This evening’s chicken cabbage roll pasta soup is simply delicious!! It is kind of a mash-up of cabbage rolls meets chicken parmesan in a soup…a super thick soup…almost like a casserole!! But oh so yummy!! Here’s how I made it: First I sautéed onion, celery, carrot and cabbage together with a bunch of seasonings (I used dill, Italian and Greek seasoning, parsley, salt and pepper). Once the onion was tender, garlic and chicken was added along with water. It cooked for a while to flavor the broth. Then I chopped up the chicken, added it back to the soup with more water, tomato sauce, and rice. Once the rice was nearly cooked, I added a handful of pasta and tasted for seasonings. My daughter wanted dumplings, so I added that as well.
