🍄🍝 MISO PORCINI MAFALDINE 🍝🍄 My ultimate mushroom pasta - garlicky and creamy, with a serious hit of umami 🤤🤤 Dried mushrooms add an intensely savoury kick (plus it's quicker than sweating off a ton of chestnut mushrooms). Enjoy! For one: 80g pasta of your choice 15g dried porcini mushrooms 1 x tablespoon vegetable oil 2 x garlic cloves, sliced 2 x shallots, finely chopped 2 x tablespoons crème fraiche 1 x teaspoon white miso paste 1 x heaped tablespoon freshly chopped parsley Sea salt and black pepper to taste Rehydrate the dried mushrooms in boiling water for 10 mins. Save the mushroom water! Cook your pasta according to pack instructions, less 3 minutes. Keep a splash of the pasta water. In a saucepan on a medium high heat, add the oil and fry the garlic for a minute. Add the miso paste and the rehydrated mushrooms, along with the mushroom water. Give this a good mix, then add the pasta and a splash of pasta water. Let this simmer for a few minutes to fully cook the pasta, and thicken up the sauce. Throw in the parsley, a sprinkle of sea salt and black pepper to taste, and serve 👌🏼👌🏼

But when it comes to buying fish, we tend to go with the familiar — a salmon fillet, shrimp, or a variety of shellfish if we’re feeling fancy. But there’s so much variety in sustainable fish offered at the fish counter or in the frozen aisle, it’s a shame not to branch out and try something different. How-to below: Mediterranean Pasta Salad with Crispy Black Garlic Chick Peas. This is not your average pasta salad. I'm usually not a fan as I find the pasta tasteless and gummy. To avoid this, each element received its own bit of love before assembling to make it shine. •The pasta, just shy of 1 lb, was cooked until just al dente and removed from the pot with a slotted scoop so some of the water tagged along. It was instantly tossed with olive oil, lemon zest and lemon juice and seasoned with S&P. •A can of chick peas was drained and patted dry then roasted at 425°F, with convection fan on, after being tossed with ground black garlic (@burlapandbarrel a must- I have a special promotion to share in Stories), olive oil, a sprinkle of potato starch and S&P •1 bunch Curly kale, also not a favorite, was shredded and massaged with lemon juice, (blood) orange juice and kosher salt until tender, and then tossed with olive oil, Parmesan and currants •Pine nuts were pan toasted in garlicky olive oil and removed from pan. Bread crumbs were then toasted in more garlicky olive oil (@brightland) •Persian cucumber, grape tomato and Kalamata olives were simply chopped as they're ideal in their natural state. •Goat feta was cubed and crumbled. •A red wine vinaigrette was whisked up- red wine vin, olive oil (I do almost 50/50, you do you), touch of Dijon mustard, flaky sea salt, fresh ground pepper, pinch dried oregano, pinch of sugar, garlic optional. When each component was ready, (they may be prepared in stages and not all at once) pasta gets tossed with kale salad, chopped cucumber, tomato, olive, feta and pine nuts. Vinaigrette was tossed in (to taste). Fresh herbs would be ideal, but I didn't have any. Black Garlic Chick Peas and bread crumbs were scattered on top. It was served immediately and enjoyed by all. No leftovers.

Chicken Massaman Curry with Wheat Beer! There are some culinary phrases that might not seem to make sense together, until you try it, and then you realize that it totally makes sense. For us, “mild” and “curry” was one such pairing. If you’re making a curry, why bother making it mild, you big wuss (we said to ourselves)? Well, this recipe turned us around. Chicken and red onion, cooked to perfection in a base of warming Middle Eastern spices, like cinnamon and star anise, creating an aromatic and flavor-packed curry with just the right amount of sweetness. Massaman Thai curry paste is pretty easy to find, and we add a citrus note with Belgian wheat beer. It’s also one of the most satisfying and colorful dishes we’ve ever cooked. Every city needs a @pastasupplyco by @anthonystrong The clever San Francisco business is half restaurant and half retail store that sells a dizzying array of fresh-made pastas and sauces to take home and cook.
