries were delicious - the bun did get soggy by the end 🍔🍟 Lucky Fortune Cookery in California Adventure: we ordered 2 kids meals and 1 regular meal to share, and while it tasted great, the portions were surprisingly small. 🍚 Jolly Holiday Bakery: I went in and spoke to a chef about the raspberry macarons because we read conflicting info online. I was told that cross contamination was possible, but these are made with almond flour and have no gluten containing ingredients. We decided to go for it and these were divine!! Random Food Carts in DL & CA: we had Mickey ice cream bars and frozen bananas twice (once each day) YUM!!! 🍌 Enchanted Tiki Room in Disneyland: Dole Whip (not pictured). YUMMM!!! 🍍 We ate A LOT of sweets, but we also walked over 10 miles each day. I feel no guilt. 😆 Overall we had a great time! Butter 🤤 Chicken. I file this one under quick and easy dinners because I cheat. By Friday I’m over it and can’t be bothered to cook a big meal from scratch. SO I grabbed this sauce from Costco (2 jar pack) and some Tilda coconut rice and all you have to do is cook some chicken (I did 3 breast cut into pieces, into the pan with olive oil). Once seared, pour the sauce in and simmer. I added frozen spinach for veg. The rice gets microwaved and simply served on top. Garnish with cilantro if you’re into it 😌 I know I’m not winning awards with this meal but dayum it was gooood 🙌 A solid Indian takeout dupe! TGIF! What’s your go-to easy dinner for the fam?? I feel like I have been grocery shopping and cooking all weekend. Yesterday at @costco I picked up a rotisserie chicken and the two pack of premade mashed potatoes. When I got home, I froze one pack of potatoes and pulled the chicken off of the bone and put it in the fridge. Tonight all that I had to do was heat the potatoes, heat the chicken (with some @sbrbbq) and microwave frozen green beans (added butter, garlic, salt and pepper). There’s a difference between choosing a lifestyle change (opting to go vegan, vegetarian, dairy free, gluten free etc, but also still having the choice to eat normally if you want to) and being told that you CANNOT HAVE SOMETHING EVER AGAIN FOR THE REST OF YOUR LIFE. All you have ever known and loved, Never again. Not even a bite or a crumb. For the health of your future. AND then trying to adapt which is hard enough in itself. BUT then to add insult to injury after already feeling overwhelmed with emotions, the supermarkets exploit the fact that Gluten free is people like Coeliacs… Only choice!… And just look at the prices 😱 No wonder some people carry on harming their bodies by eating gluten because they simply cannot afford to go GF. It’s a very unfair vicious circle. And surely there should be more support for people who struggle financially? Especially when it is hereditary disease and there could be a full family of coeliacs under one roof to feed? 😱 The next time someone says “oh you will be fine, there’s loads of gluten free alternatives” - true, but when there’s a cost of living crisis ongoing too, this will only add financial strain and stress to a lot of people, when carrying the burden of CD is already enough to deal with. RECIPE REVIEW! 📣 Good morning and happy Monday! Yesterday I finally tried @theloopywhisk GF tortilla recipe and here’s how it went: There are only 5 ingredients which is awesome. I used @bobsredmill 1-to-1 GF flour. The recipe calls for psyllium husk and I have the powder so the measurement was tricky being that it’s in grams and I don’t have a scale 🥴 So after some googling and one gel batch that ended up in the compost, I found that 20 grams is about 4 teaspoons. The dough was pretty sticky so I might have boggled the ratio but I kept at it and used a lot of extra flour for rolling out the dough. It’s time consuming and they are not really round in shape (possibly my lack of rolling pin skills) but they are indeed very pliable and don’t break! I made burritos and they held up beautifully 🤩 Taste is pretty neutral - like a rice wrap. Overall I definitely recommend trying this out but give yourself lots of time as you roll and cook them at once. Thanks Kat! People often ask me what we pack for GF snacks - especially for road trips and ski days. Today we hit the slopes since it’s