One of my favorite ways to use up that leftover soup! Whether there's just a little bit left, or you're tired of having it for another meal... I simply add eggs - in my case, ones that happened to have a crack, when I collected... Then, I add roughly 1/2 cup of flour per egg, and until you get the correct consistency of a fluffy pancake batter... Lastly, I add 1 tsp of baking powder per cup of flour I felt I needed. If you didn't have a creamy soup, add a bit of milk, if you so desire. Cook them up, just like you would flapjacks. Lemon Meringue Pie Silky Lemon Curd Pie with Toasted Meringue Topping Ingredients: For the lemon filling: 1 cup granulated sugar 2 tablespoons all-purpose flour 3 tablespoons cornstarch 1/4 teaspoon salt 1 1/2 cups water 2 lemons, juiced and zested 2 tablespoons unsalted butter 4 egg yolks, beaten For the meringue: 4 egg whites 6 tablespoons granulated sugar 1/2 teaspoon vanilla extract For the crust: 1 (9-inch) prebaked pie crust Directions: Preheat your oven to 350°F (175°C). To make the lemon filling, mix 1 cup sugar, flour, cornstarch, and salt in a saucepan. Stir in water, lemon juice, and lemon zest. Cook over medium-high heat, stirring frequently, until the mixture comes to a boil. Stir in butter. In a small bowl, whisk the egg yolks. Gradually whisk in a small amount of the hot sugar mixture, then slowly pour the egg yolk mixture back into the pan, whisking constantly. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour the filling into the baked pie crust. For the meringue, whip egg whites until foamy.