Family Day and we are a short drive from the beautiful Canadian Rockies 🏔️ ⛷️ Today I packed: - rice crackers and sliced @scharglutenfree baguette - cucumber and cherry tomatoes - salami and cheeses - @madegoodfoodscanada granola minis - oranges - @kindsnacks bars We went to @nakiskaskiarea and they have a few GF options but not much for ‘real’ food. We do buy hot chocolate for the kiddos but it’s always good to have snacks on hand for peace of mind and for saving $. It was a beauty of a day! Blue skies, no wind and warm temps! Can’t beat that! I cooked a lot this week! Countless smoothies for my youngest, gf pancakes for the freezer (already gone). 🥞 Sheet pan ranch chicken and veggies, Valentine’s Day steak and baked potatoes. Spaghetti with meat sauce. Gluten free takes extra thought but I’m still working hard to keep things interesting. 😜 On Super Bowl Sunday we tried bacon and cheddar turkey burgers on new to us Hawaiian rolls with meh results. I need to toast the buns better next time and I think that would do the trick. I also made Toll House Bar Cookies - only subbing for #glutenfree flour. So good! 🍪😋 We also tried @realgoodfoods parmesan chicken this week, and while it did NOT look like the picture on the box, it was good for a quick meal. I served it over plain rice with carrots, garlic and edamame. 🫛🍚🥕 Tonight was tried and true Chicken Pot Pie Gnocchi, minus the peas. It was still tasty. Haven’t done a post in a while! I’ve been unbelievably busy lately! We are a hockey 🏒 family and most dinners these days have to work around a hectic schedule 🥴 Sometimes it’s basic and quick (pizza or soup n bread) and sometimes it’s like tonight where I’m just desperate for a healthy and balanced meal and I don’t care how long it takes. Cod and potatoes in a creamy rosemary sauce and side salad just hit right! Not a quick dinner but not complicated one either. It’s both light and rich at the same time - a bit of a paradoxical anomaly 🤔 But it was delicious and worth all the time and effort! COD is such a beautiful flaky fish, it’s hard to mess it up. Throw some lemon, butter and garlic at it, don’t overcook, and I promise it’ll be a success. Pro tip: make sure it’s completely thawed (if you bought frozen) and pat dry before cooking. When it’s your 2nd child with a celiac diagnosis… We had our Ped GI visit today for our son’s positive blood test result and scheduled the endoscopy. We want to see what’s going on with the villous atrophy and to get the official scope pictures and diagnosis written by our GI to share with the school for the 504 plan. For our son specifically he also suggested looking into EoE, as well. At first our son didn’t understand this visit was for an actual celiac diagnosis. When he figured it out there were tears. After we let him feel all the emotions, we focused on all the positives and it reminded him how he already lives a life that is 95% gluten free anyway. It’s never an easy diagnosis and I feel like normalizing all the emotions that come with it. It’s one thing to be a celiac yourself but it’s a very different feeling when it’s your kid and they are starting a journey with this lifelong diagnosis…and then there are TEEN Celiacs. My daughter is becoming one of those and it’s a whole different world from young childhood celiac when us moms control everything they eat. At the end of the day, it’s a manageable disorder and it truly does get easier over time, but that doesn’t mean I don’t have days where I feel mentally and physically exhausted by all it requires. Well, I posted this and realized I overlooked a spelling error, oops. However, this is still a PSA to go get your blood test for celiac if it runs in your family. Go. Every. Year. Make it part of your well visit blood test. It’s easy for the doctor to add it. Next week we begin with the confirmation phase of my son’s positive blood test result for Celiac. I have it and my daughter has it so I just prayed Brandon would be spared from this. We had already checked the genetic markers and they are BOTH present for him. Now this positive test. We chose not to tell him yet because he has to continue to eat gluten until his endoscopy to ensure it’s an accurate result. Once we get that back we will have more information. I’m sad for him not because we don’t know how to manage it, I’m sad because there is still so far to go in the understanding of celiac vs a gluten sensitivity. It’s certainly better than it was in 2010. College, restaurant dates, birthday parties, etc. So we begin again with our second child. We need a cure. #celiac #celiacparent #celiacfamily

Dinner the last two days has been orange which is kind of weird. 🤪 Tonight I made baked potatoes with shredded buffalo chicken, cheese and sour cream 😋 It was easy to deconstruct for my picky kids - one got a plain potato with plain chicken and the other got a potato with butter, cheese and no meat (peas for a side). Easy and filling. Last night we ate a dish by @jenneatsgoood and it was tasty! I loved the chicken sausage for something different, and I’m marveling at coconut milk and how creamy it makes a dish - last week is the first time I had ever cooked with it. 🤷🏼♀️ My youngest spies these @katzglutenfree pies at @freshthyme that she and my husband enjoyed. Eating in is becoming our norm because it’s just so much easier. Speaking of Fresh Thyme, have you been? I’m kicking myself for not checking it out sooner. It's the little things in life that make me happy. I haven't had a funnel cake in over 25 years. My kids, up until tonight, had never had one. A few weeks ago I bought this @momsplaceglutenfree funnel cake mix, but because I was intimidated by it, I kept putting off maming it, but tonight I sucked it up and gave it a try and I'm so glad I did! It was so easy and so good! There was powdered sugar everywhere, but it was worth it! It was nice to be normal and to see my kids super excited about something they've seen at the fair, but never had a chance to safely try. So excited to have a normal, boring weekend at home to catch up on life!! I’m working on our fridge and pantry today, cleaning out expired stuff and restocking snacks and lunchbox items. Here are some of our regular #glutenfreesnacks Some are #certifiedglutenfree and some are not. Some may not work for those with super sensitive #celiac or wheat allergies. But this is what works for my family. I attempt to save money where I can, even though it’s stupid hard right now. I buy a lot of my pantry items at Target - I get 5% off with my Red Card, and love all of the Target Circle offers and gift cards. The stars aligned and we have zero places to be tonight! 🤯 I am trying to clean out my fridge, and decided it was time to bake up some @sweetlorens cookies that have been hanging out awhile. Of course I had to make cream cheese frosting 😆 I decided to make homemade #glutenfree chicken nuggets using @scharglutenfree bread crumbs. I fried them in olive oil, but I think I’ll try the air fryer next time to see if they get a little crispier. Still delicious pan fried - (I season the egg wash for more flavor)! Home from a long girls hockey tourney weekend in Chicago. We didn’t venture out of our comfort zone at all on this trip. We ate Chipotle, Culver’s and California Pizza Kitchen. Tropical Smoothie and Starbucks. The hotel did serve #glutenfree blueberry muffins which was nice. And I always pack lots of snacks. Tonight I needed quick & easy dinner and I keep seeing a video online of a recipe that uses Alfredo, Marinara, Chicken and Pasta, so I went for it. The recipe I found was super simple, had everything on hand, and it hit the spot. (The pizza pics are from @cpk 🍕Their certified gf pizza is excellent, and we loved the location we went to @ Oakbrook Center. I don’t know how those of you with teenage boys do it!! Lately every time I turn around my kids are hungry 😜 My youngest plays hockey 4-6 days/week with her weeknight practices starting between 7:30-9pm. That means she is starving when she gets home, even though she eats beforehand. Fruit smoothies have been her go to recently, and obviously they are easy to make #glutenfree This one is 1 cup frozen fruit, 1 cup of milk, 1 Chobani yogurt and half a frozen banana. Her blood sugar plays well with this combo….its not too sweet and the Greek yogurt boosts the protein (I think?). I also made a batch of #glutenfreepancakes tonight to throw in the freezer. I like mixing half regular/half protein mix. I also throw in some chocolate chips.
